CAFé DE OLLA



Café de Olla image

Café de Olla is a traditional Mexican coffee spiced with cinnamon, cloves, star anise and sweetened with piloncillo. Serve black or with milk.

8 cups water
4 ounces piloncillo ((or 1/2 cup dark brown sugar), plus more to taste*)
2 cinnamon sticks ((Mexican cinnamon sticks preferred))
2 whole cloves
1 star anise pod
9 tablespoons dark roast ground coffee

Steps:

  • In a medium olla or pot, add water, piloncillo, cinnamon sticks, cloves and star anise pod.
  • Place over medium-high heat and stir often until the piloncillo completely dissolves and the water comes to a boil.
  • Remove the pot from the heat. Add the ground coffee, stir to combine, and cover. Let the coffee steep for 6 minutes for regular strength coffee or 8 minutes for extra-strength strength coffee.
  • Pour the coffee through a fine mesh strainer or cheesecloth into a coffee mug and serve.
  • Enjoy as is or add some milk for a cafe con leche.

3/4 cup ground coffee (regular or decaffeinated)
2 teaspoons ground cinnamon
5 cups water
1/2 cup whole milk
1/2 cup heavy cream
1/3 cup chocolate syrup
2 tablespoons brown sugar
1 teaspoon vanilla extract
Garnish: whipped cream , cinnamon sticks, chocolate shavings

Steps:

  • Gather the ingredients.
  • Add the coffee grounds and cinnamon to the filter basket of your coffee pot. Then add the 5 cups of water to the pot and brew as you normally would .
  • While the coffee is brewing, bring the milk, heavy cream, chocolate syrup, and brown sugar to a gentle simmer in a small saucepan. Make sure to cook on low heat so you don't burn the mixture.
  • Remove from the heat and add the brewed coffee to the milk mixture. Whisk in the vanilla extract.
  • Divide the coffee among 4 cups and top with whipped cream and garnish with a sprinkle of cinnamon or chocolate shavings, and add a cinnamon stick, if desired. Enjoy immediately.

6 cups water
¼ cup brown sugar
1 (3 inch) cinnamon stick
1 whole clove
½ cup ground coffee beans
½ teaspoon vanilla
¼ cup chocolate syrup
1 cup whipped cream

Steps:

  • Bring the water, sugar, cinnamon, and clove to a boil in a large saucepan over high heat. Stir until the sugar has dissolved, then remove from the heat, stir in the coffee grounds, cover, and steep for 5 minutes. Stir in the vanilla and chocolate syrup, then strain through several layers of cheesecloth to remove the coffee grounds and spices. Serve with a dollop of whipped cream.

4 scoops of ground coffee beans, Colombian or other variety - a coffee scoop is equivalent to a rounded tablespoon
1 scoop (rounded tablespoon) cocoa powder
1/2 teaspoon ground cinnamon - eyeball it, plus a sprinkle for garnish
4 jiggers (1 ounce shots) coffee liqueur (recommended: Kahlua)
1 canister whipped cream with spray top

Steps:

  • Place coffee, cocoa and cinnamon in a filter for coffee brewing. Make 4 cups of brewed mocha-cinnamon coffee. Pour a shot of coffee liquor in the bottom of a coffee mug. Pour in a serving of brewed mocha-cinnamon Mexican coffee. Top off the mug with a generous swirl of whipped cream and garnish with another sprinkle of cinnamon. Repeat for desired number of mugfuls!

  • Frost rims of 2 cups with sugar. Pass it through the fire, gilding the edge little by little. Add the tequila and the coffee liqueur to them tilting the cup a little towards the fire so that the liqueur begins to flame. Dust with cinnamon.
