MINI BACON WRAPPED MEATLOAF
Classic comfort food gets a major flavor upgrade! Bacon-wrapped meatloaf starts with a blend of ground beef, breadcrumbs and seasonings that are covered with bacon, brushed with a sweet ketchup glaze, and baked until crisp on the outside and tender on the inside!

Steps:
- Preheat oven to 400°F.
- Heat olive oil in a skillet over medium-low heat. Add the onion, garlic, parsley, thyme, salt and pepper. Cook, stirring frequently, until the onions are translucent (about 7-10 minutes). Remove from the heat and stir in the Worcestershire sauce. Set aside to cool slightly.
- In a large bowl, use a fork to gently combine the ground beef, onion mixture, breadcrumbs, milk and eggs.
- Divide the mixture into 6 equal portions and shape into oval balls. Wrap each ball with one strip of bacon.
- Arrange bacon-wrapped meatloaves on a parchment-lined or foil-lined rimmed baking sheet that has been lightly coated with nonstick spray.
- In a small bowl, stir together ketchup, brown sugar and vinegar. Brush a light coating of the ketchup mixture on top of each meatloaf, reserving extra glaze for later.
- Bake until the fat from the bacon has rendered, about 20 minutes.
- Increase the oven temperature to 425°F. Brush meatloaves with remaining ketchup mixture. Continue to bake until the meatloaves are cooked through and the bacon is crisp, about 15 more minutes. If using an instant-read thermometer, the meatloaves should reach an internal temperature of 155-160°F. Serve hot.

Steps:
- Preheat oven to 350 degrees.
- Put a nonstick skillet on medium heat for a few minutes. Add the oil, chopped vegetables and creole seasoning. Saute for a few minutes until just tender and onions are translucent. Remove from heat to let cool.
- Line a loaf pan with the bacon so the ends hang over the side of the pan.
- Combine all other ingredients in a large mixing bowl.
- When the vegetables are cool enough to handle put in the mixing bowl. Mix all ingredients until well incorporated but not over mixed.
- Put meat mixture in the loaf pan, tamping down to compact and spread to the whole pan. Take the bacon ends and lay on top of the meat mixture. Your loaf should be entirely wrapped with bacon at this point.
- Cover loosely with foil and place in oven for 1 hour.
- After 1 hour remove the foil, increase the temperature to 425 and bake for another 20-25 minutes.
- Remove from oven and let set for 10-15 minutes.
- Slice and serve.

- In a large skillet over medium high heat, heat the olive oil.
- Saute the onions until translucent, about 8 minutes.
- Add the mushrooms and garlic and cook over medium high heat for 3 or 5 minutes.
- Add the cream, oregano, thyme, salt and pepper.
- Bring mixture to a boil.
- Reduce heat and simmer 5 minutes or until vegetables are tender.
- Cool vegetable mixture.
- In large bowl, combine the beef, pork, veal and vegetable mixture.
- Stir in the egg.
- Preheat oven to 400°F.
- Place a 9 x 5 x 2 1/2-inch loaf pan with the short side facing you.
- Take bacon slices and place them across the pan, slightly overlapping, to line the bottom and sides.
- Continue with the meat mixture, patting down to level.
- Fold the ends of the bacon strips up and over the ground meat mixture.
- Place the loaf pan in a larger baking or roasting pan and fill the larger pan with boiling water halfway up the sides of the loaf pan. Cover with aluminum foil and bake for 1 hour.
- Remove the foil and continue to bake 30 minutes or until an instant read thermometer registers 165°F.
- Remove the meatloaf from the oven and let rest for 10 minutes.
- Carefully pour the juices out of the pan.
- Cut into 8 slices.
- To freeze: Meatloaf can be mixed, formed into a loaf and frozen before cooking. To bake a frozen loaf, use the standard method but bake 1-1/2 to 2 times longer. Always check for doneness with a meat thermometer. Or thaw completely in the refrigerator and cook as directions require.
- To freeze: Whole baked meat loaves can also be frozen. Bake as usual, let cool to room temperature, wrap in foil, place in a sealed plastic bag, and store in the freezer up to 6 months.

