Salmon and hollandaise tart image

A delicious dish for a family lunch, perfect served with a green salad. Hot-smoked salmon is widely available now, but if you prefer, you can make this using the same amount of poached salmon.

Number Of Ingredients 8

350g shortcrust pastry
300g hot-smoked salmon
2 tbsp drained
250g unsalted butter
4 egg yolks
1 tsp tarragon white wine vinegar
1 lemon
1 bunch tarragon, leaves finely chopped

Steps:

  • Heat the oven to 190c/fan 170c/gas 5. Roll out and line a 20-21cm tart tin with pastry. Prick the tart with a fork and line it with baking parchment and baking beans. Bake blind for 15 minutes and then remove the paper and bake for another 10 minutes to dry out the base and cook the pastry through.
  • Break up the salmon, put it in the tart case, and sprinkle over half of the capers.
  • Melt the butter and skim off the white foam. Whisk the egg yolks and vinegar in a glass bowl, set it above (but not touching) a pan of simmering water and whisk until the mixture thickens. Take the bowl off the heat and gradually whisk in the buter a knob at a time, until the hollandaise is thick and creamy. Season with a squeeze of lemon juice, some salt and pepper and add a splash of water to make a spoonable consistency. Stir in most of the tarragon and spoon this over the salmon in the tart. Put any leftover into a jug to serve on the side. Finish with the remaining tarragon and capers.

4 sheets filo pastry
50g butter, melted for brushing
150g pack hot-smoked salmon, flaked
1 jar or pack hollandaise

Steps:

  • Heat the oven to 180c/fan 160c/gas 4. Lay 2 filo sheets on the work surface side by side and brush with butter, then lay the other 2 sheets on top and brush again. Cut each into 6 squares (you may have some trimmings left).
  • Brush a mini muffin tin with butter and push a filo square into each. Bake for 5 minutes or until crisp. Lift the tart cases carefully from the tin and fill each with some salmon and spoon over some hollandaise.

⅓ cup diced smoked salmon
2 tablespoons chopped fresh chives
1 small garlic clove, minced
salt and freshly ground black pepper to taste
6 frozen mini pastry shells, thawed

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Combine cream cheese, salmon, chives, garlic, salt, and pepper in a bowl; mix well. Divide equally into pastry shells and place on the prepared baking sheet.
  • Bake in the preheated oven until bubbling, 25 to 30 minutes. Remove and cool to room temperature before serving.
