Maamoul are buttery date filled middle eastern cookies that will melt in your mouth and are utterly scrumptious. Naturally sweetened with dates these have minimal added sugar. They are popular at Eid, Christmas and other holidays.

1/2 cup ghee (or butter, grass fed )
1/4 cup light olive oil (or butter/ghee)
2 ½ cups all purpose flour ((may use half whole wheat pastry flour))
2 tablespoons sugar
2 tablespoons rose water (or orange flower water)
3 tablespoons milk ((start with 2 and add as needed))
2/3 lb dates (medjool, soft, pitted, chopped (or ready made date paste))
confectioner's sugar
almond flour

Steps:

  • Preheat the oven to 350°F.

Number Of Ingredients 10

1 cup butter, softened
1 cup packed brown sugar
1 egg
2 teaspoons almond extract
1 teaspoon vanilla extract
3-1/2 cups all-purpose flour
1 cup peanuts
1/4 cup raisins, halved
1/4 cup red-hot candies
60 pieces red and/or black shoestring licorice (2 inches)

Steps:

  • In a bowl, cream butter and brown sugar; beat in egg and extracts. Gradually add flour; mix well. Cover and chill for 1 hour. Shape into 1-in. balls; pinch front of each ball to form a nose. Add two peanuts halves for ears, two raisin pieces for eyes and one red-hot for nose. Poke a hole for tail with a toothpick. Place on ungreased baking sheets. Bake at 325° for 12 minutes or until bottoms are lightly browned. Cool on wire racks Insert licorice pieces for tails.

For best results, mix your dough by hand. Lightly oil mold and blot with paper towel. Lightly flour mold and re-flour the mold before each cookie but DO NOT re-oil. Press a piece of dough firmly and evenly into the mold. Trim the back of the cookie so it's flush with the mold. Tap the dough from mold and place on a baking sheet in the top third of your oven until nicely browned - about 10 minutes.

½ cup butter, softened
¾ cup white sugar
1 egg
2 cups all-purpose flour
¼ teaspoon salt
1 tablespoon milk
¼ teaspoon ground nutmeg

Steps:

  • Thoroughly cream the butter by hand. Add sugar and mix til fluffy. Beat in the egg and then the milk or cream.
  • In a separate bowl mix together all the dry ingredients. Stir them into the butter. Knead the dough for just a minute. Chill the dough until firm.
  • Preheat oven to 350 degrees F (180 degrees C).
  • Form the cookies as directed above. Bake for 10 - 12 minutes or until the edges brown. *Quantity will vary depending on the size of your ceramic molds.

Ok, I'll admit that I'm on a Halloween binge and having a bunch of fun! These aren't realy moldy. For regular biscuits just leave out the coloring.

3 tablespoons butter
2 scallions, thinly sliced
2 cups flour
3 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
3/4 cup buttermilk
green food coloring
1 tablespoon melted butter
1 tablespoon buttermilk

Steps:

  • Preheat the oven to 425°F
  • Sauté the scallions in 3 tablespoons butter until they are soft. Set the scallions aside and let cool.
  • Sift the flour, baking soda, and salt into a large mixing bowl. Cut the 1/2 cup butter into small pieces and cut it into the dry ingredients until the mixture resembles coarse crumbs.
  • In a small bowl mix together the 3/4 cup buttermilk and the green food coloring, until it is a very dark shade of green.
  • Make a well in the center of the flour mixture, and add the scallions and the green buttermilk.
  • Mix until a very sticky dough just holds together.
  • Turn out onto a floured surface and knead 20 times.
  • Pat out until 1/2 inch thick.
  • Cut with a 2 inch cutter. Place biscuits on a baking sheet about 3 inches apart.
  • Mix the melted butter and buttermilk and brush on the biscuits.
  • Bake for 12-15 minutes until golden brown.
