Having a lengthy commute to work, I came up with this recipe that was ready in the same time it took my coffee to brew. By the time I get to work, I am energized and ready to start my day. It doesn't get any easier, just grab both mug handles and go. Feel free to add cooked bacon, sausage, or ham and top with chives.

nonstick cooking spray
2 large eggs
1 tablespoon water
1 tablespoon shredded Cheddar cheese
¼ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Spay a microwave-safe coffee mug with nonstick spray. Add eggs, water, Cheddar cheese, salt, and pepper. Whisk until evenly combined.
  • Microwave on high for 90 seconds. Fluff with a fork to combine and cook for 30 seconds more.

Steps:

  • Spray a microwave-safe bowl with nonstick cooking spray. Mix eggs and milk in another small bowl until well incorporated. Pour into the prepared bowl.
  • Place in the microwave and cook for 45 seconds. Stir and continue cooking until eggs have set, 30 to 45 more seconds. Season with salt and pepper.
