COFFEE LOAF CAKE

Steps:
- Preheat oven to 325°F/160°C. Grease an 8½ x 4¼-inch loaf pan.
- In a medium bowl, sift together flour, cocoa powder, baking powder, and salt.
- In a small bowl combine milk and coffee.
- Using a mixer fitted with the paddle attachment, beat butter and sugar on medium speed for 3 minutes until fluffy. Occasionally scrape down the sides and bottom of the bowl. Add eggs and vanilla extract and beat until combined. On low speed, beat in flour mixture in 3 additions, alternating with the milk mixture in 2 additions, starting and ending with the flour. Once all is added, be careful not to overmix the batter.
- Scrape batter into prepared pan and smooth the top. Bake for 45-60 minutes or until a skewer inserted into the center of the cake comes out dry. If the cake is browning too much while baking, cover the top loosely with aluminium foil. Remove from oven and allow to cool completely on a wire rack. Serve cake at room temperature. The coffee flavor gets stronger over time, after about 24 hours.
- Store cake in an airtight container in the refrigerator for up to 5 days. Cake can be frozen for up to 2 months. Thaw overnight in the fridge.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a large bowl, cream together 1 cup butter and white sugar until light and fluffy. Beat in the eggs one at a time, then stir in the sour cream and vanilla. Mix in 2 cups flour, baking powder, and salt. Spread 1/2 of batter in the prepared pan.
- Prepare the filling: In a medium bowl mix 1/3 cup flour, brown sugar, 2 tablespoons melted butter, and cinnamon. Sprinkle cake batter with 1/2 the filling. Spread second half of batter over the filling, and top with remaining filling.
- Bake 35 to 40 minutes in the preheated oven, or until a toothpick inserted near the center comes out clean.

Steps:
- In a bowl, combine the flour, 1°C sugar, baking powder, 1 1/2 teaspoons cinnamon and salt.
- In another bowl, combine the eggs, buttermilk, oil and vanilla; stir into dry ingredients just until smooth.
- Pour half the batter into a greased 9x5x3-inch loaf pan. In a small bowl, combine the remaining sugar and cinnamon; stir in butter. Drizzle half over batter; cut through with a knife to swirl. Top with remaining batter. Drizzle with remaining cinnamon-sugar mixture; swirl with a knife.
- Bake at 350° for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
