This low carb Mexican street cauliflower recipe is fast and addictive, with easy, grilled cauliflower topped with salty cheese and bright, zesty lime juice!

1 Large Head of Cauliflower
1 Tablespoon Mild Tasting Oil (see notes below)
1/4 Cup Mayonnaise
1 Teaspoon Chili Powder
1/2 Cup Cotija Cheese (crumbled)
1/3 Cup Fresh Cilantro
Lime (wedges)

Steps:

  • Preheat grill to medium.
  • Remove the leaves and the bottom of the stem, so your cauliflower head (1 large) is able to stand up on your cutting board.
  • Use a sharp knife to remove the rounded edges of the cauliflower on 2 sides, then cut the cauliflower into 4 thick cauliflower steaks.
  • Brush each side of the steaks with oil.
  • Cover and grill over direct heat for 5-6 minutes or until the cauliflower begins to char.
  • Flip, cover, and repeat on the other side.
  • Check the tenderness of the cauliflower with a fork. If you'd like the cauliflower to be softer, move it to indirect heat and continue to grill covered until it's soft to your liking. I usually cook over indirect heat for another 10 minutes.
  • Remove cauliflower from the grill brush the steaks with mayonnaise.
  • Sprinkle with chili powder (1 teaspoon), crumbled cotija (1/2 cup), and fresh cilantro (1/3 cup).
  • Squeeze lime juice over the top of each, and enjoy!

This Mexican Street Style Cauliflower is slathered with spicy mayo, cojita cheese and cilantro.

1 head of cauliflower
1/2 teaspoon salt
1/4 teaspoon ground black pepper
3 tablespoons mayonnaise
1/2 tablespoon sriracha
1/4 cup Cotija cheese (or crumbled feta)
1 teaspoon paprika
2 tablespoons cilantro (chopped)

Steps:

  • Preheat the oven to 400° F (205° C).
  • Cut cauliflower into bite-sized florets. Place cauliflower on a baking sheet with a silicon mat. Season with salt and pepper. Roast the cauliflower in the oven for 25 minutes, turning once.
  • Mix the mayonnaise and sriracha to form a spicy mayo.
  • When the cauliflower is done, transfer it to a bowl. Add half the spicy mayo and toss to coat. Transfer to a serving plate.
  • Top cauliflower with remaining spicy mayo. Crumble the cheese and sprinkle it over the top of the cauliflower. Sprinkle on the paprika and chopped cilantro. Spritz it with fresh lime juice.

Mexican Street Style Cauliflower is a low-carb alternative to elote. It's delicious, addictive and VERY easy to make this side dish when you start with a bag of frozen cauliflower.

16 ounces cauliflower florets (frozen or fresh; Do NOT defrost if using frozen)
1/4 cup Mayonnaise
1/4 cup Sour cream (or Greek yogurt)
1 Tablespoon Lime juice
2 Garlic cloves (pressed)
1/8 teaspoon Cayenne pepper
1/2 cup Feta cheese, crumbled (or Cotija cheese or Parmesan cheese)
Chopped cilantro or parsley (optional garnish)
Salt and pepper to taste

Steps:

  • Roast cauliflower in an air fryer or oven. If using frozen cauliflower DO NOT defrost first.
  • Preheat air fryer to 390 °F or oven to 450 °F.
  • Use hands to coat the nooks and crannies of the cauliflower florets with olive oil. Season with salt and pepper.
  • Cook for about 20 minutes shaking the air fryer basket or flipping on the sheet pan halfway through.
  • While the cauliflower is roasting, make the sauce. Combine mayonnaise, sour cream, lime juice, garlic and cayenne pepper in a small bowl.
  • Add cooked cauliflower to serving bowl and toss with sauce.
  • Fold in feta cheese.
  • Sprinkle with garnish, if using, and enjoy!

½ cup crumbled cotija cheese
2 tablespoons chopped fresh cilantro
1 small serrano pepper, finely chopped
