GIANT SPRINKLE MACAROONS

Number Of Ingredients 9

1 cup sweetened condensed milk (reserve the rest of the can to add to your morning coffee!)
2 teaspoons clear imitation vanilla
1/2 teaspoon almond extract
One 14-ounce bag sweetened shredded coconut
2 large egg whites
1/4 teaspoon kosher salt
1/4 cup rainbow sprinkles, plus more for sprinkling
1/3 cup rainbow sprinkles
3 ounces chocolate (any kind!)

Steps:

  • For the macaroons: Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment and set aside.
  • In a large bowl, combine the condensed milk, vanilla and almond extract. Mix in the coconut and set aside.
  • In a separate bowl, beat the egg whites and salt until stiff peaks form. Fold the egg whites into the coconut mixture, then gently fold in the sprinkles. Spoon lightly packed 2-inch balls of the mixture onto the baking sheets, 1 inch apart, and sprinkle the tops with more sprinkles.
  • Bake until golden brown; begin checking for doneness at 18 minutes. Let cool for a few minutes on the baking sheets, then transfer to a wire rack to cool completely.
  • For the topping: Place the sprinkles in a shallow dish. Microwave the chocolate in a microwave-safe bowl in 30-second increments, stirring after each, until melted (or melt in a saucepan over low heat, stirring often).
  • Dip the bottoms of the macaroons in the chocolate, scrape off any excess and then dip the chocolate in the sprinkles. Place back on the parchment and let cool at room temperature or in the fridge. These can be kept at room temperature for about 3 days or in the fridge for up to a week.

VEGGIE FOCACCIA

Thanks to the internet, I was recently introduced to my new favorite artistic medium: vegetables! With bread dough as the chewy, salty, olive-oily canvas. I don't know who invented these pretty works of focaccia art, but I thank them.

Number Of Ingredients 19

1 1/4 cups room temperature water
2 teaspoons kosher salt
2 teaspoons sugar
1 1/2 teaspoons instant yeast
7 tablespoons extra-virgin olive oil, plus more for brushing
3 to 3 1/4 cups all-purpose flour
Black sesame seeds and/or poppy seeds
Asparagus spears, halved crosswise
Herb sprigs, such as parsley, chives, dill
Baby bell peppers
Flaky salt, for sprinkling
Sage leaves
Basil leaves
Scallion greens
Butternut squash zoodles
Red onions
Capers
Small rainbow potatoes
Whatever else your creative heart desires...

Steps:

  • For the focaccia: Combine the water, salt, sugar and yeast in a spouted measuring cup. Whisk in 3 tablespoons olive oil.
  • Combine the yeast mixture and 3 cups of the flour in the bowl of a stand mixer. Mix with a wooden spoon just until the dough comes together, then switch to the dough hook and knead on medium-high speed until smooth and stretchy, about 5 minutes. The dough should form a loose, somewhat sticky ball on the dough hook, but won't entirely clean the sides of the bowl. (If the dough doesn't form a ball at all, add tablespoons of flour, up to 1/4 cups.)
  • Brush a quarter-sheet pan with 2 tablespoons oil. Add the dough, then turn to coat and press to almost fill the pan. Cover loosely with plastic wrap and let rise until doubled in size, 1 to 1 1/2 hours, depending on the temperature of your room.
  • Preheat the oven to 400 degrees F.
  • Uncover the dough and gently press all of the way to the edges of the pan. Brush the top of the dough with the remaining 2 tablespoons olive oil. If you'd like to make a vertical landscape, turn the pan with the short side facing you.
  • For decoration: Start with a layer of seeds on the bottom. Using asparagus, long chives and scallion greens, add your tall stems first, then cover those at the bottom with shorter sprigs of herbs to make some ground cover. Add some butterflies, made with horizontal slices of baby bell peppers and chive antennae. Once you're happy with the arrangement, press down on the decorations to make sure they stick to the dough.
  • Use your finger to gently dimple the dough in the space where you haven't decorated. Brush lightly with olive oil and sprinkle with flaky salt. Bake until the focaccia is risen and the top and bottom are golden brown, about 30 minutes. Let cool for 5 minutes before removing from the pan. Serve warm or at room temperature.

