- Butter a baking sheet.
- Combine pecans, sugar, corn syrup, and salt in a glass 4-cup measuring cup.
- Heat in microwave for 3 1/2 minutes; stir and heat for 3 1/2 more minutes. Stir butter into pecan mixture and heat in microwave for 2 more minutes.
- Stir baking soda and vanilla extract into pecan mixture until foamy; pour onto the prepared baking sheet. Allow to cool completely before breaking brittle into pieces. Store in an airtight container.

MICROWAVE PEANUT BRITTLE
Microwave peanut brittle is an easy 15 minute candy perfect for the holidays. It's a family favorite recipe at every Christmas!

- In a glass 1.5 qt casserole or mixing bowl, stir the corn syrup and granulated sugar together and microwave for 3.5 minutes. Stir in the peanuts and microwave for 3 more minutes until light brown. Add the butter and vanilla to the mixture and stir until well combined. Microwave for an additional 1.5 minutes.
- You will need to work quickly for the next step, so be sure to have your buttered cookie sheet ready to go. Add the baking soda to the mixture and gently stir until light and foamy. Quickly pour the foamy mixture onto the greased cookie sheet.
- Do NOT use a spoon to spread the mixture around. Instead, gently rotate the pan to spread the mixture around until it is about 1/2 inch thick. Work quickly, because it will began hardening very fast.
- Let the peanut brittle cool for at least 1/2 hour or until it is hard and smooth to the touch. When it is cooled, break the candy into small pieces and store in an air-tight container.

Easy buttery cashew brittle made in the microwave in just about 10 minutes. Every time I make this it disappears very fast. Warning: once you start you can't stop.

- Lightly butter a baking sheet with 1 teaspoon butter.
- Mix cashews, sugar, and corn syrup in a medium microwave-safe bowl. Microwave on high for 4 minutes. Remove, stir, and microwave for another 3 minutes. Remove and add 1 tablespoon butter, vanilla extract, and butter flavoring; stir to combine. Microwave for 2 minutes.
- Remove from the microwave and add baking soda; stir and fold until mixture is fluffy. Work quickly and spread mixture evenly on the prepared baking sheet. Let it sit until completely cooled. Break into pieces and keep in a airtight bag or container.

- Butter a cookie sheet. Combine sugar and corn syrup in a 2 quart glass bowl and microwave on high 4 minutes. Stir in peanuts and microwave on high 3 1/2 minutes more, then stir in butter and vanilla and microwave for 1 1/2 minutes.

This is a really simple way of making nut brittle, without using a candy thermometer or doing any of the stage tests. A trick that I use is to line the cookie sheet with parchment paper so there's no sticky stuff to pry off and then wash up.

- Spray cookie sheet and metal spatula with the cooking spray.
- In a 2-quart microwavable glass measuring cup or bowl stir sugar, corn syrup and salt with a wooden spoon until mixed.
- Microwave on High (100%) 7 to 8 minutes or until syrup is pale yellow.
- (CANDY SYRUP IS VERY HOT. HANDLE CAREFULLY; DO NOT TOUCH HOT MIXTURE.) Stir in nuts.
- Microwave 1 to 2 minutes or until nuts are lightly browned.
- Immediately stir in margarine, vanilla and baking soda until foamy.
- Quickly pour onto prepared cookie sheet; spread evenly with spatula.
