1-1/2 cups cold fat-free milk
1 package (1 ounce) sugar-free instant vanilla pudding mix
1/3 cup fat-free sour cream
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed, divided
3 medium firm bananas, sliced
1 reduced-fat graham cracker crust (9 inches)

Steps:

  • In a bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Stir in sour cream until smooth. Fold in 1-1/2 cups whipped topping. , Place half of the banana slices in the crust; top with half of the pudding mixture. Repeat layers. Spread with remaining whipped topping. Refrigerate for 4-6 hours before serving (pie will be soft- set). Refrigerate leftovers.

¾ cup white sugar
⅓ cup all-purpose flour
¼ teaspoon salt
2 cups milk
3 egg yolks, beaten
2 tablespoons butter
1 ¼ teaspoons vanilla extract
1 (9 inch) baked pastry shell, cooled
4 bananas, sliced

Steps:

  • In a saucepan, combine the sugar, flour, and salt. Add milk in gradually while stirring gently. Cook over medium heat, stirring constantly, until the mixture is bubbly. Keep stirring and cook for about 2 more minutes, and then remove from the burner.
  • Stir a small quantity of the hot mixture into the beaten egg yolks, and immediately add egg yolk mixture to the rest of the hot mixture. Cook for 2 more minutes; remember to keep stirring. Remove the mixture from the stove, and add butter and vanilla. Stir until the whole thing has a smooth consistency.
  • Slice bananas into the cooled baked pastry shell. Top with pudding mixture.
  • Bake at 350 degrees F (175 degrees C) for 12 to 15 minutes. Chill for an hour.

I first tried Hummingbird cake while visiting Amish country in Pennsylvania. A lovely Bed-N-Breakfast served it with breakfast. I was in love! I began searching for a recipe. I combined 3 recipes (one from an Amish cookbook I purchased in PA tweeked with 2 different recipes here on this site). However, I wanted a glaze for the icing rather than cream cheese frosting. I wanted something lighter tasting than a heavy frosting. So, I added my mom's delicious banana cake glaze and it was perfect!

3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups sugar
1 1/2 tablespoons cinnamon
3 large eggs, beaten
1 cup vegetable oil
2 teaspoons vanilla extract
1 (8 ounce) can crushed pineapple, undrained
1 cup chopped pecans
2 1/2 cups chopped bananas
1/2 cube butter, softened
1/2 banana, mashed
1/2 teaspoon vanilla extract
2 cups powdered sugar

Steps:

  • Combine 1st 5 ingredients in a large bowl; add eggs, and oil, stirring just until dry ingredients are moistened.
  • Add vanilla, pineapple, pecans, and bananas. Fold in with a fork - do not beat.
  • Pour batter into greased 9x13 pan.
  • Bake at 350 degrees for 50-60 minutes or until toothpick inserted into center comes out clean.
  • For glaze frosting:.
  • Combine all ingredients in a small bowl and beat until well mixed. Frost cake while hot - the glaze will melt over the cake. Yum!
  • Note: Don't feel like you have to spread all the frosting/glaze on the cake - just until it's the desired thickness. I put it on pretty generously and usually still have about 1/4 of a cup left. If you want it less sweet, then use less.

1/8 teaspoon salt
1 cup water
1 tablespoon butter or 1 tablespoon margarine
3 drops red food coloring
2 bananas, sliced

1 cup frozen whipped topping, thawed

Steps:

  • Wash and hull strawberries, cut in half and set aside.
  • Combine sugar, cornstarch, and salt in a saucepan; mix well, and stir in water. Add butter, cook glaze over low heat until thickened, stirring constantly. Stir in food coloring.
  • Arrange strawberries and bananas in pastry shell, alternating layer of each. Pour glaze evenly over fruit; refrigerate 2 to 3 hours or until well chilled. Spread with whipped topping before serving.

8 ounces cream cheese
1/3 cup lemon juice
14 ounces sweetened condensed milk
1 teaspoon vanilla extract

Steps:

  • Soften the cream cheese to room temperature.
  • Line pie crust with slices from 2 bananas.
  • Whip cream cheese till fluffy.
  • Gradually add sweetened condensed milk.
  • Continue to stir until well blended.
  • Add lemon juice and vanilla extract-blend well.
  • Pour into crust.
  • Chill 2 hours or until firm.

My mom has been making this for as long as I can remember. We thought that we lost the recipe but as she was going through her recipe drawer - there is was! We were so happy because mom turned 86 this year and if we had lost it, I know we would never have made it again. Hope you enjoy it like our family does!

1 - precooked pie shell
1/2 cup(s) sugar or a little more
1 1/2 cup(s) water
4 tablespoon(s) corn starch - level
1/2 teaspoon(s) salt
1 teaspoon(s) vanilla
1 dash(es) yellow food color - just a drop

Steps:

  • Boil over low fire (after you have mixed all ingredients above except vanilla). Stirring constantly until it thickens.
  • Remove from range and add drop of yellow food color and vanilla.
  • Pour over sliced bananas in precooked pie shell while mixture is still hot. You will need enough bananas to slice a couple of layers into the pie shells before you add the glaze. You can also sub bananas with other fruit - we just always used bananas!
  • After cooling, top with whipped cream that is sweetened.