This recipe was in an April/03 Lifestyle, a local paper. I think this is the best meatloaf I've ever tried. Follow all the steps and you will also have a taste of the best-meatloaf-ever!

- In large skillet over medium heat heat olive oil and saute onions until translucent (about 8 minutes).
- Add mushrooms and garlic and cook (medium high heat) 3-5 minutes.
- Stir in cream, oregano, thyme, salt and pepper. Bring to a boil, then reduce heat and simmer about 5 minutes. Transfer to large bowl and let cool.
- Mix beef, pork and veal; stir in egg and mix well. Add cream mixture and combine well. It will look a bit too liquid, but it is just fine.
- Position 9" x 5" x 2 1/2" loaf pan with short side facing you. Line bottom and sides of pan with bacon, placing them parallel to the short end, slightly overlaping each other (their ends will hang over the edge).
- Put meat mixture in pan and smooth top. Fold bacon striips over the meat, enclosing it completely.
- Place loaf pan in the center of a roasting pan. Fill roasting pan half way up with boiling water. Cover both pans with aluminum paper.
- Carefully place pans in middle shelf of hot oven (400 F) and bake 1 hour. Remove foil and bake until instant thermometer inserted in center of meatloaf registers 165 F (about 30 minutes more). (at this stage I unmold the meatloaf and bake it uncovered, because I like crispy bacon.).
- Remove pan of meatloaf from oven and let rest 10 minutes. Pour juices from pan into sauceboat.
- Cut loaf into 8 slices, taking care to cut bacon completely. Drizzle with pan juices.
BACON-WRAPPED MEATLOAF

- Preheat the oven to 350 degrees F (175 degrees C) .
- Combine ground beef, ground sausage, crushed crackers, ketchup, onion, eggs, onion powder, and garlic powder in a large bowl until mixed thoroughly, using your hands for best results. Form mixture into a loaf shape.
- Weave strips of bacon into a basket weave pattern. Place meatloaf in the center and carefully lift and transfer to a loaf pan, so bacon is on the bottom and sides of the pan.
- Bake in the preheated oven until no longer pink in the center, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Allow to sit for 5 minutes before carefully flipping onto a platter.

CRISPY BACON WRAPPED STUFFED TILAPIA #RSC
Ready, Set, Cook! Reynolds Wrap Contest Entry. I made this recipe for my hubby because he doesn't care much for fish (unless it's breaded and fried). I wanted him to eat a variety of proteins other than just steak and pork, and figured he wouldn't turn down the fish if it had bacon with it. He loved it. ^_^

- Preheat oven to 350 degrees.
- 1. In a small sauce pan heat the oil. When heated add the onions and fry for 2-3 minutes or until translucent.
- 2. Add the red peppers, lemon juice, brown sugar, garlic, parsley, black pepper and salt. bring the mixture to a boil, then reduce to a simmer and cook 5 minutes, or until the peppers are tender.
- 3. While the mixture cooks prepare your baking dish. (I use a disposable aluminum 8x8 in square cake pan because i dont like bacon grease on my good pans) Cut srips of reynolds wrap the size or your baking dish about 6 will be fine. Crinkle the strips of foil and securely place them in the bottom of your dish to make racks.
- 4. Remove the pepper mixture and process in a food processor (or blender) until smooth.
- 5. Return the mixture to the pan and stir in the bread crumbs until combined.
- 6. Spread the mixture evenly among the 4 Tilapia filets and roll them up. Wrap them in bacon using one strip of bacon per filet. If needed secure them in place with toothpicks.
- 7. Place the filet rolls over the racks to let the grease drain. Cover with reynolds wrap foil and bake in the preheated oven for 20 minutes.
- 8. In another baking dish spread the green beans evenly apart and sprinkle the top with pamesan cheese.
- 9. After the 20 minutes remove the filets and turn on the broiler. Remove the foil cover from the filets. Put the green beand and filets under the broiler and broil until the top of the bacon is crispy. Turn the filets to crisp the bottom side. If the cheese is burning too badly, take out the beans. when both sides f the bacon are crispy, take them out.
- Serve the tilapia with a big side of green beans and enjoy.

- Preheat your oven to 375 degrees (190 degrees C) and line a 9 x 5 inch loaf pan with slices of bacon.
