CHRISTMAS TREE MINI CUPCAKES

These are a delicious treat for the holidays, after a day the juice from the strawberry gets absorbed by the cupcake. Yummy!

1 ½ cups pastry flour
1 cup white sugar
⅓ cup cocoa powder
1 cup water
½ cup vegetable oil
1 teaspoon vanilla extract
1 cup vanilla frosting, or as desired
1 drop green food coloring, or as desired
48 small strawberries, hulled
¼ cup round red candies, or as desired
star-shaped candies

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease mini muffin cups or line with paper liners.
  • Mix pastry flour, white sugar, and cocoa powder together in a bowl; add water, oil, and vanilla extract and blend until batter is smooth. Spoon batter into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 8 to 12 minutes. Cool in the tin for 5 minutes.
  • Mix frosting and green food coloring together in a bowl until evenly combined. Transfer frosting to a pipe bag or plastic bag with a snipped corner; refrigerate for 5 minutes.
  • Squeeze a small amount of frosting onto the hulled side of each strawberry and place each onto a cupcake so the strawberry is in the shape of a tree. Pipe frosting onto each strawberry to look like leaves. Add candies to the "tree" to look like ornaments and place a star-shaped candy on top of each "tree".

I found this recipe in a community magazine & made these with my toddler DD as table decorations for Xmas. A fun activity for the kids, these can be made up to 2 weeks ahead.

1 egg white
1 1/2 cups icing sugar, sifted
6 ice cream cones
400 g mint leaves, lollies
silver cachous

Steps:

  • Place egg white in a bowl & beat in enough icing sugar to give a stiff spreadable consistency, cover icing with a damp cloth.
  • Stack 3 cones together using a little icing between each, repeat with remaining cones.
  • Starting at the base of the cone spread icing over 1/3 cone and place a row of mint leaves around the base, overlapping the 1st layer.
  • Spread remaining cone with icing & continue arranging rows of mint leaves around the cone until about 6 or 7 rows are formed leaving a little space at the top.
  • Repeat this procedure with remaining cones, icing & leaves.
  • Cover top with silver cachous & sprinkle with a little extra icing sugar.

This would be a fun project in the kitchen for kids. I think you could substitute regular Cheerios for Honey Nut Cheerios because these bars are pretty sweet. This is a super simple treat you can whip up at the last minute that looks festive and is similar to Rice Krispy Treats. Recipe from Family Dollar Recipe and Coupon Book and General Mills.

6 cups Honey Nut Cheerios
6 tablespoons butter
4 1/2 cups miniature marshmallows
green food coloring
red cinnamon candies or gumdrop

Steps:

  • Line a cookie sheet with waxed paper.
  • Pour the cereal into a 4-quart bowl and set aside.
  • Place the butter and marshmallows in a 3-quart saucepan. Heat over low heat, stirring constantly, until the mixture is smooth.
  • Remove the saucepan from the heat.
  • Stir in the food color until the mixture is evenly colored.
  • Pour the marshmallow mixture over the cereal and stir until the cereal is evenly coated.
  • Lightly spray your hands with cooking spray.
  • For each tree, shape about 1/4 cup of the cereal mixture into a Christmas tree shape on the cookie sheet.
  • Press the candies into the trees to decorate. If using gumdrops, slice into the size of ornaments.
  • Refrigerate until firm, about 1 hour.
  • Store the trees in a loosely covered container.
