PORK PIPERADE
I like to spice up my meat dishes with peppers, and this Basque piperade-adapted from a Spanish recipe-is a family favorite. -Hyacinth Rizzo, Buffalo, New York

Steps:
- In a shallow bowl, combine flour and half of seasoning mix. Add pork, a few pieces at a time, and toss to coat; shake off excess., In a large skillet, heat canola oil over medium-high heat. Add pork; stir-fry until browned, 3-4 minutes. Remove with a slotted spoon; cover and keep warm., In same skillet, heat olive oil. Stir-fry onion and peppers until crisp-tender. Chop tomatoes; add to skillet. In a small bowl, combine remaining taco seasoning and reserved tomato juices. Add to skillet. Bring to a boil; cook and stir until thickened. Reduce heat to medium-low. Return pork to skillet; heat through.

Green peppers are featured in many traditional Basque dishes. This piperade can be served as a main dish, usually with the addition of ham; a side dish, or a condiment.

Steps:
- Cut a small X into bottom of each tomato. Bring a pot of water to a boil, add tomatoes and cook until skin begins to wrinkle and peel at the edges of the cuts, about 30 seconds. Drain, rinse with cool water and peel off skin with your fingers. Roughly chop tomatoes and set aside.
- In a 12-inch skillet over medium high heat, heat oil until hot but not smoking. Add onions, peppers and salt and sauté, stirring frequently, until onions are translucent and peppers have started to lighten in spots, about 10 minutes. Add garlic and continue to sauté for 1 more minute.
- Stir in tomatoes, sugar and piment d'Espelette, reduce heat to medium, cover and cook until tomatoes are starting to fall apart and peppers are soft but still hold their shape, about 15 minutes. Remove cover and continue to cook, stirring frequently, until mixture thickens like a slightly runny relish, about 5 minutes more. Adjust salt.

- Heat olive oil in a large saute pan and cook onion until softened and beginning to turn golden. Add peppers and cook 15 minutes, until tender. Add tomatoes, garlic, basil and season to taste with salt and pepper. Simmer until tomatoes are pulpy. Thoroughly beat eggs in a small bowl, add to tomato mixture, and stir until they begin to thicken; remove from heat before they solidify. Serve on heated plates, topped with fried ham slice or slices, and surrounded with croutons.;

- In a heavy skillet soften the onions in the oil. Meanwhile, char the peppers and tomatoes over a gas flame and peel off their skins. Chop and add to the onions with salt and pepper. Stir, cover and simmer for 15 minutes.
- Meanwhile beat the eggs seasoned with salt and pepper. Add to the vegetables and scramble until just set.

S'MORES POPCORN
Steps:
- Heat a large saucepan over high heat for 3 minutes. Add the oil and the popcorn kernels, and cover the pan with a lid. Cook, shaking the pan frequently, until you begin to hear popping. Cook on high for 1 minute more, then lower the heat to medium and continue cooking, shaking the pan, until the popping begins to slow down.
- Turn off the heat and pour the popcorn into a large bowl. Toss with the melted butter, salt and graham cracker crumbs. Add the marshmallows and toss again. Spread the mixture out on a parchment-lined baking sheet and drizzle with the chocolate. Toss gently to incorporate. Set aside until the chocolate hardens, about 1 hour. Store in an airtight container.
PIPERADE BASQUAISE
Steps:
- Prepare the piperade by first heating the 4 tablespoons of fat of your choice in a heavy 8-inch frying pan or, better still, in a small oval copper or enamel pan that you can bring to the table. Add the chopped onions and garlic and cook them for about 5 minutes over moderate heat, stirring them frequently until they are soft but not brown. Stir in the pepper strips, turning them in the fat now and then, letting them cook for about 10 minutes, at which point they should be tender but still crisp. Drain the chopped tomatoes thoroughly and add them to the pan, sprinkling in at the same time the dried or fresh basil and the pepper flakes or hot pepper sauce. Raise the heat and cook the tomatoes briskly for a few minutes and stir constantly with a wooden spoon until all their moisture has evaporated. Be careful that the piperade doesn't burn. Put it aside until you are ready to reheat and serve it.
- At that point, combine 1 tablespoon each of olive oil and butter in an 8-inch heavy frying pan, and over moderate heat, cook the julienned ham for a few minutes until the strips are thoroughly heated through. Remove them at once with a slotted spoon and spread them out on paper toweling to drain.
- Meanwhile let the fat in the frying pan cool to lukewarm before pouring it into the eggs, lightly beaten with salt and pepper. Over low heat, stir the eggs with a rubber spatula until they begin to form soft, creamy curds. Remove them from the heat when they are not quite set and gently spread them over the reheated piperade. Let some of the colorful vegetables show through. Lightly scatter the ham on top, sprinkle with the chopped parsley and/or chopped chives, and serve at once.
POMMES DAUPHINOISE
Steps:
- Preheat oven to 400 degrees.
- Arrange the potatoes in layers in a buttered 9-inch baking dish, pouring on a little cream and adding butter, salt and pepper to each layer as you go.
- Top with cream, salt, and pepper and bake for 30 to 40 minutes, or until the potatoes are cooked and the top is brown.

