MEDITERRANEAN MEAT PIES (SFEEHA)



Mediterranean Meat Pies (Sfeeha) image

These savory little meat pies are a takeoff on a recipe from my Lebanese mother-in-law (who is one of the very best cooks I know). She makes the dough from scratch, but I use puff pastry instead to save time. Great for an appetizer or as a side dish!

1 pound ground beef
½ pound ground lamb
1 white onion, finely chopped
¾ cup pine nuts
⅛ teaspoon ground cinnamon
salt and ground black pepper to taste
⅓ cup lemon juice
1 egg, beaten
2 (17.3 ounce) packages frozen puff pastry, thawed

Steps:

  • Heat a large skillet over medium-high heat and stir in the ground beef and ground lamb, chopped onion, pine nuts, cinnamon, and salt and black pepper. Cook and stir until the meat is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease.
  • Stir in the lemon juice; taste and adjust the seasonings, and let the meat mixture cool.
  • Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet or line it with parchment paper.
  • Roll out the thawed pastry sheets to about 1/8-inch thickness. Using a sharp 3-inch round cookie cutter, cut out at least 9 rounds per sheet. Lightly brush the inside edges with a little water, and place about 2 teaspoons of filling into the middle of each round. Fold the pastry round in half to cover the filling and seal the edges well. Transfer to the prepared baking sheet and repeat with the remaining dough circles.
  • Brush each pie with a little egg wash. Bake in the preheated oven until golden brown, 15 to 20 minutes.

Lebanese Meat Pies image

These Lebanese meat pies (sfeehas) are a delicious Middle Eastern appetizer. Made with a crispy dough and filled with a spiced meat filling.

3 cups all-purpose flour
1 ¼ cups warm water
2 teaspoons sugar
2 ¼ teaspoons instant (yeast 1 packet)
2 teaspoons salt
¼ cup olive oil
2 tablespoons olive oil
1 medium onion (diced)
1 pound 95% lean ground beef
3 Roma tomatoes (seeded and chopped)
¼ cup chopped parsley
1 teaspoon salt
2 teaspoons 7 Spice
2 teaspoons sumac
½ teaspoon cinnamon

Steps:

  • Combine the warm water, sugar and yeast in a bowl. Add the flour and salt and mix together until well combined. Transfer the dough to a floured surface and knead the mixture until sticky.
  • Add the olive oil and continue kneading until the dough becomes soft and smooth and lightly sticky without leaving any dough on your fingers.
  • Transfer the dough to a lightly greased and allow it to proof until doubled, about 90 minutes.
  • Remove the dough and divide into 30 pieces and reshape to round balls. Let sit in an oiled tray until doubled, about 30 minutes.
  • In a medium size pan over medium heat, heat the olive oil and cook the onions until soft and translucent, about 10 minutes.
  • Add the beef and onions and cook until the beef is browned, about 8-10 minutes. Fold in the tomatoes and parsley, then season with salt, 7 Spice, sumac and cinnamon.
  • Preheat the oven to 425ºF and line a baking sheet with parchment paper.
  • Roll out the dough in 4-5 inch circles. Place 2 tablespoons of the mixture inside each circle.
  • Hold two ends of the dough and seal them together over the filling, pinching the dough together to help bind. Fold the last side up to meet the first two sides, pinching the dough together with the first two sides to bind.
  • Bake for 15-20 minutes until the tops are golden brown.
  • Serve warm on their own or with plain whole milk yogurt as a dip.

From a free recipe book given out by Philadelphia Cheese (upon the purchase of 3 of their products). These sound like a wonderful snack, though personally I would use parsley or basil as I am not a fan of mint. Times are as given in the recipe.

1 tablespoon olive oil
1 onion (large, finely chopped)
2 garlic cloves (minced)
500 g ground lamb
2 teaspoons cinnamon
1/4 cup tomato paste
1 tablespoon flour
1 cup beef stock
salt (to taste)
pepper (to taste)
6 sheets phyllo pastry
garlic olive oil flavored cooking spray
125 g cream cheese (spreadable light)
1/4 cup mint (finely shredded)
1/3 cup pine nuts (toasted)

Steps:

  • Heat the oil in the frypan and saute onion for 1 to 2 minutes until just softened and then add garlic and lamb mince and cook for 5 minutes or until lamb mnce has browned.
  • Add spices and tomato paste and cook for 1 minute.
  • Blend flour with the stock and then add to the lamb mixture and simmer for 5 to 6 minutes until thickened and then season with salt and pepper to taste.
  • Preheat oven to 200C, 180C fan forced.
  • Spray a sheet of filo with oil, top with another sheet and spray with oil, fold sheets in half and cut into 4 squares, repeat with remaining filo.
  • Push the filo squares in 12 x 1/3 cup capacity greased muffin pans and fold in edges slightly.
  • Bake in a hot oven for 8 to 10 minutes or until golden.
  • Combine the cream cheese with half the mint.
  • Spoon the lamb filling into the filo cases and dollop with the cream cheese mix and sprinkle with remaining mint and pine nuts.
  • Serve immediately.

