This is such an easy way to make a wonderful beef stew. You don't need to brown the meat first-just combine it with hearty chunks of carrots, potatoes and celery, and let it all cook together in a flavorful gravy. 1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup water
3 tablespoons quick-cooking tapioca
2 teaspoons sugar
1-1/2 teaspoons salt
1/2 teaspoon pepper
2 pounds beef stew meat, cut into 1-inch cubes
4 medium carrots, cut into 1-inch chunks
3 medium potatoes, peeled and quartered
2 celery ribs, cut into 3/4-inch chunks
1 medium onion, cut into chunks
1 slice bread, cubed

Steps:

  • In a large bowl, combine the tomatoes, water, tapioca, sugar, salt and pepper. Stir in the remaining ingredients., Pour into a greased 13x9-in. or 3-qt. baking dish. Cover and bake at 375° for 1-3/4 to 2 hours or until meat and vegetables are tender. Serve in bowls.

My mom's beef stew recipe that she's perfected over 25 years. Tender chunks of beef couple with hearty vegetables in a rich gravy for a soul-warming treat. And Oh! The dumplings!

1 tablespoon extra-virgin olive oil
1 onion, coarsely chopped
2 pounds cubed beef stew meat
2 teaspoons steak seasoning (such as Montreal Steak Seasoning®), divided
2 stalks celery, each cut into 4 pieces
2 cups water, or to cover
4 (.85 ounce) packages dry brown gravy mix
4 cups water
1 small turnip, peeled and quartered
4 carrots, peeled and quartered
7 potatoes, peeled and quartered
1 ½ cups all-purpose flour
2 teaspoons baking powder
¾ teaspoon salt
3 tablespoons shortening
¾ cup milk

Steps:

  • Heat the olive oil in a large heavy pot or Dutch oven over medium-high heat until the oil is shimmering, and place the onion and beef into the hot oil. Sprinkle with 1 teaspoon of the steak seasoning, stir the meat and onions well, and sprinkle with 1 more teaspoon of seasoning. Add the celery, and cook and stir until the meat is browned, about 10 minutes.
  • Pour in 2 cups of water to just cover the meat, onion, and celery, bring to a boil, and stir and scrape the browned bits of flavor from the bottom of the pan. Cover, reduce heat, and simmer until the beef is very tender, about 2 hours. Remove the meat and celery pieces from the pan, set the meat aside, and discard the celery.
  • In a bowl, whisk together the gravy mix with 4 cups of water. Add the mixture to the juices in the pot, bring to a boil, and stir the meat back into the gravy mixture. Stir in the turnip and carrots, cover, and simmer for 20 minutes. Stir in the potatoes, cover, and simmer an additional 20 minutes.
  • To make dumplings, mix the flour, baking powder, and salt in a bowl. Cut the shortening into the flour mixture with a pastry cutter or two knives until the mixture looks crumbly. Pour in the milk, and lightly stir the mixture just until it combines to form a dough.
  • Remove 2 cups of gravy from the pot, and reserve. Drop the dumplings by heaping tablespoon onto the meat and vegetables in the pot, cover, and simmer for 20 minutes. Do not peek until the time is up. Pour the reserved gravy back over the dumplings, stir lightly, and serve.

2 pounds meaty beef soup bones (beef shanks or short ribs)
6 cups water
5 medium potatoes, peeled and cubed
5 medium carrots, chopped
1 medium onion, chopped
1/2 cup medium pearl barley
1 can (28 ounces) plum tomatoes, undrained
1 to 1-1/2 teaspoons salt
1/2 teaspoon pepper
2 garlic cloves, minced, optional
1 bay leaf, optional
3 tablespoons cornstarch
1/2 cup cold water

Steps:

  • Place soup bones and water in a Dutch oven or soup kettle. Slowly bring to a boil. Reduce heat; cover and simmer for 2 hours. , Set beef bones aside until cool enough to handle. Remove meat from bones; discard bones and return meat to broth. Add the potatoes, carrots, onion, barley, tomatoes, salt, pepper, garlic and bay leaf if desired. Cover and simmer for 50-60 minutes or until vegetables and barley are tender. , Discard bay leaf. Combine cornstarch and cold water until smooth; stir into stew. Bring to a boil; cook and stir for 2 minutes or until thickened.

