This Beefy Cheesy Crock Pot Potato Casserole is a great casserole for the whole family. Get your meat and potatoes all in one pot!

Steps:
- Lightly spray your 2-quart crock pot with cooking spray
- Layer half of your beef in your crock pot
- Top with half of your potato slices and onion
- Place half of your cheese slice pieces on top
- Repeat layering
- Spread your soup over everything
- Cover and cook on low for 4-6 hours or on high for 2-3 hours (the potatoes should be tender and the cheese bubbly)

Steps:
- In a large bowl, mix together all of your ingredients except for your French Fried Onions.
- Pour your mixture into a greased 6-quart or casserole crock.
- Sprinkle with 1 cup of your French Fried Onions on top.
- Cover and cook on high for 4 hours.
- If you are using an oven-safe crock (check with your manufacturer to know for sure), sprinkle your remaining onions on top and pop it in your broiler for about 90 seconds to crisp up the top.

- Lightly butter the inside of your crockpot.
- Combine soup, sour cream, onion, 1/4 c butter and seasonings in crock pot.
- Add potatoes and cheese, mix well.
- Cover mixture with dry stuffing mix and drizzle with the remaining 3 T of butter.
- cook on low for 4-6 hours or on high for 2 hours. Do NOT stir while cooking.
- * You can make a complete meal by adding cubed ham, frozen mixed veggies, and an extra can of soup.