Many Middle East countries have a version of this. This is the Iraqi version. These freeze well and can be served cold. If you make smaller versions they can be served as an appetizer.

5 -6 cups plain flour
1 envelope active dry yeast
2 cups water
2 teaspoons sugar
2 teaspoons salt
2 tablespoons oil
1 large onion, finely chopped
2 tablespoons oil
2 cloves garlic, finely chopped
500 g finely ground lamb
1 1/2 cups tomatoes, chopped and peeled
1 1/2 cups zucchini, grated
2 tablespoons chopped parsley
1/2 teaspoon dried thyme
1 small chili, seeded and finely chopped
salt
fresh ground black pepper

Steps:

  • Sift flour into a large mixing bowl and warm in a low oven.
  • Dissolve yeast in 1/4 cup warm water, and stir in the remaining water and sugar and salt.
  • Remove about 2 cups flour from bowl and keep aside.
  • Make a well and pour the yeast mixture into the center and blend in a little of the flour to thicken the liquid.
  • Cover with a cloth and leave until frothy.
  • Stir in the rest of the flour in a bowl to make a soft dough, adding oil gradually.
  • Beat by hand for 10 minutes.
  • Turn onto a flour dusted board and knead until smooth and elastic, using just enough flour from the reserved flour to stop the dough sticking.
  • Shape into a ball.
  • Oil bowl, put dough in and turn over to oil top.
  • Cover the top of the bowl with plastic wrap and leave in a warm spot until doubled in bulk- about 1 hour.
  • Meanwhile make the topping.
  • Gently fry the onion inoil until transparent, add garlic and increase heat.
  • Add lamb and stir over high heat until juices evaporate and meat starts to brown.
  • Add the remaining topping ingredients, cover and simmer over gentle heat for 30 minutes, removing the lid towards the end of coking so that the excess moisture can evaporate.
  • The mixture should be thick.
  • Allow to cool.
  • Punch down the dough and turn onto a floured board.
  • Knead for a couple of minutes and then divide into 24 equal portions shaping each into a ball.
  • Roll out each ball to a 12 cm round and place on greased baking sheets.
  • spread a generous tablespoon of topping on each and bake at 220 deg C/425F for 12-15 minutes until cooked.
  • Serve hot or cold.

  • FOR THE DOUGH: Put the flour, powdered milk, yeast, salt, and sugar in a large mixing bowl. Give it a good whisk so that all the ingredients are mixed. Create a well in the middle, add oil and eggs to well. Using a wooden spoon, stir as you add the water. When the dough starts to come together, dump it out onto a work surface. Knead the dough for 3-4 minutes. The dough will look wet and sloppy and doesn't really hold its shape. Place it in a bowl and loosely cover it with plastic wrap or a towel. Let the dough rise in a warm spot, like the oven (turned off, of course) for 1 hour. While it's rising, prepare the filling.
  • FOR THE SFEEHA FILLING: Heat the ghee in a large skillet on medium heat. Sauté the onions for 3 minutes. They should just start to turn translucent. Add the ground beef or lamb. Brown the meat for 10-12 minutes. Increase the flame to medium-high and add the tomatoes. Continue to cook for 8-9 more minutes or until the tomatoes wilt and most of the liquid dries up. Add the salt, cinnamon, allspice, cayenne, and sumac. Give it a stir. Add the tahini paste and pomegranate molasses. Let it cook for 1 more minute. Turn the stove off and add the lemon juice and chopped parsley. Let the filling cool for 15 - 20 minutes.
  • ASSEMBLE: Divide the dough into 16 or 32 pieces depending on how you'd like to serve. Before rolling out each dough ball spread a teaspoon or two of flour on a clean work surface. Roll the dough ball around so that it takes in the flour. The dough is going to feel somewhat oily, don't be tempted to add more flour. Roll out dough into a 5-6 inch circle. Place 2 tablespoons of the filling in the center (for larger sfeehas, for smaller use 1 tablespoon). Grab 2 ends and bring them over the filling. Pinch dough as you go to create a seal, stop at the center. Bring the last side up and pinch the center and down the two sides. Place on a parchment or silicone-lined baking sheet, 6 per sheet for large, and 12 for app size. (see pictures in post for detailed step-by-step directions).
  • BAKE: Position two rack in the center of the oven and preheat oven to 425ºF. Let pies rest for at least 15 minutes while the oven is preheating. Bake for 12-15 minutes or until they start turning lightly golden brown. Mine took exactly 12 minutes. Serve them warm or at room temperature with cold greek yogurt as a dip or with lemon wedges.
