This smooth and delicious homemade pudding in the microwave can be made in minutes with basic pantry items. It's the perfect quick snack or dessert!

2 cups milk
1 cup sugar
1/3 cup flour
2 eggs
1 tsp. vanilla

Steps:

  • Pour milk into large microwavable bowl. Microwave for 90 seconds.
  • Meanwhile, mix together sugar, flour and eggs. After the milk has been microwaved and is warm, whisk in the sugar, flour, and egg mixture.
  • Microwave in 90 second intervals, whisking after each 90 seconds, until the mixture becomes thick.
  • Stir in 1 tsp. vanilla. Serve hot or cold.

Bread Pudding in the Microwave image

I have no idea where I got this recipe, but it is handwritten in a small book where I saved recipes back in the mid-80s. I haven't made this in ages, but I do recall I used to make it a lot. I think I will make it again today! :-) Ordinary sandwich bread works fine, or use a spiffier bread to make a spiffier pudding. Serve with a vanilla custard sauce, whipped cream, or even ice cream.

4 cups lightly packed bread, cut in cubes (about 4 or 5 slices of bread)
1/2 cup packed brown sugar
1/4 teaspoon salt
1/2 cup raisins
2 cups milk (not skim)
1/4 cup butter or 1/4 cup margarine
2 large eggs, beaten

Steps:

  • Spread bread cubes evenly in an 8-inch round glass pan.
  • Sprinkle with the sugar, salt, and raisins.
  • Place milk in a 4-cup glass measuring cup and add the butter.
  • Microwave on High for four minutes, until butter melts and milk is warm.
  • Rapidly, stir in eggs with a fork or small whisk and combine well.
  • Pour over bread.
  • Microwave on Medium-High for 9 to 12 minutes.
  • When cooked, centre may still be slightly soft, but does set up as pudding cools.
  • Serve warm or chilled; your preference.

MICROWAVE SPONGE PUDDING

A very simple microwave sponge pudding in less than 15 minutes with a texture between a sponge and a steamed pudding. I often add 2 tablespoons of jam or syrup to the bottom of the final bowl. Serve hot with custard.

¼ cup butter
¼ cup white sugar
½ cup self-rising flour
1 egg, beaten
2 tablespoons milk

Steps:

  • In a medium bowl, cream together the butter and sugar until smooth. Mix in the egg and milk gradually, so as not to curdle the butter. Sift in the flour, and fold in gently. Transfer to a 1 pint microwave-safe bowl.
  • Cover, and cook for 3 1/2 minutes on full powder, or until the pudding appears set when gently jiggled, and the top is sticky. Serve hot.

1/4 cup Dessert Masala + more for garnish
1/2 gallon whole milk
1 cup part-skim ricotta cheese
1/3 cup sugar, or to taste
1/2 teaspoon ground green cardamom seeds
1 drop rose essence

Steps:

  • 1. Prepare the dessert masala. Place the milk and ricotta cheese in a large microwave-safe bowl and, with an electric mixer or whisk, mix well. Place in the microwave and cook on high power 30 to 45 minutes, stopping first after 15 minutes, and then every 5 to 7 minutes, to stir, scrape the sides of the bowl, and mix everything together. Do this until you are left with about 2 cups of liquid. Every time you stop to stir, a thin skin will have formed on the surface break it, but carefully, to avoid giving yourself a steam burn. 2. Mix in the sugar, cardamom seeds, and dessert masala, then cook in the microwave on high another 5 minutes.3. Transfer to a serving dish, let cool, then mix in the rose essence. This is a delicious, creamy version of rice pudding that I got many years ago. It is good warm or chilled. Note: I made this is a 700-watt microwave, newer MWs are stronger and will require less time.

1 cup water
1/2 cup raw long grain rice
1 dash salt
3 tablespoons butter
2/3 cup sugar
3 cups milk
2 large eggs
1 teaspoon vanilla extract
cinnamon (optional)

Steps:

  • Combine water, rice and salt in a 2 to 2 1/2 cup microwave-safe bowl. Cover. Microwave on HIGH for 5-6 minutes or until mixture boils. Let stand, covered, for 10 minutes. Microwave on HIGH for an additional 4-5 minutes, or until rice is tender. Transfer to a large (12 cup) microwave-safe container.
  • Stir in the butter, sugar and milk. Cover. Microwave on HIGH for 8-10 minutes or until mixture boils. Beat the eggs and blend in a small amount of the hot mixture into the eggs, beating well. (This will prevent the eggs from curdling). Return to the large container, blending in well.
  • Microwave on HIGH, uncovered, 1 to 1/2 minutes, or until mixture bubbles around the edge, stirring once.
  • Stir in vanilla and transfer to serving dish; sprinkle with cinnamon, if desired. Cool - pudding will thicken as it cools. Serve warm or chilled.
  • Note1: Microwave ovens vary considerably in power. Watch carefully the first time you make this and note the times needed in your microwave oven. My current microwave is 1200 watts. I set it to power setting 6, which is 60% of full strength or equivalent to 720 watts. I then just follow the original timing. If you calculate whatever power setting gets you closest to 700 watts, you can do the same.
  • Note2: I use a microwave popcorn popper to cook this - it works beautifully. Be sure your container is big - you don't want this boiling over in your microwave!
