Kids Can Make: Mini Lasagna Cups image

These genius little lasagna cups are made with a surprise ingredient: ravioli! They fit perfectly into muffin tin cups and add an extra bonus pocket of cheese. Little kids can help measure the ingredients and big kids can help make the sauce. Both can help fill the cups.

Time 55m

Yield 6 servings

Number Of Ingredients 9

One 24-ounce bag frozen spinach and cheese ravioli
4 tablespoons olive oil
One 14.5-ounce can chopped tomatoes
1 1/2 teaspoons Italian seasoning
1 small carrot, chopped
1 clove garlic
Kosher salt and freshly ground black pepper
1 1/2 cups shredded part-skim mozzarella
1 tablespoon grated Parmesan

Steps:

  • Bring a large pot of water to a boil. Add the ravioli and cook according to the package directions. Drain and rinse under cold water until cool enough to handle.
  • Position an oven rack in the middle of the oven and preheat to 400 degrees F. Brush the cups of a 12-cup muffin tin with 2 tablespoons of the oil. Set aside.
  • Combine the tomatoes, Italian seasoning, carrot, garlic and remaining 2 tablespoons oil in a blender. Blend until well combined but not entirely smooth, about 20 seconds. Season with salt and pepper.
  • Spoon 1/2 teaspoon sauce into each oiled cup, top with a ravioli, then with 1 teaspoon sauce and 1 teaspoon mozzarella. Repeat twice so that each cup has 3 raviolis layered on top of each other with sauce and mozzarella. Evenly divide the remaining sauce among the cups. Top each with 1 tablespoon mozzarella and 1/4 teaspoon Parmesan. Bake until the top of each lasagna is golden brown and bubbly, 18 to 20 minutes.

Creamy Tomato Lasagna with Mascarpone Cheese image

Luscious white sauce partners with sausage and beef in this three cheese lasagna.

Provided by By Betty Crocker Kitchens

Categories     Entree

Time 2h25m

Yield 12

Number Of Ingredients 26

1/4 cup olive oil
2 medium carrots, chopped (1 cup)
2 medium stalks celery, chopped (1 cup)
1 large onion, chopped (1 cup)
3 cloves garlic, finely chopped
1/2 cup chopped fresh mushrooms (4 oz)
1/2 lb bulk Italian sausage or links (remove from casings)
1/2 lb ground chuck or lean (at least 80%) ground beef
1/2 cup white wine or nonalcoholic wine
1 cup whole milk
1 can (28 oz) diced tomatoes, drained
2 tablespoons tomato paste
1 tablespoon balsamic vinegar
2 teaspoons dried basil leaves
1/2 teaspoon ground black pepper
1/4 teaspoon crushed red pepper flakes
1/3 cup mascarpone cheese or cream cheese, softened
1/4 cup butter
1/4 cup all-purpose flour
3 cups whole milk
1/2 teaspoon salt
1/4 teaspoon white pepper
1/8 teaspoon freshly ground nutmeg
3 cups shredded mozzarella cheese (12 oz)
2 cups shredded Parmesan cheese (8 oz)
12 uncooked no-boil lasagna noodles (from 9- or 10-oz package)*

Steps:

