Million Dollar Cake image

A cake made from yellow cake mix is frosted with a cream cheese, mandarin orange, and pineapple mixture for a light and refreshing cake.

1 (18.25 ounce) package yellow cake mix
8 ounces cream cheese
1 ½ cups confectioners' sugar
1 (20 ounce) can crushed pineapple with juice
2 (8 ounce) cans mandarin oranges, drained
1 (3.5 ounce) package instant vanilla pudding mix
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • Mix and bake cake mix as per package instruction for two 8 or 9 inch round layers. Let layers cool, and then split each layer in half so as to have 4 layers.
  • In a large bowl, whip cream cheese until soft, and then gradually mix in confectioners' sugar. Stir in the pineapple with juice and the drained mandarin oranges, reserving about 5 mandarin orange slices to decorate the top of cake. Mix in the dry pudding mix. Fold in the whipped topping.
  • Place one cake layer on a cake plate cut side up; spread with frosting. Place another layer cut side down on the first one, and top with more frosting. Repeat until all layers are used, spreading last bit of frosting on top and sides of cake. Decorate with reserved mandarin orange slices. Refrigerate overnight before serving.

2 cups butter, softened (4 sticks)
4 cups sugar
6 large eggs
4 cups all-purpose flour
1 cup whole milk
1 teaspoon pure vanilla extract
1 teaspoon almond extract

Steps:

  • Freheat the oven to 300 degrees; grease a 10-inch tube pan with butter, dust the bottom and sides with flour, and set aside.
  • In a large mixing bowl, cream the butter and sugar with an electric mixer and add the eggs one at a time, beating after each addition.
  • Alternately add the flour and milk, stirring till the batter is smooth.
  • Add the two extracts and stir till well blended.
  • Scrape the batter into the prepared pan and bake till a cake tester or knife blade inserted in the center comes out clean, about 1 1/2 hours. (Do not bake till the cake is dry.).
  • Cool the cake in the pan on a rack for 5 minutes, then turn it out on the rack to cool completely.

This recipe I found in a trunk that was passed on from my grandmother to me. Chocolate cake can by dry, however this recipe is scrumptious, I have used this recipe for the last 15 years and have never had a flop. When entertaining my friends always ask me to bake this cake. I have passed this recipe on to a very dear friend who always says everything she bakes comes out a flop but this recipe is one that she can bake and never flops she says Once the flour and baking powder have been added beat only until blended DO NOT OVER BEAT. You will never eat another chocolate cake once you have eaten this one!

1/2 cup cocoa powder
1 cup boiling water
4 eggs
1 1/2 cups white sugar
1/2 cup cooking oil
1 teaspoon vanilla essence
4 teaspoons baking powder
450 ml cake flour
1 1/2 cups evaporated milk
1 cup white sugar
6 teaspoons brandy
2 teaspoons vanilla essence
280 g of brown milk chocolate
1.5 (375 ml) double fresh cream
60 ml brandy

Steps:

  • Preheat oven to 180°C (350°F).
  • Dissolve cocoa powder in boiling water, set aside to cool.
  • Grease & flour a 11inch (28cm) long & 8inch (20cm) wide oven proof container.
  • Separate the eggs ( beat the egg whites until stiff peaks form and set aside).
  • Beat the egg yolks and sugar until light and fluffy.
  • Add the cooled cocoa mixture and beat well.
  • Add the oil and vanilla essence beat well.
  • Sift in the flour and baking powder and beat only until blended.
  • Fold in the stiffly beaten egg white with a metal spoon.
  • Pour mixture into oven proof container and bake for 25 to 30 minutes.
  • While the cake is baking make the syrup.
  • Put the evaporated milk, sugar, brandy, vanilla essence into a pot on the stove bring to the boil, boil together until sugar has dissolved.
  • When the cake is baked removed from oven prick the top of the cake all over with a fork and pour the syrup over the cake.
  • Leave the cake to get completely cold.
  • While the cake is getting cold make the frosting.
  • Break up the chocolate squares place in a basi over a 1/2 pot of water and simmer until the chocolate has melted ( do not put any liquid near this while the chocolate is melting otherwise the chocolate will split and go dry).
  • Let the chocolate cool slightly.
  • Whisk the cream until soft peaks are formed, add the brandy beat well then gradually fold in the cooled chocolate.
  • Frost the top and sides of the cake with this mixture.

