Cheese-Crusted Cutlets with Raw Sauce and Milanese-Style Rice Pilaf image

4 pieces boneless, skinless chicken breast
Salt and freshly ground black pepper
1 cup all-purpose flour, plus 2 tablespoons
3 large eggs
Splash milk
3/4 cup plain bread crumbs
Freshly grated nutmeg, about 1/4 teaspoon
3/4 cup grated Parmigiano-Reggiano
2 tablespoons butter
1/3 cup orzo pasta
2 cloves garlic, finely chopped
1 cup white rice
2 cups chicken stock
2 pinches saffron threads
1/4 cup finely chopped flat-leaf parsley
Olive oil, for frying
1 1/2 pints cherry or grape tomatoes, halved or 7 to 8 small Roma tomatoes, thinly sliced lengthwise
1 small red onion, quartered and thinly sliced
1/2 cup torn or thinly sliced basil leaves
3 to 4 stems fresh tarragon, leaves chopped
2 tablespoons extra-virgin olive oil

Steps:

  • Preheat the oven to 275 degrees F.
  • Butterfly the chicken breasts open by cutting into and across but not all the way through the breast with a sharp knife. Lightly pound out the chicken under plastic wrap and season with salt and pepper, to taste.
  • Set up a breading station: 1 pan of flour, 1 pan of eggs beaten with 2 tablespoons flour and a splash of milk, and 1 pan of bread crumbs seasoned with nutmeg and combined with cheese. Coat the chicken pieces in the flour, then in the egg and then in the bread crumb mixture. Set aside.
  • Arrange a cooling rack over a baking sheet and put it in the middle of the oven.
  • Add the butter to a pot with tight-fitting lid over medium heat. Add the orzo to the warm butter and toast for 2 to 3 minutes, then add garlic and stir a minute more. Add rice and coat in butter. Stir in the stock and the saffron threads and bring to a boil. Reduce the heat to a simmer and cover the pot. Cook the rice until tender, about 17 to 18 minutes. Add the parsley and fluff with a fork.
  • Heat 1/4-inch of oil in a very large skillet over medium heat. Fry the chicken, 2 cutlets at a time, about 3 minutes on each side. Transfer the first 2 cutlets to the cooling rack in the oven to keep warm while you cook the second batch.
  • While the chicken cooks, combine the tomatoes, onions, basil, tarragon, and 2 tablespoons extra-virgin olive oil in a small bowl. Season with salt and pepper, to taste.
  • Transfer the chicken from the oven to serving dishes and top with the raw tomato sauce. Serve the Milanese rice alongside.

Chicken Milanese With Tomato, Mozzarella and Basil Salad image

A classic veal Milanese consists of pounded veal cutlets or chops that have been breaded in crumbs and sometimes Parmesan, then fried until the coating is burnished and brittle. Accompanied by a crisp, bright salad, it's a meal both cooling and rich. In this version, chicken breasts replace the veal, and a salad of tomatoes and mozzarella tossed with garlicky basil oil acts as the foil to the meat. If you want to work ahead, you can coat the cutlets in crumbs up to 4 hours ahead. Store them on a wire rack in the fridge. But try to serve them freshly fried when their coating is at its crunchiest.

1 1/2 pounds chicken cutlets, pounded 1/4-inch thick
Kosher salt and freshly ground black pepper, as needed
2/3 cup plus 1/4 cup extra-virgin olive oil
2/3 cup basil leaves
1 fat garlic clove, finely grated or minced
1 pound cherry or grape tomatoes, halved
8 ounces fresh mozzarella, cut into 1/2-inch pieces
1/2 cup all-purpose flour
2 large eggs, beaten
1 1/4 cups panko bread crumbs
1/4 cup grated Parmesan
2 tablespoons unsalted butter
Lemon wedges, for serving

Steps:

  • Lightly season chicken cutlets all over with salt and pepper; let rest while you make the basil oil.
  • In a blender or food processor, combine 2/3 cup oil, basil, garlic and salt to taste; purée until smooth.
  • In a medium bowl, toss tomatoes and mozzarella with about half of the basil oil and salt to taste. Set aside.
  • Place flour in a shallow bowl or plate. Pour eggs into another shallow dish; combine panko and Parmesan in a third dish.
  • In a large skillet, melt butter and remaining 1/4 cup oil over medium heat. As it heats, dip a chicken cutlet in flour, shake off excess, then dip in eggs. Shake off excess, then dip both sides in panko mixture and transfer to a rimmed baking sheet. Repeat with remaining cutlets.
  • When oil is hot, fry 2 cutlets at a time until bottoms are golden, about 3 minutes. Flip and fry until golden and crispy all over, about another 3 minutes. Transfer to a paper towel-lined plate. Sprinkle immediately with salt.
  • Taste tomato-mozzarella salad and add more salt and-or basil oil if needed. Serve cutlets topped with a squeeze of lemon, a drizzle of remaining basil oil and tomato-mozzarella salad.

Veal Milanese (or as the Italians call it 'Cotleta Alla Milanese') is a simple Italian dish of breaded veal cutlets, that are coated with flour, egg and breadcrumbs, then fried until golden brown. They can be served with just lemon wedges, or with your favorite topping, or with pasta.

