MICROWAVE CARAMEL POPCORN

4 quarters cooked popcorn
1 cup brown sugar
1/2 cup butter or margarine
1/4 cup light corn syrup
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon baking soda

Steps:

  • Place the popped popcorn in a large brown paper bag.
  • In a 2-quart casserole or heat-proof glass dish, stir the brown sugar, margarine, corn syrup, salt, and vanilla until combined. Heat in the microwave for 3 minutes at 1-minute intervals, stirring well in between. Stir in the baking soda until combined.
  • Pour the syrup over the popcorn and seal the bag by rolling the top once or twice. Give the bag a good shake to coat the popcorn with the syrup well.
  • Place the bag in the microwave and cook for 1 minute and 10 seconds on high powder. Shake the bag vigorously and microwave for another 1 minute and 10 seconds. Transfer the popcorn onto a piece of parchment or wax paper. Let the coated popcorn cool and set. Enjoy!

5 tablespoons vegetable oil
2 ½ cups unpopped popcorn
¼ cup butter
1 cup packed light brown sugar
½ cup light corn syrup
⅔ cup sweetened condensed milk
½ teaspoon vanilla extract

Steps:

  • Add 1 tablespoon of the oil to a 4 quart saucepan, and heat over high heat. When oil is hot, add 1/2 cup of popping corn. Keep pan moving constantly. When corn stops popping, remove from heat. Place popped corn in oven to keep warm. Repeat until all corn has been popped. Set aside.
  • In a medium saucepan with a candy thermometer inserted, combine butter, sugar, and corn syrup. Stir well and bring to boiling over medium heat. Stir in condensed milk; simmer, stirring constantly, until thermometer reads 238 degrees F (114 degrees C). Stir in vanilla.
  • Pour caramel over popped corn and stir to coat. Butter hands lightly; shape popcorn into balls about 3 1/2 inches in diameter.

2 quarts popped popcorn (1/3 cup unpopped)
1/2 cup light brown sugar
1/4 cup butter
2 tablespoons dark corn syrup
1/4 teaspoon salt
1/4 teaspoon baking soda
1/2 teaspoon vanilla

Steps:

  • place popcorn in microwave safe 4-6 quart utensil. set aside.
  • combine brown sugar, butter, corn syrup and salt in 1 quart glass batter bowl.
  • microwave on high 1 1/2 minutes; stir.
  • microwave in high 2 minutes.
  • add baking soda and vanilla. stir well.
  • pour syrup immediately over popcorn; stir to coat evenly.
  • microwave on high 1 minute; stir.
  • microwave on high 1 minute; stir
  • quickly turn out on waxed paper or sheet pan;cool.
  • break up into pieces and store in airtight container.

1/3 cup butter (no substitutions)
2/3 cup packed light brown sugar
1/3 cup light corn syrup
1/4 teaspoon baking soda
1/2 teaspoon vanilla
10 cups popped popcorn

Steps:

  • In a 4 quart microwave safe bowl, microwave butter on high.
  • Stir in brown sugar & corn syrup.
  • Microwave on high for 1 - 3 minutes, stirring once, until mixture boils.
  • Microwave on high 3 minutes without stirring.
  • Stir in baking soda & vanilla.
  • Stir into popped popcorn, mixing well.
  • Microwave on 70 percent (medium) forn1 minute.
  • Remove and stir.
  • Microwave on medium 1 more.
  • Remove and stir to coat.
  • Remove and spread on jelly roll pan lined with nonstick foil or wax paper.
  • Frm into balls or cool and break apart.
  • Optional: drizzle with melted chocolate or add nuts.

4 quarts popped popcorn
1 cup brown sugar
½ cup margarine
¼ cup light corn syrup
½ teaspoon salt
1 teaspoon vanilla extract
½ teaspoon baking soda

Steps:

  • Place the popped popcorn into a large brown paper bag. Set aside.
  • In a 2 quart casserole dish, or other heat-proof glass dish, combine the brown sugar, margarine, corn syrup, salt and vanilla. Heat for 3 minutes in the microwave, then take out and stir until well blended. Return to the microwave, and cook for 1 1/2 minutes. Remove from microwave, and stir in the baking soda.
  • Pour syrup over the popcorn in the bag. Roll down the top once or twice to close the bag, and shake to coat the corn. Place bag into the microwave, and cook for 1 minute and 10 seconds. Remove, shake, flip the bag over, and return it to the microwave. Cook for another 1 minute and 10 seconds. Dump the popcorn out onto waxed paper, and let cool until coating is set. Store in an airtight container.

1 cup brown sugar, packed
1/2 cup butter
1/3 cup light corn syrup
1/2 teaspoon salt (optional)
1/2 teaspoon baking soda

Steps:

  • Pour popped corn into a large bowl and set aside.
  • Combine remaining ingredients, except soda, in a 2 quart microwavable bowl.
  • Microwave on high for 2 minutes, then stir.
  • Microwave again on high.
  • Watch it, and when it begins to boil, microwave 1 minute longer.
  • Remove from microwave and stir in baking soda.
  • Pour mixture over popped corn and stir to distribute.
  • Enjoy!

1 (20 ounce) bag marshmallows
food coloring (optional)

Steps:

  • Put the popped popcorn in a large bowl or pan; set aside.
  • In large microwave-safe bowl, microwave butter on high until butter is melted, about 30-45 seconds.
  • Add marshmallows.
  • Microwave on high until marshmallows look puffy, about 1 to 1-1/2 minutes.
  • Stir to completely melt marshmallows. Add food coloring if using.
  • Now pour melted marshmallows over the popcorn and mix carefully until the popcorn is coated.
  • Butter your hands to protect them from the heat and shape into balls.

1 cup brown sugar
⅔ cup sweetened condensed milk

  • Pour popcorn into a large bowl.
  • Combine brown sugar, condensed milk, corn syrup, butter, and vanilla extract in a saucepan over medium heat. Cook, stirring often, until a candy thermometer reads 234 degrees F (112 degrees C), about 5 minutes. Pour over popcorn; stir to coat evenly.

This is a great recipe for caramel corn. It is quick and easy. The corn turns out soooo good! I always make it for gifts at Christmas. It is from the Joy of Microwaving Cookbook. (The peanuts are optional and I have never added them).

3 tablespoons butter or 3 tablespoons margarine
3/4 cup brown sugar, packed
1/3 cup shelled peanuts (optional)
3 tablespoons dark corn syrup
1/2 teaspoon vanilla
1/4 teaspoon baking soda
salt
5 cups popcorn, popped

Steps:

  • Place butter or margarine in a 8 cup measure or large microwavable bowl.
  • Microwave at high for 30-45 seconds, or until melted.
  • Stir in brown sugar, peanuts(optional) and corn syrup.
  • Insert candy thermometer.
  • Microwave at high for 3-4 minutes, or until mixture reaches 280 degrees (soft crack stage). (Note- this is where the mixture can overcook - so watch carefully).
  • Mix in vanilla, baking soda and salt.
  • Place prepared popcorn in large bowl.
  • Pour hot mixture quickly over popcorn, stirring to coat.
  • Microwave at high for 2 minutes, stirring after half the time.
  • Stir again. Cool for about 30 minutes. Stirring occasionally to break apart.
  • I find it helpful, to spread caramel corn on a cookie sheet to cool. It cools much faster and is easier to break apart.
  • Enjoy!
