TERIYAKI PORK AND BEEF BURGER

1 pound ground beef sirloin
1 pound ground pork
1/2 medium yellow onion, grated on the large holes of a box grater
2 tablespoons minced fresh garlic
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
1/4 cup firmly-packed light brown sugar
1 ripe pineapple, peeled, quartered, cored and cut into 1/4-inch dice
1 dragon fruit, peeled and cut into 1/4-inch dice
1 bunch fresh cilantro, minced
1/4 cup soy sauce
2 tablespoons minced fresh ginger
6 hamburger buns

Steps:

  • Combine the ground beef, ground pork, onion, garlic and 1 tablespoon each salt and pepper in a large bowl; stir until well mixed. Form the mixture into 6 balls. Press 1 teaspoon butter into the center of each ball; wrap the meat around the butter to enclose it and form a patty. Place the patties on a plate and refrigerate for 1 hour.
  • Combine 1 tablespoon of the brown sugar, half of the pineapple and the dragon fruit and cilantro in a medium bowl. Toss until well mixed. Season with salt and pepper.
  • Preheat a grill pan or outdoor grill to medium-high.
  • Combine the soy sauce, ginger and the remaining pineapple and brown sugar in a large skillet. Bring to boil, then reduce the heat and maintain a gentle simmer. Remove the patties from the refrigerator and let stand at room temperature for 10 minutes.
  • Place the patties on the grill and cook, flipping halfway through, until no longer pink in the center, 6 to 8 minutes. As the patties finish cooking, transfer them to the simmering sauce and cook, rotating in the sauce, until they are well coated and have absorbed some of the sauce, about 1 minute.
  • Place each patty on a bun, top with some of the salsa and serve hot.

2 medium onions, sliced
1/2 cup reduced-sodium teriyaki sauce
1 pound lean ground beef (90% lean)
4 slices part-skim mozzarella cheese or provolone cheese
Hamburger rolls

Steps:

  • In a large skillet, saute onions in teriyaki sauce until tender. Shape ground beef into four patties; place on top of onions and cook for 4-6 minutes on each side or until a thermometer reads 160° and juices run clear. , Top each burger with cheese and onions. Serve on rolls.

You can make these on an indoor grill also. I usually glaze the tops with bottled hoisin sauce a minute before end of cooking time and then serve on large hamburger buns! Plan ahead these need to chill for a minumum of 4 hours before cooking --- low sodium soy sauce only for this!

2 lbs ground pork
1/2 cup fine dry breadcrumb
1 tablespoon fresh minced garlic
1 teaspoon seasoning salt
1 teaspoon black pepper
4 green onions, finely chopped (can use a small yellow onion in place of green)
1/4 cup low sodium soy sauce
3 tablespoons frozen orange juice concentrate, thawed
1/2 teaspoon ginger powder (can use fresh minced ginger)
3 teaspoons brown sugar

Steps:

  • Combine all ingredients in a large bowl.
  • Shape into patties, then place on a sheet.
  • Cover and refrigerate for a minumum of 4 hours.
  • Grill about 7-10 minutes on each side or broil 3-inches from element for about 5-10 minutes per side (depending on the thickness of your pattie).

Easy Teriyaki Chicken Burgers image

A super simple way to make a chicken burger that zings with flavor! Sometimes it's referred to as "hawaiian-style." This has been my husband's favorite for a long time, especially at Red Robin. That got too expensive after a while so I thought I'd try making it at home instead. He loves it! These burgers have been a big hit whenever we have friends over for a barbeque.

4 boneless skinless chicken breasts
1/2 cup teriyaki sauce
4 hamburger buns, potato or gourmet style
4 slices pineapple, drained
2 tablespoons mayonnaise

Steps:

  • Place chicken breasts in glass dish and smother with teriyaki sauce; turn breasts over to cover thoroughly.
  • Marinate as long as possible, preferably in the fridge overnight.
  • 15-30 minutes if you're in a hurry.
  • On stovetop or grill, cook chicken about 12 to 14 minutes.
  • (7-8 minutes in a George Foreman grill).
  • Chicken breasts (bone-in and boneless) should be cooked to an internal temperature of 170 F.
  • Exact grilling times will depend on the heat of your grill/pan as well as on the thickness of the chicken breast.
  • Chicken is done if, when pierced, the juices run clear or the breast is no longer pink inside.
  • Spread mayonnaise on each bun, top& bottom.
  • Place each cooked chicken breast on a bun and top with a pineapple slice.
  • Serve alongside a summer salad or veggies and don't forget a tall glass of iced tea!

Using your hands, combine the burger mix until all ingredients are evenly spread throughout, taking care not to overmix. Form into a ball and then flatten into a patty shape about 1/2 inch thick, making a small indent in the center to allow the burger to puff up. Try not to make thick patties; they will shrink quite a bit when cooked and you want them to fit perfectly on the bun. Refrigerate for at least 30 minutes and up to 1 hour.
  • Preheat oven to 300° and preheat a grill pan over medium heat for 15 minutes. Lightly oil grill pan with vegetable oil. Place burgers on grill and raise heat slightly. Grill the burgers for 7 minutes on first side and 6 minutes on second side, putting cheese (if using) on when you flip burger to second side to allow to melt. Place in oven to keep warm until remaining two burgers are done (unless your grill pan is huge and can fit all four-don’t crowd your pan though!)
  • Combine all of the teriyaki mayonnaise ingredients and let rest in the refrigerator until ready to use.
  • Spread teriyaki mayo on both sides of buns, place mixed greens on bottom bun, and place burger on top. Put a small dollop of mayo on top of burger and sprinkle with green onions.
