MOCK FRIED ICE CREAM

Steps:

• Remove cover from yogurt; stir well with spoon. Recover, and place in freezer, stirring every 15 minutes until consistency of soft serve, 30 to 45 minutes. Meanwhile, reserve 1/4 cup cereal; set aside. Coarsely crush remaining cereal; place in small bowl.
• Stir reserved 1/4 cup cereal into frozen yogurt, forming a ball. With spoon, remove yogurt ball, and place in bowl with coarsely crushed cereal. Roll ball around in crumbs, or spoon crumbs over ball until completely covered with crumbs.
• Place on serving plate. Drizzle with caramel topping. Serve immediately.

MOCK ICE CREAM SANDWICHES

Steps:

• In a bowl, combine whipped topping and chocolate chips. Break or cut graham crackers in half. Spread whipped topping mixture over half of the crackers; top with remaining crackers. Wrap in plastic and freeze for at least 1 hour.

MALTED VANILLA ICE CREAM

Steps:

• In a heavy-bottomed, 2 quart saucepan, whisk together the cream, milk, 1/2 the sugar, and 1/2 the malted milk powder. Slit the vanilla bean lengthwise, scrape the tiny seeds into the pan, and tossin the bean pod. Bring to boil over moderate heat, stirring occasionally. Remove from heat and allow to steep for 1 hour.
• Prepare an ice bath by filling a large bowl with ice and setting a smaller bowl on top.
• Whisk the egg yolks in a small bowl with the remaining sugar and malted milk powder. Return the cream mixture to a boil, and remove from heat. Temper the yolks by slowly ladling 1/2 cup of the hot liquid into the bowl with the yolks, whisking constantly. Still whisking, pour the warm yolk mixture back into the hot cream and then stir with a wooden spoon for a few moments to thicken the custard.
• Strain the custard through a fine-mesh strainer into the bowl set over ice, and stir occasionally until chilled. Freeze in an ice-cream maker, following the manufacturer's directions.
• Serve--it's delicious!

LOW CARB VANILLA ICE CREAM

Steps:

• Mix thoroughly and put in your ice-cream maker. Follow your ice cream maker's instructions.

• Beat the whipping cream to stiff peaks, fold in vanilla and splenda sweetener. Then freeze until frozen. Serve in 1/2 cup dessert cups and enjoy the sweet treat.
