LEMON MOLTEN CAKE WITH RASPBERRIES



Lemon Molten Cake with Raspberries image

Sweet-tart lemon makes this cake a refreshing surprise.

1/2 cup Land O Lakes® Butter
1 (4-ounce) white chocolate baking bars, broken into chunks
2/3 cup all-purpose flour
1/2 cup powdered sugar
4 large Land O Lakes® Eggs
4 to 5 large Land O Lakes® Eggs (yolks only)
3/4 cup purchased lemon curd
2 teaspoons freshly grated lemon zest
Topping
1 tablespoon powdered sugar
Land O Lakes® Heavy Whipping Cream sweetened, whipped
1 cup fresh raspberries
Mint sprigs, if desired

Steps:

  • Heat oven to 425°F. Grease 8 (6-ounce) custard cups. Place onto ungreased 15x10x1-inch baking pan; set aside.
  • Place butter and baking bar in bowl. Microwave 1 minute; stir. Continue microwaving, stirring every 15 seconds, 60-90 seconds or until melted and smooth.
  • Stir in flour and powdered sugar; mix well. Add eggs, egg yolks, lemon curd and lemon zest; beat with wooden spoon or whisk until blended. Pour evenly into prepared custard cups.
  • Bake 14-16 minutes or until edges are golden brown and center is puffy and just beginning to set. Let stand 10 minutes. Run tip of knife around edge of custard cup to loosen. Invert onto individual dessert plates. Shake to loosen. Sprinkle tops with powdered sugar. Serve with whipped cream. Garnish with fresh raspberries and mint sprigs, if desired.

This recipe is from the site Recipe4Living.com. A friend of mine was looking for someone to make it for him. And the recipe looks yummy. My mother loves anything lemon, so I will have to make it for her.

1 (18 1/4 ounce) box lemon cake mix, & ingredients to make it
2 regular size boxes instant lemon pudding
2 cups cold milk
1/3 cup sugar
1 1/4 cups water
3 tablespoons lemon juice
powdered sugar, for dusting

Steps:

  • Prepare cake mix as directed on box.
  • Pour cake mixture into greased 9X13 baking dish.
  • Combine dry pudding, milk, sugar, water, and lemon juice in bowl. Whisk together for 2 minutes until well combined and slightly thickened.
  • Pour pudding mixture over cake mixture in pan. DO NOT spread it.
  • Place baking dish onto a cookie sheet to catch any drips while baking.
  • Bake at 350 for 55 minutes to an hour.
  • Allow to cool 20 minutes while sauce thickens slightly. Dust with powdered sugar.

I love chocolate molten cake. So, I figured why not a lemon molten cake, with all that lemon gooey goodness seeping out of the cake? So yummy!

1 package(s) yellow cake mix, w/ ingrediemts listed on box
2 package(s) instant lemon pudding mix
1 tablespoon(s) lemon juice
1/3 cup(s) sugar
2 cup(s) milk
1/4 cup(s) water
2 tablespoon(s) powdered sugar

Steps:

  • Heat oven to 350. Spray a 9" x 13" baking dish w/ cooking spray. In lg bowl, prepare cake mix as directed, pour into pan.
  • Place pan on top of a baking sheet. In another bowl, beat pudding mixes, sugar, milk, water and lemon juice., beat 2 mins.
  • Pour mix over batter in pan, do not spread the mix. Bake 50 mins. Cool. Sprinkle w/ powdered sugar.