My mom is a great cook and this is one comfort food that she always makes for me when I visit home. It is very hearty and filling. Serve with warm bread or rolls.

4 Tbsp all purpose flour
1 1/2 lb beef stew meat or cubed chuck roast
2 Tbsp vegetable oil
1 medium chopped onion
1 clove garlic, minced
1/2 tsp thyme, dried
2 can(s) 12 oz. cans v-8 juice
1 tsp beef base paste
3 dash(es) tobasco sauce
3 large potatoes, scrubbed and cut into chunks
1 1/2 c chopped celery
1 1/2 c peeled and sliced carrots
1/2 c frozen peas

Steps:

  • 1. Combine flour and salt in a plastic zip lock bag. Add meat to bag and shake to coat. Brown in skillet with vegetable oil.
  • 2. Add all other ingredients together in a large baking dish. Add meat when browned. Stir well, cover and bake at 325 degrees for 2-2 1/2 hours or until meat is tender and broth is thick.

1 (14.5 ounce) can diced tomatoes with juice
1 cup water
3 tablespoons instant tapioca
1 tablespoon beef bouillon granules
2 teaspoons white sugar
1 ½ teaspoons salt
¼ teaspoon ground black pepper
4 carrots, cut into 1 inch pieces
2 strips celery, cut into 3/4 inch pieces
3 potato, peeled and cubed
1 onion, roughly chopped
1 slice bread, cubed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a large skillet over medium heat, brown the stew meat; drain and set aside.
  • In a mixing bowl, combine the tomatoes, water, tapioca, beef bouillon granules, sugar, salt and pepper. Stir in the beef, carrots, celery, potatoes, onion, and bread cubes. Pour into the prepared baking dish.
  • Cover and bake for 2 hours, or until meat and vegetables are tender.

This basic recipe uses simple and often used ingredients. It can be spiced up any way, but our spices we have found bring out the best flavor and they are the key to this recipe. Ground pork or ground lamb can be substituted for ground beef. It can also be cooked on the stovetop, which we do, or slow cooker. Eat as a stew or serve over rice, crushed chips or crackers, or cornbread.

1 tablespoon olive oil, or as needed
2 onions, roughly chopped, divided
4 carrots, cut into 1/2-inch rounds
1 clove garlic, minced
¼ teaspoon red pepper flakes
¼ teaspoon Greek seasoning (such as Cavender's®)
1 pinch dried rosemary
1 pinch ground thyme
1 pinch dried basil
1 pinch Italian seasoning
1 bay leaf
salt and ground black pepper to taste
1 (32 ounce) can diced tomatoes with juice
1 pound ground beef
4 potatoes, peeled and cut into chunks
1 stalk celery, chopped

Steps:

  • Pour in enough olive oil into a large stockpot to coat the bottom; add 1 onion, carrots, garlic, red pepper flakes, Greek seasoning, rosemary, thyme, basil, Italian seasoning, bay leaf, salt, and pepper. Cook and stir onion mixture over medium heat until onion is softened and lightly browned, about 15 minutes.
  • Pour diced tomatoes over onion mixture; add ground beef, breaking apart with a wooden spoon and stir. Bring liquid to a boil and cook until ground beef is cooked through and carrots are tender, about 10 minutes.
  • Stir potatoes, remaining onion, and celery into tomato mixture and cook until potatoes are tender, 15 to 20 minutes. Remove stockpot from heat and let sit, 20 to 30 minutes.

My husband is a sucker for meat and potatoes. I've made this recipe often over the years. It's perfect for a Fall or Winter evening with some fresh baked bread.

