Scrambling eggs in the microwave is a one dish affair. No muss, no fuss. These come out perfectly and taste delicious. Found this in an issue of Everyday Food. Microwave cooking times vary and mine actually needs 55 seconds at each step instead of the 45 seconds listed. Don't add extra salt until you've tasted it.

Steps:
- In a large (10oz) microwave-safe custard cup or ramekin, combine eggs, milk, cayenne pepper, and salt. Stir in scallion.
- Microwave (uncovered) on high for 45 seconds; stir with a fork. Continue cooking until eggs are almost set, about 45 seconds more. Remove from microwave.
- With a clean fork, stir in cheese; cover with a paper towel. Let stand until cheese has melted and eggs are set, about 1 minute. Top with tomato and season with salt and pepper to taste.

- Set aside 2 tablespoons of the Parmesan. Sprinkle the remaining Parmesan in an 8-inch ring around the edge of a large nonstick skillet, leaving a 7-inch empty circle in the center. Sprinkle the reserved Parmesan in a line down the center of the circle, dividing it into 2 half-circles. Heat the skillet over medium-low heat.
- Gently crack an egg into each half-circle and sprinkle with salt and pepper. Cover the skillet and cook, undisturbed, until the whites are almost set and the cheese has melted, 3 to 4 minutes. Uncover and cook until the cheese is browned but the egg yolks are still runny, 1 to 2 minutes more. Gently slide the eggs onto a serving plate. The cheese will crisp as it cools.
MICROWAVE EGGS PARMESAN
Here is a quick microwave breakfast. The timing of this dish depends on the power of your microwave oven. Also, some like their eggs dry, others wet. Select your timing according to your preference. Remember that the eggs will continue cooking for about a minute after they are removed from the oven.

- Place 2 egg whites and 1 whole egg in a microwave-safe bowl about 7 inches in diameter. Add 2 tablespoons turkey, 1 tablespoon Parmesan and salt and pepper to taste. Whisk with a fork. Microwave on high 1 minute. Stir and microwave 30 seconds and stir. For drier eggs, microwave 30 seconds more. Arrange lettuce leaves on 2 plates and place tomato slices on top. QUICK & EASY EGGPLANT PARMESAN IN THE MICROWAVE
This is my grandmother's recipe, I'm not sure where she got it. It only takes about 14 minutes in the microwave for a quick dinner. If you want meat you can add it to your sauce.

- Peel eggplant; cut into 1/8" slices. In bowl combine tomato paste, water and tomatoes. Mix well. Add oregano and basil, Spread sauce on bottom of 2-Qt casserole. Layer half of eggplant, more sauce, and half the mozzarella cheese. Repeat layers. Finish by sprinkling Paremsan cheese on top. Cover casserole.
- Place in microwave and cook on High 14 minutes, turning dish once after 7 minute if your microwave does not rotate. Make sure cheese has melted.
- Serves 4.
- To Freeze: Label casserole and freeze up to 2 months.
- To Thaw: Thaw and place in microwave on High for 7 minutes.

- Brush 1 teaspoon olive oil into a thin layer on the bottom of a 10-inch nonstick or well-seasoned cast-iron skillet and place over medium heat. Sprinkle 1/2 cup Parmesan in an even layer covering the bottom of the pan. Cook for 2 minutes until cheese begins to melt.

- Peel eggplant.
- Cut into 1/4 inch thick slices.
- In shallow bowl, mix egg with milk.
- Place bread crumbs in another shallow bowl and mix in the basil, oregano and garlic.
- Dip eggplant slices first into the egg mixture and then into the bread crumb mixture.
- Arrange half of the eggplant on a 10 inch microwaveable plate lined with paper towels.
