Country Fried Steak and Milk Gravy image

I have been making this for years and my family just loves it. The gravy is great served over the steak, or on mashed potatoes.

Time 35m

Yield 4

Number Of Ingredients 7

4 (4 ounce) cube steaks
½ teaspoon salt, divided
1 ¾ teaspoons ground black pepper, divided
1 cup all-purpose flour
2 eggs, lightly beaten
¼ cup lard
1 cup milk

Steps:

  • Season meat with 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper; set aside. In a shallow dish, mix flour with 1 teaspoon of the pepper. Dredge each steak in flour. Dip in beaten egg, then dredge in flour again.
  • Heat lard in a large, heavy skillet over medium-high heat. Fry steaks 3 to 4 minutes on each side, or until golden brown. Drain on paper towels.
  • Pour off all but 2 tablespoons of the fat. Sprinkle 2 tablespoons of the dredging flour into oil. Cook over medium heat for 1 minute, scraping up any browned bits from the bottom of skillet. Gradually whisk in milk. Cook, stirring frequently, 3 to 4 minutes, or until thickened and bubbly. Add 1/4 teaspoon salt, and 1/4 to 1/2 teaspoons pepper; gravy should be quite peppery.

OLD TIME KENTUCKY BACON MILK GRAVY FOR BISCUITS

Old Time Kentucky Bacon Milk Gravy for Biscuits image

I grew up with this gravy! Everyone has heard of sausage gravy. Well, it don't compare to this! After frying your bacon for breakfast, use the bacon dripping to make true Kentucky biscuit gravy. Fattening? Oh yeah, you better believe it! Worth it? Yes! Pour over biscuits and serve with crispy bacon and eggs in any style.

Time 35m

Yield 6

Number Of Ingredients 5

¼ cup bacon drippings
¼ cup all-purpose flour
1 teaspoon salt, or to taste
1 teaspoon ground black pepper, or to taste
4 cups milk, divided

Steps:

  • Heat bacon drippings in a skillet over medium heat; whisk flour into drippings until smooth. Reduce heat to low and cook the flour mixture until it turns a caramel brown color, stirring constantly, about 15 minutes. Be careful, the roux burns easily. Stir in salt and black pepper.
  • Whisk 1/2 cup milk into the roux until thoroughly blended. Continue whisking milk into the gravy, 1/2 cup at a time, whisking in each amount of milk completely before adding more. Bring gravy to a simmer and whisk constantly until thick, smooth, and bubbling.

MILK GRAVY (PAULA DEEN)

Milk Gravy (Paula Deen) image

My grandmother used to make the BEST milk gravy! She would serve it over chicken fried steak and mashed potatoes. Unfortunatley, I never got her original recipe. I came across this recipe in a "Cooking with Paula Deen" magazine and I think this is very close to what my grandmother used to make!

Time 20m

Yield 3 cups

Number Of Ingredients 5

1 -2 tablespoon vegetable oil or 1 -2 tablespoon vegetable shortening
4 tablespoons all-purpose flour
3 cups whole milk
1 teaspoon black pepper
1/2 teaspoon salt

Steps:

  • ~NOTE~ This recipe will have more flavor if you use 1-2 tablespoons of oil from the oil you fried chicken fried steak in, or maybe even bacon grease. If you don't have that, no need to worry, you can use vegetable oil or vegetable shortening.
  • Heat 1-2 tablespoons oil in a skillet over medium heat.
  • Whisk in flour, whisking constantly for about 1 minute.
  • Slowly add milk, whisking constantly.
  • Stir in pepper and salt and continue cooking.
  • Whisk constantly for about 10 minutes, or until thickened.

COUNTRY MILK GRAVY

Country Milk Gravy image

I've made biscuits and gravy for years in many different ways. Once I hit on the idea of using buttermilk I knew I had a keeper. Hope you enjoy it too.

Provided by chefmick

Categories     Breakfast

Time 17m

Yield 6-8 serving(s)

Number Of Ingredients 6

2 cups milk
1 cup buttermilk
3 teaspoons salt (optional to taste)
2 teaspoons pepper (optional to taste)
1/2 cup flour
1/2 cup milk

Steps:

  • In med sauce pan heat milk, salt and pepper to a low boil on med to med high heat. (you need to stir frequently so milk does not scorch.).
  • Whisk 1/2 cup flour and the 1/2 cup milk to a slurry and slowly stir into hot milk. (at this point you will want to stir constantly as the flour will have a tendency to collect on the bottom of the pan and burn.).
  • Reduce to simmer stirring constantly for 10 minutes or so until gravy reaches desired thickness. (Simmering will cook the flour and remove the pasty flavor. Gravy will thicken a little more as it cools.).
  • This is good by itself but you can also add your favorite meat for additional flavor. Serve over your favorite biscuit recipe.