HAM AND CHEESE SCONE SANDWICHES

1 1/2 cups (210 grams) all-purpose flour, plus more for dusting
1 tablespoon granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
Roasted Garlic, recipe follows
1/2 cup sour cream
1 large egg, beaten
2 tablespoons unsalted butter, cold and cubed
3 tablespoons chopped fresh chives
1 tablespoon heavy cream
1 teaspoon flaky salt
3 tablespoons apricot jam
1/2 pound sliced deli honey ham
1/4 pound sliced sharp white cheddar
1 head of garlic
Olive oil

Steps:

  • For the scones: Preheat the oven to 375 degrees F.
  • Combine the flour, sugar, baking powder, baking soda and kosher salt in a large bowl and whisk together. In the bowl with the Roasted Garlic, add the sour cream and egg. Whisk together and set aside.
  • Using your fingers or a pastry blender, cut the butter into the flour mixture until it forms pea-size bits. Toss in the chives. Add the sour cream mixture and mix just until a sticky dough forms. Turn the dough out onto a liberally floured counter and press together to form a 6-by-6-inch square. Trim each side (keep the trimmings and bake off for a little snack) and cut into 9 squares. Place on a parchment-lined baking sheet. Brush the tops with heavy cream, sprinkle with flaky salt and bake until lightly browned and crackly on top, 15 to 20 minutes.
  • For the sandwiches: Split open the scones and toast the insides on a griddle or pan. Spread about 1/2 teaspoon of the apricot jam on each of the toasted sides. On the bottom halves, layer on the ham, cheese and then the tops of the scones and eat right away.
  • The scones will keep for a couple days in a plastic bag or airtight container at room temperature. Toast and spread with butter or jam.
  • Preheat the oven to 325 degrees F.
  • Slice off the top of the head of garlic, drizzle with olive oil and wrap in foil. Roast for about an hour. Remove from the oven and allow the garlic to cool inside the foil. When cool, open the foil and squeeze the roasted garlic from each clove into a small bowl.

3 tablespoons unsalted butter
4 scallions, chopped, white and green parts separate
1 tablespoon wasabi paste (from a tube)
One 12-ounce bag frozen peas
1/2 cup vegetable stock
Kosher salt
Zest of 1 lime
1/4 cup chopped fresh cilantro
1/4 cup coarsely crushed wasabi peas

Steps:

  • Melt the butter in a large skillet over medium heat. Add the scallion whites and cook until wilted, 1 to 2 minutes. Whisk in the wasabi paste, then add the peas and vegetable stock. Bring to a simmer, then cover and cook until the peas are heated through and bright green but still saucy, about 4 minutes. Uncover, then season with 1/2 teaspoon salt and stir in the lime zest, cilantro and scallion greens. Spoon into a serving bowl and sprinkle with the wasabi peas.

KALE SALAD WITH ONION JAM SUFGANIYOT

Sufganiyot are fried jelly-filled donuts that are traditional to eat on Hanukkah. Savory sufganiyot are my jam so rather than toast up croutons for a salad I fried up some tiny savory sufganiyot!

8 ounces lacinato kale, stems removed and chopped
1/4 cup pomegranate seeds
1 tablespoon za'atar seasoning
Onion jam, recipe follows
Dressing, recipe follows
Sufganiyot, recipe follows
1 large red onion, small diced (about 2 cups)
1/4 cup (50 grams) granulated sugar
1/4 cup (60 grams) cider vinegar
1/2 teaspoon kosher salt
Few turns of black pepper
1/2 teaspoon fresh thyme leaves
1/4 cup (70 grams) tahini
2 tablespoons mayonnaise
2 teaspoons Dijon mustard
Zest and juice from half a lemon
2 cloves garlic, minced
1/4 cup (60 grams) extra-virgin olive oil
2 tablespoons water, plus more as needed
1/4 teaspoon kosher salt
Black pepper
1 can (8 pieces) of prepared large biscuits dough (such as Pillsbury Grands)
2 to 3 quarts neutral oil, for frying
Kosher salt

Steps:

  • Add the kale in a serving bowl. Drizzle the dressing over the kale and massage into the kale until slightly wilted. Top with the sufganiyot. Garnish with pomegranate seeds and za'atar.
  • Combine the onion, sugar, vinegar, salt and pepper in a small saucepan. Bring to a boil, then turn down heat to medium-low and cook, stirring occasionally, for 25 to 30 minutes, or until the onions are cooked down and syrupy and there is very little steam rising from the mixture. Stir in the thyme. Remove from the heat to cool completely.
  • In a small mixing bowl or measuring cup, whisk together the tahini, mayonnaise, mustard, lemon zest and juice and garlic. Slowly drizzle in the olive oil and whisk to emulsify. Thin out to a more pourable consistency with the water. Season with salt and pepper.
  • Heat oil over medium heat in a heavy bottomed pot to 350 degrees F.
  • Remove 4 biscuit pieces from the can (wrap and refrigerate or freeze the remaining 4 to be used another time). Cut each biscuit in quarters, then roll each piece into a ball, to form 16 total. Fry a few balls at a time until they are evenly golden brown and puffed up to the size of a donut hole, 2 to 3 minutes, turning occasionally with a spoon. Remove with a slotted spoon onto a rack and season with salt.
  • Fill a small piping bag with the onion jam and cut a small hole. Poke a small hole into the center of each donut with the tip of a paring knife and squeeze about 1/2 teaspoon of jam inside each.