3 lb boneless beef chuck roast, trimmed and cut into 1 1/2-inch cubes
salt and pepper
3 Tbsp canola oil
2 medium yellow onions, minced
1 Tbsp tomato paste
4 clove garlic, minced
3 Tbsp all purpose flour
1 c dry red wine
2 c low sodium chicken broth
1 Tbsp minced fresh thyme or 1 teaspoon dried
2 bay leaves
1 1/2 lb red potatoes (5 medium), scrubbed and cut into 1 1/2-inch chunks
4 carrots, peeled and sliced thin
1 c frozen peas

Steps:

  • 1. Adjust oven rack to the lower-middle position and heat the oven to 300 degrees.
  • 2. Dry the beef with paper towels, then season with salt and pepper. Heat 1 tablespoon of the oil in a large Dutch oven over medium-high heat until just smoking. Brown half of the meat, about 10 minutes, then transfer to a plate. Return the pot to medium-high heat and repeat with 1 more tablespoon of the oil and the remaining beef.
  • 3. Add the remaining tablespoon oil to the empty pot and return to medium heat until shimmering. Add the onions and cook until softened, about 5 minutes. Stir in the tomato paste and garlic and cook for 30 seconds. Add the flour and cook for 1 minute. Slowly stir in the wine, scraping up any browned bits. Stir in the broth, thyme, bay leaves and browned beef along with any accumulated juices. Bring to a simmer, cover and transfer the pot to the oven. Cook for 1 hour.
  • 4. Stir in the potatoes and carrots. Cover and continue to cook in the oven until the beef is tender, about 1 hour.
  • 5. Remove the pot from the oven and discard the bay leaves. Stir in the peas and let stand off the heat for 5 minutes. Season with salt and pepper to taste before serving.

¾ pound cubed beef stew meat
2 tablespoons olive oil
1 onion, chopped
1 stalk celery, chopped

salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C).
  • Pour flour into a shallow bowl and turn beef in flour, shaking meat to remove excess flour. Heat oil in an ovenproof casserole dish over high heat. Brown beef cubes in hot oil in batches on all sides, about 5 minutes per batch. Transfer beef to a plate.
  • Add onion, celery, and carrots to the casserole dish, reduce heat to medium, and cook until softened, about 5 minutes. Add garlic and cook for 1 minute. Pour in broth. Return beef to the casserole dish and stir in bay leaves. Cover casserole.
  • Bake in the preheated oven until beef is tender, 1 1/2 to 2 hours. Remove bay leaves before serving and season with salt and pepper.

1/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
2 lbs stewing beef, cut into 1/2 inch cubes
2 tablespoons vegetable oil
2 cups beef stock
4 medium carrots, peeled and sliced
4 medium potatoes, peeled and chopped
2 stalks celery, chopped
1 large onion, diced
1 (19 ounce) can tomatoes, diced,with juice
1 bay leaf
1 tablespoon Worcestershire sauce
1/2 cup chopped fresh parsley or 2 tablespoons dried parsley
1 cup frozen peas
salt and pepper

Steps:

  • In a heavy plastic bag, combine flour, salt and pepper.
  • In batches, add beef to flour mixture and toss to coat.
  • Transfer to a plate.
  • In a large nonstick skillet, heat half the oil over medium high heat.
  • Cook beef in batches, adding more oil as needed, until browned all over.
  • With a slotted spoon, transfer beef to a slow cooker.
  • Add 1 cup stock to pan and stir to scrape up any brown bits.
  • Transfer stock mixtures to slow cooker.
  • Add carrots, potatoes, celery, onion, tomatoes (with juice) remaining stock, bay leaf, Worcestershire sauce and parsely; mix well to combine.
  • Cover and cook on low for 8 to 10 hours or on high for 4 to 6 hours until vegetables are tender and stew is bubbling.
  • Remove bay leaf and discard.
  • Add peas.
  • Cover and cook on high 15 to 20 minutes longer or until slightly thickened and peas are heated through.
  • Season to taste with salt and pepper.

I have been making this for years. It comes from Taste of Home. I don't remember the issue but it was quite early. It is also in the 1999 TOH annual cookbook. The aroma while this is baking will drive you insane. This is a great cold weather stew that you will make many times over!

Steps:

  • Season meaet with salt and pepper.
  • roll in flour and brown in oil.
  • Add water, bouliion cubes, and seasonings.
  • Simmer for minimum of 2 hours.
  • Add more water if it becomes too thick.
  • One hour before serving, add vegetables and simmer.
