1 (20 ounce) package Simply Potatoes (diced potatoes with onion)
1 lb sirloin steak (sliced thin)
1 (1 1/4 ounce) package burrito seasoning mix
4 -6 burrito-size flour tortillas
1 cup shredded cheddar cheese (or your favortite)

Steps:

  • Prepare Simply Potatoes according to package until browned.
  • Remove potatoes from pan and set aside.
  • Add steak strips to pan stir and cook until done, approximately 7 minutes over medium heat.
  • Add Burrito seasoning packet according to directions.
  • When thickened and right before serving return potatoes to pan and heat through.
  • Fill tortilla shells with filling, top with cheese and wrap burrito style.
  • ENJOY.

5-Ingredient Fix Contest Entry. Have you ever made cabbage pockets? Some people call them Kraut Burgers. My mom calls them German Hamburgers. I am referring to the little buns of dough filled with hamburger and cabbage. I used to make the dough from scratch - let it rise, punch it, and all that. Too much work for this girl! I have an easier way... a casserole that tastes like cabbage pockets. This is much easier to make because you don't have to roll out the dough to make individual burgers.

1 1/2 lbs lean ground beef
1 (16 ounce) bag coleslaw mix (cabbage and carrots)
1 (14 1/2 ounce) bag Simply Potatoes Diced Potatoes with Onion
2 (10 1/2 ounce) cans cream of mushroom soup, undiluted
2 (8 ounce) cans refrigerated crescent dinner rolls

Steps:

  • Pre-heat oven to 350°F.
  • In stockpot, brown ground beef over medium heat for 8 to 10 minutes or until beef is thoroughly cooked, stirring frequently. Add coleslaw mix. Cover pan and cook, stirring often, until cabbage softens, about 10 minutes. Mix in potatoes. Stir in soup. Cover and reduce heat to low to keep warm.
  • Unroll 1 can of dough. Press in 13x9-inch glass baking dish to form bottom crust. Spread cabbage mixture evenly over crust. Unroll second can of dough on wax paper. Press seams together to make one sheet. Place over top to form top crust. Press and tuck edges to seal.
  • Bake 25 minutes or until golden brown. Let stand 5 minutes. Cut into 8 squares.

This is a handy breakfast burrito to make ahead of time and freeze, then heat up in the microwave for a fast breakfast on the go. These are so handy to throw in my lunchbox on my way to work. The kids also love to heat one up for a quick breakfast before school.

12 eggs
1 (4 ounce) can chopped green chilies, drained
2 lbs bulk sausage (I use Farmland Pork & Bacon Sausage)
1 lb frozen diced potatoes
cheddar cheese, shredded
20 tortillas

Steps:

  • Brown sausage and potato in separate pans until done. Scramble eggs and chiles together and cook until done. Mix potatoes, eggs, and sausage together in one bowl. Place 1-2 spoonfuls of mixture in a tortilla and top with shredded cheese. Fold burrito shut, package, and freeze. To serve: Heat the burrito in a microwave for 1-2 minutes, and enjoy!
  • Note: I really recommend the Farmland Bacon and Pork sausage because my family likes the smoky bacon flavor. If you can't find it, you could add some chopped cooked bacon to the meat/potato/egg mixture before wrapping the burrito. You can be creative with this recipe. Sometimes I add onion, or hot chiles, crushed red pepper, or hot sauce.

10 eggs
3/4 cup mayonnaise
2 tablespoons chipotle chiles in adobo, finely chopped
6 flour tortillas

Steps:

  • Cook Simply Potatoes according to package directions.
  • Meanwhile, in a small bowl, combine chipotle with mayo.
  • Scramble the eggs: heat a non-stick pan over medium-low heat. Whisk eggs in a bowl. Add eggs to pan; allow to set for a minute, then slightly lift eggs with a spatula, allowing the liquid to run under the cooked portion. Repeat until eggs are completely cooked. Season with salt and pepepr and remove to a bowl.
  • Spread chipotle mayo on each tortilla.
  • Pile the eggs and potatoes on top of the mayo.
  • Wrap up and enjoy!

2 ounces Egg Beaters egg substitute
2 slices Morningstar Farms veggie bacon strips
1 whole wheat tortilla
olive oil flavored cooking spray

Steps:

  • Spray your pan with cooking spray. Cook your bacon until lightly browned. Put it aside until cool. Put in your potatoes and cook until brown. Microwave your tortilla for 30 seconds. Put your potatoes on the tortilla. Spray the pan and pour in the Egg Beaters. Crumble the Stripples in the pan on top of the eggs and cook together. Add the finished mixture on the potatoes and make your burrito. Personally, I like to add a little garlic to the potatoes.
