MOJITO MARINADE

Yield Makes 2 1/2 cups

Number Of Ingredients 10

1/4 cup chopped garlic
1/2 cup chopped onion
2 cups fresh orange juice
1/2 cup fresh lime juice
1/2 cup olive oil
4 teaspoons kosher salt
1 tablespoon black pepper
2 teaspoons ground cumin
2 teaspoons dried oregano
1 tablespoon chopped fresh cilantro

Steps:

  • Mix together the garlic, onions, orange juice, and lime juice in a bowl. Heat the olive oil in a large saucepan til just smoking. Now cover up your arms and put some potholder mitts on your hands because you're about to do something that is contrary to good cooking practice but produces great flavor release. Slide the contents of the bowl into the hot oil - be very careful because the liquid will splatter. Simmer for 5 minutes to soften the onions and garlic. Season the marinade with the rest of the ingredients. Pour everything into a blender or food processor and pulse 3 times to combine. Pour into a plastic container and cool to room temperature; then cover and refrigerate. Mojito Marinade keeps for up to 2 weeks.

FRUIT MOJITOS

Fruit Mojitos are the *fancy-human* version of this classic cocktail (that take less than 5 minutes to whip together).

8 mint leaves
1 Tbsp cane sugar (10 g)
1 shot white rum (1.5 fl oz or 50 mL)
¼ cup fruit of choice (mango, red berries, and passion fruit all work well) (20 g)
A few ice cubes
½ cup club soda (120 mL)
½ lime, juiced (optional)

Steps:

  • Muddle: Add mint leaves to the glass and gently muddle to release oils*. Add sugar, rum, and fruit, muddling again to roughly break down the fruit.
  • Serve: Add ice then top with club soda, optionally squeezing in the juice of half a lime (if it suits the fruit you're using).

2 limes
1 1/2 lb assorted melons, cut into 1-inch cubes (about 5 cups)
1/3 cup sugar
1/3 cup dark rum, if desired
3 tablespoons finely chopped fresh mint leaves
12 bamboo skewers (5 or 6 inch)

Steps:

  • Grate 2 tablespoons peel from limes. Cut each lime in half crosswise; squeeze halves over small bowl to remove 6 tablespoons juice.
  • Place melon cubes in 1-gallon resealable food-storage plastic bag. Sprinkle lime peel and pour lime juice over melon. Add sugar, rum and mint. Seal bag; turn to coat melon.
  • Refrigerate at least 1 hour to blend flavors but no longer than 24 hours. To serve, thread 4 or 5 melon cubes on each skewer. Discard marinade.

5 lemons, quartered
5 limes, quartered
5 oranges, quartered
4 (2 liter) bottles lemon-lime carbonated beverage (such as 7Up®)

Steps:

  • Combine rum, sugar, and water in a larger container or 3-gallon cooler or drink dispenser until sugar is dissolved. Add mint, lemons, limes, and oranges and mix well. Allow flavors to combine for about 30 minutes. Pour lemon-lime beverage into rum-fruit mixture and stir to combine.

This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

½ lime, cut into 4 wedges
2 tablespoons white sugar, or to taste
1 cup ice cubes
1 ½ fluid ounces white rum

  • Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. 1/4 cup onion, chopped
1 cup fresh orange juice
1/4 cup fresh lime juice
1 small chipotle pepper, chopped (optional)
1/4 cup olive oil
2 teaspoons kosher salt
1 1/2 teaspoons black pepper
1 teaspoon ground cumin
1 teaspoon dried oregano
1 1/2 teaspoons fresh cilantro, chopped

Steps:

  • Mix together the garlic, onions, orange juice, and lime juice in a bowl.

  • CAUTION: slide the contents of the bowl into the hot oil - be very careful because the liquid could splatter. You might want to use oven mits.
  • Simmer for 5 minutes to soften the onions and garlic. Season the marinade with the rest of the ingredients.
  • CAUTION: Pour everything into a blender (remove lid for hot air to release) or food processor and pulse 3 times to blend (another alternative is to use an immersion blender). Which ever method you use, just use caution with the hot liquids.
  • Pour into a glass container and cool to room temperature; cover and refrigerate.
  • Mojito Marinade keeps for up to 2 weeks.