MAIDA HEATTER'S PANFORTE CIOCCOLATO
Steps:
- Preheat the oven to 350 degrees. Put the almonds in a shallow cake pan and bake them in the center of the oven, stirring once or twice, for 12 to 15 minutes. Set aside.
- Move a rack to the lower third of the oven and lower the temperature to 325 degrees. Cut a round of parchment to fit the bottom of a nine-inch springform pan, two or three inches deep. Cut a strip (or two shorter strips) about an inch and a half wide to go around the sides of the pan. Butter the sides and bottom of the pan. First put the strip (or strips) around the sides of the pan, just touching the bottom and covering only part of the way up on the sides. Then put the round in the bottom of the pan. Butter the papers on the bottom and the sides, dust all over with fine dry bread crumbs, invert over paper to shake out excess crumbs and set the pan aside.
- Put all the candied fruits in a large mixing bowl. Sift together over the fruit the flour, cocoa, cinnamon, allspice, white pepper and espresso or coffee powder. With your hands, mix the fruits with the dry ingredients, thoroughly separating and coating the pieces. Add the almonds and hazelnuts and mix again. Set aside.
- Put the honey and sugar in a saucepan with a six-cup capacity over moderate heat. Stir with a wooden spatula until the sugar is dissolved and the mixture comes to a boil. Then insert a candy thermometer in the pan and let the mixture boil without stirring until the thermometer registers 248 degrees (stiff-ball stage); the mixture will reach this temperature soon after it comes to a boil.
- Now you must work very quickly before the hot syrup cools and hardens. Pour the syrup onto the fruit mixture, stir with a heavy wooden spatula to mix, and -- without waiting -- transfer the mixture to the prepared pan (there will be just barely enough syrup to moisten the dry ingredients).
- Immediately cover with a piece of plastic wrap and press down on the top with your hands to press the mixture into an even layer. Then use a can or a small saucepan or any round and flat piece of equipment to press down very firmly on the top to form a compact layer. Quickly remove the plastic wrap.
- Bake for 40 minutes. (You will not know by looking or testing that the cake is done; it will become firm as it cools.) Do not overbake.
- Set aside to cool. When the cake is completely cool and firm, remove the sides of the pan and the paper strip (or strips) on the sides. Cover the cake with a rack and turn upside down. Remove the bottom of the pan and the paper lining on the bottom.
- Place the cake upside down on a length of wax paper. Through a fine strainer, generously sprinkle on confectioner's sugar, forming a thick coating. Then carefully turn the cake right side up and sprinkle sugar on that side also. There should be a generous amount of sugar on both sides.
- Wrap the cake in airtight plastic wrap and let it stand at room temperature for days, if you wish, or a week or two (or freeze).
- To cut into portions, unwrap the room-temperature cake, re-sugar if necessary and, using a long, sharp, heavy knife, cut straight down across the top, then cut each half into eight wedges.

