But as I have traveled and worked and experienced foods from around the world, I look back and realize that many of the dishes she prepared, while simple, were perfect for that moment. Sometimes we have to put emotion and love in a dish to make it extra-special. The dish I am going to give you today is one like that. Simple and easy, yet full of love and goodness. My mother used to serve this with corn on the cob and cornbread. Very inexpensive and very good as well. Enjoy an Ozark memory...

1 large head cabbage, finely chopped
1 (14.5 ounce) can diced tomatoes with juice
1 onion, halved and thinly sliced
1 tablespoon Italian seasoning
salt and ground black pepper to taste
1 pound lean ground beef

Steps:

  • Combine cabbage, tomatoes with juice, onion, Italian seasoning, salt, and black pepper in a large pot over low heat. Bring cabbage mixture to a simmer and crumble ground beef into the pot. Cover and cook until cabbage is tender and ground beef is cooked through, about 45 minutes. Stir occasionally.

This is what we call Chop Suey, my hubby's family call it chow mein... it is nothing like the recipes that are named that on this site, must be an Aussie thing.

500 g lean ground beef
1 onion, diced
1 tablespoon butter
1 tablespoon curry powder
1 large carrot, diced small
2 celery ribs, sliced
425 g corn kernels (use the water inside too)
45 g sachet chicken noodle soup mix
3 cups sliced cabbage
2 tablespoons Kikkoman soy sauce
1 cup water

Steps:

  • Melt butter in non stick fry pan.
  • Add onion and cook until soft.
  • Add beef and brown.
  • Add curry powder, cook for 2 minutes.
  • Add the rest of the ingredients and cook for 20-30 minutes on low until cabbage is cooked.
  • Serve over white rice.

1/2 lb beef, ground
1 1/2 cups cabbage, coarsely shredded
1/3 cup onion, chopped
1/4 cup butter or 1/4 cup margarine
1 egg, beaten
1/2 cup process American cheese, shredded (about2 oz.)
1 tablespoon prepared mustard
1 teaspoon salt
1 teaspoon Worcestershire sauce
1/2 teaspoon pepper
1 package pre-made pie crust sticks or 1 package pie crust mix
1 teaspoon water
to taste chili sauce

Steps:

  • Heat oven to 425 degrees.
  • Cook and stir ground beef in 10-inch skillet until brown. Remove beef; drain fat from skillet.
  • Cook cabbage and onion in butter in same skillet over low heat, stirring occasionally, until cabbage is crisp-tender, about 20 minutes.
  • Reserve 1 tablespoon of the egg. Stir remaining egg, the beef, cheese, mustard, salt, Worcestershire sauce and pepper into cabbage mixture; reserve.
  • Prepare pastry for two crust pie as directed on package, except roll into rectangle, 18 x 12 inches. Cut into six 6-inch squares.
  • Place on ungreased baking sheet. Spoon 1/3 cup beef mixture onto each square. Bring corners to center and pinch together; seal edges.
  • Blend water and reserved egg; brush over pastry.
  • Bake until golden brown, 14 to 16 minutes.
  • Serve with chili sauce.
