HOMEMADE CITRUS HERB SPICE

this is one of my throw together spices as I'm always using grilling chicken n this is so handy - a quick and easy herb seasoning - great for chicken or lamb

1 Tbsp thyme, dried
1 Tbsp oregano, dried
2 tsp basil, dried
1 tsp rosemary, dried
1 tsp sage, dried
1 1/2 tsp orange zest, dried, coarse ground
1 1/2 tsp lemon zest dried, coarse ground
1 tsp fennel seeds, coarse ground

Steps:

  • 1. Combine all ingredients and seal in ziploc bag or spice jar. use within 2 months.

This is the perfect sauce for our grilled salmon with citrus sauce.

Yield Makes 3/4 cup

Number Of Ingredients 6

1/2 cup fresh orange juice
1/4 cup fresh lime juice
2 teaspoons sugar
2 teaspoons Dijon mustard
2 tablespoons olive oil
Coarse salt and ground pepper

Steps:

  • In a small skillet over high heat, boil 1/2 cup fresh orange juice and 1/4 cup fresh lime juice until reduced to 1/2 cup, 8 to 12 minutes.
  • Remove from heat; whisk in 2 teaspoons sugar, 2 teaspoons Dijon mustard, and 2 tablespoons olive oil. Season with coarse salt and ground pepper.

1 1/2 cups sugar
3 tablespoons cornstarch
Salt
2 cups warm water
1 stick unsalted butter, cut into small pieces
1 tablespoon finely grated lemon zest plus 1/2 cup fresh lemon juice (from 2 lemons)
1/4 cup blood-orange and lime juice (mixed, or one or the other)

Steps:

  • Combine sugar, cornstarch, and 1/4 teaspoon salt in a medium saucepan. Whisk in water. Bring to a boil, whisking. Continue to boil, whisking, until clear and thick, about 6 minutes more.
  • Stir in butter, lemon zest, and citrus juices. Cook, stirring regularly, until smooth, 2 to 3 minutes more.

1 cup low-salt chicken stock
1/4 cup fresh lemon juice
1/4 cup fresh orange juice
3 tablespoon unsalted butter
Salt and freshly ground pepper to taste
1 tablespoon freshly chopped chervil or parsley
1 tablespoon freshly chopped chives

Steps:

  • Place the chicken broth in a medium saucepan over medium heat. Simmer until reduced to 1/4 cup, about 15 minutes.
  • Add the lemon and orange juices and butter. Simmer until the sauce is thick enough to coat a spoon, about 20 minutes. Add salt and pepper to taste. Add herbs until just before serving.

½ cup white sugar
⅛ cup lemon juice
¼ cup water

Steps:

  • Combine berries, sugar, and lemon juice in a small saucepan set over medium heat and cook, stirring occasionally, for 5 minutes.
  • Pour water and orange juice into the mixture and simmer over low heat, stirring occasionally, for 5 minutes.
  • Raise the temperature to high heat and cook, stirring constantly, until thickened, about 5 minutes more.

Steps:

  • In a small bowl, combine the orange juice, wine or grape juice, lemon juice and sugar; mix well. In a large bowl, combine the fruit; add juice mixture and toss to coat. , Cover and refrigerate for 2-3 hours, stirring occasionally. Garnish with mint if desired.

  • Position a rack 3 inches from the broiler. (Note: To get the pan 3 inches from the heat source, you may have to turn over a rimmed sheet pan and set it on the rack.)
  • If you know how to supreme citrus fruit, do that, squeezing and reserving any juice left in the rinds, then skip to step 2. Otherwise: Slice off the ends of each orange and the lemon.
  • Pour one tablespoon of the juice from the bowl of citrus segments into a large bowl. Add 1 tablespoon of honey and 1 tablespoon of olive oil. Whisk to combine.
  • Meanwhile, pour the remaining 2 tablespoons olive oil into the bowl with the citrus segments. Add the chives and a big pinch of sea salt. Stir to combine.
  • Rub a sizzle pan or sheet pan or broiler pan lightly with neutral oil. Remove fillets from marinade, letting excess drip off—no need to pat dry. Discard excess marinade.