- Pat chicken pieces dry with paper towels. Place flour (about 1 cup) in brown bag. Lightly dredge chicken pieces with flour, shaking off excess.
- Heat oil and butter in 12-inch cast-iron or heavy skillet (or use 2 smaller skillets). You should have 1/2 to 3/4 inch of fat. Add chicken pieces without crowding and fry over high heat for 5 minutes. Turn and fry 3 minutes more.
- Cover, turn down heat and cook for 30 minutes.
- Remove lid, turn up heat to crisp chicken, about 2 minutes. Drain on paper towels and serve.

- Heat the cream until small bubbles form around the edge.
- Meanwhile, melt the chocolate in the upper container of a double boiler set over very hot water. Whisk in the egg yolks, one at a time, then whisk in the butter.
- Gradually add the hot cream, whisking constantly. Turn up the heat so that the water in the bottom of the double boiler starts to simmer gently. Cook for four minutes, whisking constantly (the yolks are cooked at 160 degrees on a candy thermometer).
- Remove the chocolate mixture from the heat and add the vanilla extract. Cool, stirring constantly for about five minutes.
- Beat the egg whites until they stand up in glossy peaks. With a large rubber spatula, stir one-third of the egg whites into the chocolate mixture, then gradually fold in the rest.
- Scrape the mousse into a large bowl or individual dishes. Cover with plastic wrap and chill until firm (about two hours for individual bowls and about five hours for a large mousse).

- Mix together the ginger, cinnamon, cardamom, nutmeg, cloves, baking soda and salt and set aside.
- Melt the butter in a small saucepan. Remove from heat and stir in the molasses and sugar. Beat in the spice mixture completely, then the water, then the egg.
- Place the flour in a large bowl and make a well in the center. Pour the butter mixture into the well. Stir about a quarter of the flour, the part closest to the center, into the molasses-butter mixture. Stir in half the remaining flour, then the rest. When all the flour has been incorporated, turn the dough out onto a board and knead until just smooth. Roll the dough into a ball, wrap in plastic and refrigerate overnight or up to two weeks.
- When you are ready to bake your cookies, preheat the oven to 350 degrees and grease the baking sheets. Roll out some of the dough an eighth of an inch thick, keeping the rest well wrapped in plastic. Cut into shapes with a five-inch cookie cutter. Bake the cookies on their sheets for 12 minutes. Remove from the oven, gently lift off the cookies with a spatula and cool them on a rack. Make the rest of the cookies the same way. Decorate the cooled gingerbread or leave plain.

PIPERADE ON CRUSTY BREAD
You'll taste all the vibrant flavours of northern Spain with this Basque-style tapa of sweet fried peppers and onions on a baguette slice

- Heat the oil in a large pan and slowly cook the onion for 6-8 mins to soften.
- Meanwhile, peel the tomatoes: using a sharp knife, make a cross on the top and bottom of the tomatoes. Pour boiling water into a bowl, and carefully lower the tomatoes into the water. Prepare another bowl of very cold water. After about 30 secs, drain the tomatoes, then plunge them into the cold water. The skins should now slip off easily. Cut into quarters, deseed and roughly chop.
- Throw the peppers and garlic into the onion pan, give everything a good stir and cook, covered, over a low heat for 20 mins or so until the vegetables are really soft and sweet. Stir regularly so that they don't catch on the bottom of the pan. Add the tomatoes, a pinch of sugar and cook, uncovered, for 5 mins more. Season and stir in the vinegar and the basil. Allow to cool to room temperature, stir through the basil and taste to check the flavours again. You may want to add a dash more vinegar, or a pinch more sugar, depending on how sweet your vegetables are. Spoon onto the baguette slices and serve.
