MIDNIGHT MOJITO
Like my mojito but with amber rum. Found this on an Austrailian sight. Made a little different then my version. DEPAZ Amber Rum is used in this.

Steps:
- Squeeze fresh lime wedges, place ingredients into a shaker -- shake 15 - 20 times.
- To serve as a traditional mojito - empty entire contents into a tall, highball glass top with club soda if necessary.
- Serve to impress - strain mojito into cold Martini glass - garnish with lime and/or mint leaf.

THE CLASSIC CUBAN MOJITO
Steps:
- Gather the ingredients.
- In a highball glass, add the sugar, mint leaves, and a splash of the club soda.
- Muddle just enough to dissolve the sugar and release the flavor of the mint.
- Squeeze the juice from the 2 halves of lime into the glass. Drop 1 squeezed half into the glass if you like.
- Add the rum and stir well.
- Fill the glass with ice cubes and top with club soda.
- Garnish with a mint sprig. Serve and enjoy.

Steps:
- Muddle the lime juice, sugar and mint leaves in a small jug, crushing the mint as you go - you can use the end of a rolling pin for this. Pour into a tall glass and add a handful of ice.
- Pour over the rum, stirring with a long-handled spoon. Top up with soda water, garnish with mint and serve.

- Muddle simple syrup and 2 mint sprigs in a cocktail shaker. Add rum and lime juice. Fill shaker with ice, cover, and shake vigorously until outside of shaker is very cold, about 20 seconds.
