MIKEY'S PIZZA CHICKEN
I had an ex boyfriend many yrs ago who wanted to impress me and came up with this unbelievably delish chicken dish. I was very impressed and went on to make this for others. Children love this!

Steps:
- 1. Heat oven to 350. Lightly spray a 9" x 13" casserole pan w/ cooking spray. Make pasta as directed, drain and put back in pan. Add a little olive oil and set aside.
- 2. In medium bowl,mix egg, ricotta cheese, a 1/4 cup parmesan cheese, garlic, pepperoni, salt, peppe and 1 tbsp parsley. Mix well.
- 3. Place chicken breasts in bottom of pan and place 2 tbsps of filling on short end of each chicken. Roll each chicken up and place seam side down in pan. Pour marinara sauce over chicken, top w/ mozzarella cheese, the remaining parmesan cheese and parsley. Cover pan w/ foil. Bake 35 mins. Serve over pasta.

This is the safest place I can think to put this recipe. I went searching for it and almost couldn't find it! The is the only Chicken and Biscuit recipe my husband will eat!

Steps:
- Melt margarine/butter in a large skillet over medium heat. Add mushrooms and onion cook until crisp-tender.
- Stir in flour and pepper. Cook over low heat until mixture is smoothand bubbly stirring constantly.
- Stir in bouillion, milk, water and reserved mushroom liquid. Bring to a boil, stirring constantly. Boil for 1 minute stirring constantly.
- Stir in chicken. Cook until thoroughtly heated, stirring occasionally. Serve over biscuits.
- *Note: I have added pea, corn and carrots to this, either one or all. Very Good!
