- Mix together the vinegar, orange juice, grapefruit juice, lime juice, and lemon juice. Slowly add the olive oil while whisking vigorously. Add the walnuts and Romano cheese and stir. Season with salt and pepper.

- combine all ingredients together and whisk until well incorporated.
- Drizzle 2-3 tsp of dressing over your salads.
- Note: this is a great dressing to go with any green salad that is combined with some sort of fruit (pear, orange segments, grapes, strawberries, dried sweet cranberries), add some type of nut (almonds, walnuts), and cheese (crumbled bleu, feta, gorgonzola). MAKE IT YOUR OWN!

- Use as needed.
- Refrigerate leftovers to use within one week.

This lovely, lovely recipe was given to me by the chef of the "blue Vervain Restaurant" in Hot Springs, SD. We thoroughly enjoyed a super yummy dinner there. She served the most outstanding Thai soup I have ever had and this FAB salad. Adapted from the brains of Chef Philly of the Culinary Institute of America and Rebecca Christensen. Steps:
- Purchase at least 2 of each citrus fruit for juicing and zesting: lemons, oranges and limes.
- Place honey in a bowl, whisk in juices slowly in a stream.
- Whisk in olive oil, balsamic vinegar and add zest of all fruits, shallots and seasonings.
- Adjust seasonings to taste (salt & pepper).
- Keep in the fridge until ready to use. Makes 1 quart.
- Salad serving suggestion:
- Serve on a bed of mixed greens OR in a bib lettuce cup using a 3-5 leaves, grated or shaved parmesan cheese > I would suggest using several pieces of shaved, pink grapefruit slices, avocado slices. *No amounts were given, just use your judgment. and throw caution to the wind! Use as little or as much as you like. Perhaps 1/3 grapefruit and 1/2 avocado per person and wing the rest of the amounts.

CITRUS-BASIL VINAIGRETTE
This dressing is lovely yellow color, and we use it on a mixed green salad (mixed Romaine and European greens), tossed with small broccoli and cauliflower florets, raisins or sweetened dried cranberries, and shredded Cheddar or crumbled Gorgonzola cheese. The sweet-tart zestiness of the dressing perks up the salad! The yield depends on how much salad dressing you prefer. For us, this recipe makes enough dressing for about 4 large salads.

- Peel citrus fruit (see note above) and cut into 1/4-inch thick slices, removing any seeds you see.
- In a small bowl, whisk together honey and balsamic vinegar. Slowly drizzle in olive oil, whisking until emulsified. Season with a pinch each of sea salt and black pepper.
