Danish Dessert Cake Mignon's Recipe / Sarah image

This cake is very refreshing. I make it in the summer. It's the perfect finish to a barbecue or great cake to take to a pot-luck.

18 1/2 ounces white cake mix (you will use a little over half)
1 1/8 cups water
3 egg whites
1/4 cup oil
8 ounces cream cheese
2 cups powdered sugar
1/2 pint whipping cream or 1 (8 ounce) container Cool Whip
4 3/4 ounces junket danish dessert mix
1 pint fresh strawberries or 1 pint fresh raspberry

Steps:

  • Use a little more than half of the cake mix, add water, egg whites and oil. Bake as directed in a 9x13 inch pan. Let cake cool.
  • Mix the powered sugar with the cream cheese together till smooth.
  • Whip the whipping cream and fold into powered sugar and cream cheese mixture.
  • Pour on cooled cake and put in fridge.
  • Cook Danish Dessert according to package directions.
  • When Danish Dessert has cooled add fruit and put on top of cream cheese mixture.

I used to buy this cake from the local bakery and decided it was less expensive to make it myself... (use only fresh fruit - not frozen)

Number Of Ingredients 12

1 (18 ounce) box white cake mix (or french vanilla)
3 egg whites (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
1/4 cup Karo syrup or 1/4 cup other fruit syrup
1/4 cup water, to dilute Karo syrup (do not use if using the fruit syrup)
1 cup strawberry
1/2 cup blueberries
1/2 cup raspberries
4 -5 kiwi (sliced)
1/2 cup slivered almonds
16 ounces Cool Whip

Steps:

  • Mix and bake the cake according to directions on box using the two - 9" pans.
  • Let cool & slice each cake layer in half so you have 4 cake layers.
  • Drizzle each cake layer with syrup (diluted Karo syrup or juice from a can of peaches). Let soak about 15 minutes - ½ hour.
  • Wash and let the fruit dry on paper towel.
  • Place the first cake layer on the plate & spread a layer of Cool Whip.
  • Distribute slices of kiwi evenly over the Cool Whip.
  • Place the next cake layer & repeat until you finish all layers.
  • If you want you can randomly add a few of the other fruits in the middle layer.
  • Cover the top & sides of cake with the remaining Cool Whip.
  • Take a handful at a time of the almond slivers & cover the sides of the cake (this is a little messy).
  • Decorate the rest of the cake with the remaining fruit & sliced strawberries.
  • Refrigerate until ready to eat.

AIR-FRYER BACON-WRAPPED FILET MIGNON

I got the idea for bacon-wrapped filet mignon when I saw some on sale in the grocery store. The rest was inspired by my husband, because he once made a Scotch and ginger ale sauce. I originally made this in the oven but it works equally well in the air fryer! -Mary Kay LaBrie, Clermont, Florida

2 bacon strips
2 beef tenderloin steaks (5 ounces each)
1/4 teaspoon salt
1/4 teaspoon coarsely ground pepper
2 cups sliced baby portobello mushrooms
1/4 teaspoon dried thyme
2 tablespoons butter, divided
1-1/2 teaspoons olive oil
1/4 cup Scotch whiskey
1/2 cup diet ginger ale
1 tablespoon brown sugar
1-1/2 teaspoons reduced-sodium soy sauce
1/4 teaspoon rubbed sage

Steps:

  • Place bacon in a single layer in air-fryer basket. Cook at 350° until partially cooked but not crisp, 3-4 minutes. Remove to paper towels to drain., Preheat air fryer to 375°. Sprinkle steaks with salt and pepper; wrap a strip of bacon around the side of each steak and secure with toothpicks. Place steaks in a single layer on greased tray in air fryer basket. Cook until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 7-10 minutes, turning halfway through., Meanwhile, in a large skillet, saute mushrooms and thyme in 1 tablespoon butter and oil until tender; remove from heat. Add whiskey, stirring to loosen browned bits from pan. Stir in ginger ale, brown sugar, soy sauce and sage., Bring to a boil. Reduce heat; simmer, uncovered, until reduced by half, 3-5 minutes. Stir in remaining tablespoon butter. Serve with steaks.