75g butter, melted, plus extra for the tin
250g shortbread biscuits
250g mascarpone
300g full-fat soft cheese
50g icing sugar
40g cocoa powder
300ml double cream
½ x 397g can caramel or 200g dulce de leche
50g dark chocolate, chopped
star sprinkles or chocolate stars, to decorate

Steps:

  • Butter and line the base of a 20cm springform cake tin. Blitz the biscuits in a food processor into fine crumbs, then add the butter and blitz again. Tip the mixture into the tin and press down firmly with the back of a spoon. Chill while you make the filling.
  • Gently mix the mascarpone, soft cheese, icing sugar and cocoa until smooth. In a separate bowl, whip the cream until it is stiff, then fold into the mascarpone mixture. Spoon the mixture over the biscuit base and level the top. Chill for 1 hr.
  • Warm the caramel in a pan a little so it is easily spreadable, if you overdo it, wait until it cools again. Pour it onto the cheesecake, spread gently and chill. Meanwhile, melt the chocolate carefully in a bowl set over a pan of simmering water or in a microwave. Drizzle it back and forth over the caramel, then add the sprinkles or stars in whatever pattern you like. Chill until ready to serve, then carefully remove the tin and lining and slide the cheesecake onto a serving plate.

20 oz crushed pineapple with juice
1 pkg yellow cake mix
8 oz cream cheese
12 oz cool whip
1 pkg instant vanilla pudding mix
2 c milk
1 c chopped pecans

Steps:

  • 1. Preheat oven to 350 degrees ). Grease and flour one 9x13 inch pan. Drain pineapple. If pineapple is not well drained, it will make the filling runny. Mix and bake cake according to package instructions. Pour 1/2 of the batter into the prepared pan. Discard or find another use for the remaining half of the batter.
  • 2. Bake at 350 degrees for 20 minutes or until done. Let cake cool in pan on a wire rack. Beat softened cream cheese until fluffy. Slowly add milk, combining thoroughly. Add instant pudding and beat until thick. Pudding mixture will thicken when refrigerated. When cake is cool and pudding mixture is thickened you can assemble the cake. Spread pudding mixture on top of the cooled cake. Sprinkle drained pineapple over pudding. Carefully spread thawed frozen whipped topping over all. Sprinkle chopped walnuts over all. Refrigerate. Enjoy!

15.25-oz box yellow cake mix, plus ingredients listed on the box (such as eggs, oil, etc)
1 (3.4-oz) box instant vanilla pudding mix, plus ingredients listed on box (milk, etc)
1 (8-oz) pkg cream cheese, softened
1 (20-oz) can(s) crushed pineapple, drained well
1 (8-oz) pkg whipped topping (cool whip), thawed
OPTIONAL TOPPINGS
1/3 cup finely chopped nuts (walnuts, hazelnuts, macadamia nuts, etc)
1/3 cup shredded coconut
about 36 maraschino cherries, stems removed

Steps:

  • 1. Spray 9x13x2-inch baking dish with nonstick baking spray; set aside.
  • 2. Prepare cake mix for 9x13 baking dish according to box directions. Pour batter into 9x13 baking pan, and bake as directed on box. Let cake cool completely.
  • 3. Prepare pudding as directed on package. Add the softened cream cheese, and beat until well blended. Spread pudding mixture over the surface of the cooled cake.
  • 4. Squeeze out as much moisture as possible from the drained pineapple (too much pineapple juice will make the frosting runny). Distribute pineapple evenly over the pudding mixture.
  • 5. Spread Cool Whip evenly over the pineapple layer.
  • 6. Garnish the top with chopped nuts, shredded coconut, and maraschino cherries, as desired. Cover and refrigerate overnight.
  • 7. To get 18 servings, cut 3 rows across and 6 rows vertically.