  • In 3-quart saucepan, heat oil over medium heat until hot. Add carrots, celery and onion. Cook about 7 minutes, stirring occasionally, until softened. Add garlic and cook 30 seconds or until fragrant. Add mushrooms and cook about 5 minutes or until they have given up most of their juices.
  • Crumble sausage and beef into saucepan. Cook 10 minutes, breaking up and stirring occasionally, until no longer pink. Drain excess fat.
  • Increase heat to medium-high and stir in wine. Cook about 5 minutes, stirring occasionally, until wine nearly evaporates. Add 1 cup milk and cook about 15 minutes, stirring constantly, until no liquid remains. Reduce heat to low. Stir in tomatoes, tomato paste, vinegar, basil, black pepper and pepper flakes. Heat to simmer, then simmer 15 minutes.
  • Stir in mascarpone and remove sauce from heat. Taste and adjust seasoning if necessary. (Mixture should be saucy in order to hydrate the noodles during baking.)
  • In 2-quart saucepan, melt butter over medium heat. Stir in flour. Cook about 3 minutes, stirring constantly, until smooth and bubbly and making sure mixture does not brown. Remove from heat.
  • Gradually beat in milk with wire whisk. Heat to boiling, stirring constantly (especially the corners), and boil 3 minutes or until thickened. (Not cooking the whole time will leave your sauce tasting floury.) Remove from heat and stir in salt, white pepper and nutmeg. Taste and adjust seasoning if necessary. (Do not add too much salt because you will be adding salty cheese.)
  • Adjust oven rack to middle position. Heat oven to 425°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In medium bowl, mix mozzarella and Parmesan; set aside.
  • Spread about 1 1/4 cups of the meat sauce evenly over bottom of baking dish (it may not completely cover the bottom); top with 3 noodles. Top noodles with 1/2 cup of the white sauce, spreading it as best as you can. Sprinkle with 1 cup of the cheese mixture. Top cheese with 1 1/4 cups of the meat sauce. Place 3 noodles on top of meat sauce. Repeat the following layers twice: 1/2 cup white sauce, 1 cup cheese mixture, 1 1/4 cups meat sauce, 3 noodles. Spread remaining white sauce over noodles and sprinkle with remaining 2 cups cheese. You will be at the top of baking dish.
  • Tear off piece of foil large enough to amply cover top of baking dish. Spray one side of foil with cooking spray. Cover lasagna with foil, sprayed side down. (Lasagna can be refrigerated up to 12 hours at this point.)
  • Bake 30 minutes (if lasagna was refrigerated, bake 40 minutes). Carefully remove foil and bake 20 minutes longer or until top is lightly brown in spots and edges are hot and bubbly.

MACARONI CHEESE LASAGNE

Macaroni cheese lasagne image

Feeling a bit fuzzy or need some comfort? Mac 'n' cheese and lasagne are sure to do the trick - and here we've combined them for the ultimate indulgent dish

Provided by Esther Clark

Categories     Dinner

Time 1h30m

Number Of Ingredients 24

2 tbsp olive oil
400g lean beef mince
50g smoked pancetta, chopped
½ onion, finely chopped
½ celery stick, finely chopped
½ carrot, finely chopped
1 garlic clove, crushed
150ml red wine
1 tbsp tomato purée
400g can chopped tomatoes
250ml beef stock
2 bay leaves
1 rosemary sprig
1 tsp sugar
400g macaroni
80g grated mozzarella
a few whole basil leaves, to serve (optional)
50g butter
50g plain flour
2 tsp English mustard
800ml semi-skimmed milk
small grating of nutmeg
100g grated parmesan
100g mature cheddar, grated

Steps:

  • Heat half the oil in a large, heavy-based frying pan or casserole dish over a medium-high heat, and fry the mince and pancetta until golden. Transfer to a bowl using a slotted spoon and set aside.
  • Add the remaining oil to the pan and fry the onion, celery and carrot for 10 mins until just softened. Add the garlic and cook for 1 min more, then return the meat to the pan.Tip in the wine, bring to a simmer and cook until the mixture is reduced by half. Stir in the tomato purée, tomatoes, stock, bay, rosemary and sugar. Simmer, covered, for 30 mins, then remove the lid and simmer uncovered for another 10 mins until reduced. The ragu will keep in the freezer for up to two months. Leave to cool completely before freezing.
  • Meanwhile, make the cheese sauce. Melt the butter in a saucepan until foaming, then stir in the flour and cook for 2 mins. Stir in the mustard, then remove from the heat and gradually whisk in the milk in small additions. Return the pan to the heat and simmer for 5-6 mins, whisking continuously until thick and smooth. Add the nutmeg, parmesan and 80g of the cheddar, then season to taste.
  • Heat the oven to 200C/180C fan/gas 6, and cook the macaroni in a large pan of boiling water for 5 mins. Drain, then stir into the cheese sauce. Spread the ragu into the base of a large rectangular baking dish (ours was 28 x 22 x 5cm), then spoon over the mac 'n' cheese and gently spread out using the back of a spoon to cover the ragu. Top with the remaining cheddar and the mozzarella, and bake for 25-30 mins until golden and bubbling. Leave to rest for 5 mins, then scatter over a few basil leaves to serve, if you like.
