ARTICHOKE DIP
Steps:
- Preheat oven to 350 degrees F.
- To a mixing bowl add sour cream, mayo, cream cheese, garlic and 1 cup of parmesan cheese. Combine until smooth.
- Stir in chopped artichoke hearts and a little bit of dill weed, to taste.
- Place in a greased baking dish (most pan sizes around 8x8 in or a little smaller will work. You could even use a pie pan).
- Sprinkle remaining 1/4 cup of parmesan cheese on top. Sprinkle with a little extra dill weed, if desired.
- Bake in preheated oven for about 20 minutes or until hot and bubbly. Serve warm with crackers, bread, or veggies.

Steps:
- 1. in a microwave safe glass bowl, place frozen spinach and microwave for 5-7 minutes
- 2. remove, stir and add artichokes and all the seasonings, microwave for 3 more minutes
- 3. remove, stir and add both pkg's of cream cheese, microwave 3 more minutes
- 4. remove, stir and add the parmesan cheese microwave until completely melted (about 3-5 minutes)
- 5. *************************
- 6. Serve with any crusty bread toasted or not (whatever you prefer) or restaurant style tortilla chips.

- You'll need a 2-quart casserole dish (see below for the one I use) that will fit in your Instant Pot (I tested this in a 6 quart). Either make a sling out of foil or use a silicone sling to be able to easily remove your dish when it's finished cooking.
- In a blender, blend together the cottage cheese, Greek yogurt, mayo, garlic powder, onion powder, salt and black pepper until completely smooth.
- Add the blended mixture and all of the remaining ingredients (spinach, artichokes, cheeses) to your casserole dish and stir well until fully combined, then cover tightly with foil.
- Add 1 cup of water to your Instant Pot liner. Set your dish on top of your sling, then put them in your Instant Pot liner and set to manual for 9 minutes. When it's finished cooking, you can immediately release the pressure and serve!