1 lb Veal cutlets
1 cup Flour
2 Eggs
1 cup Breadcrumbs
Salt & Pepper
1/2 cup Clarified Butter or Cooking Oil (for frying)
1/2 Lemon (Quartered)

Steps:

  • Prepare your dishes for breading - beat your eggs in a shallow bowl, add flour and bread crumbs to two separate plates.
  • Season your veal cutlets with salt and pepper.
  • Bread all your cutlets - start with flour (shake off the excess), then the egg, and then the breadcrumbs, then set aside.
  • Preheat your oven to a very low temperature of 200F to keep your cooked veal cutlets warm until you finish up all frying.
  • Preheat your cast-iron skillet until hot, add the clarified butter or oil and let it heat up until hot (about 375 F).
  • Fry your veal cutlets in batches for about 3-4 minutes per side (don't overcrowd the pan as the oil will lose its temperature and the cutlets can get soggy).
  • Remove cooked cutlets onto a rack with baking sheet and place in the oven to keep them warm.
  • Once all your veal cutlets are fried, place them on a serving plate with lemon wedges and serve.

2 cups grape tomatoes cut lengthwise I half
1 large shallot, chopped
1/4 teaspoon salt

1/4 cup dry red wine
1/2 cup chopped fresh basil leaves
1/2 cup Progresso™ Italian-style panko crispy bread crumbs
1/4 cup grated fresh parmesan cheese
4 boneless skinless chicken breasts (1 1/2 lb)

Steps:

  • In 12-inch nonstick skillet, heat 2 teaspoons of the oil over medium-high heat. Cook tomatoes, shallots, salt and pepper in oil 4 minutes, stirring frequently, until shallots are tender. Stir in wine; cook 30 seconds longer. Remove from heat; transfer to medium bowl. Stir in basil; cover to keep warm.
  • In shallow bowl, mix bread crumbs and cheese. In same skillet, heat remaining 4 1/2 teaspoons oil over medium heat. Spray both sides of chicken with cooking spray; coat with bread crumb mixture. Cook chicken in oil 12 to 15 minutes, turning once, until juice of chicken in oil 12 to 15 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (at least 165°F).
  • On each of 4 plates, place 1 chicken breast; spoon sauce evenly over chicken.

1 small head garlic (2 inches in diameter)
1/2 pound plum tomatoes, halved lengthwise
1 large red bell pepper (1/2 pound)
1 teaspoon olive oil
1 1/2 teaspoons fresh lemon juice
1/2 teaspoon balsamic vinegar, or to taste

Steps:

  • Preheat oven to 375°F.
  • Cut off and discard top quarter of garlic head and wrap remainder in foil. Arrange tomatoes, cut sides up, in a foil-lined 13- by 9- by 2-inch baking pan and sprinkle lightly with salt. Add whole bell pepper and garlic (in foil) to pan and roast vegetables in middle of oven 1 hour.
  • Transfer bell pepper to a bowl and cover bowl with plastic wrap, then let stand about 20 minutes. When cool enough to handle, peel pepper, discarding stem and seeds, and transfer to a food processor or blender along with tomatoes.
  • Unwrap garlic and squeeze roasted cloves from skin into food processor. Add remaining ingredients and salt and pepper to taste, then purée sauce until smooth.

Milanese-style cutlets are simple and elegant when served on a bed of lightly dressed arugula leaves. Veal cutlets are perhaps the most well known, but any tender meat can be pounded into thin cutlets. For this recipe you can substitute boneless beef sirloin, pork loin, or chicken breast.

1/2 cup onion, diced
7 tablespoons extra virgin olive oil, divided
1 (15 ounce) can whole tomatoes, drained
1 cup roasted red pepper, chopped
1/4 cup fresh parsley leaves, copped and divided
1 tablespoon red wine vinegar
kosher salt
black pepper
1 cup breadcrumbs, panko
2 eggs
1 tablespoon Dijon mustard
1/2 cup all-purpose flour
12 ounces pork (8 pieces) or 12 ounces chicken cutlets (8 pieces)

Steps:

  • Saute' onion in 1 tablespoons oil in a saucepan over medium-high heat until onion is translucent, about 5 minutes.
  • Stir in tomato and rosted pepper; cook until heated through.
  • Transfer mixture to a blender; puree until smooth.
  • Return sauce to saucepan, stir 2 tablespoons parsley, vinegar, salt and pepper.
  • Keep sauce warm until ready to serve.
  • Combine panko with the remaining 2 tablespoons parsley in a shallow dish.
  • Whisk together eggs and Dijon in another shallow dish.
  • Place flour in a third shallow dish.
  • Season panko mixture, egg mixture, and flour with salt and pepper.
  • Coat meat in flour, tapping to remove excess.
  • Dip meat into the egg mixture and then into the panko mixture.
  • Heat 4 tablespoons of remaining oil in a large nonstick skillet over high heat.
  • Working in two batches, saute' cutlets in hot oil until they are crisp and golden on both sides, about 5 minutes total.
  • Transfer cutlets to a paper-towel-lined plate to absorb excess oil, then to a cooling rack so bottom cutlets don't get soggy.
  • Add remaining 2 tablespoons oil to skillet and repeat with remaining cutlets.
  • Serve cutlets with roasted pepper and tomato sauce.
