CREAMY MEXICAN TURKEY SOUP
Love this slightly creamy, delicious and flavorful soup to make with leftover turkey!

- In a large pot, heat the oil over medium-high heat. Add the vegetables and garlic and sauté for 5 minutes. Add the broth and bring to a boil. Reduce the heat to medium-low and simmer, covered, for about 10 minutes. Stir in the chiles.
- In a medium bowl, whisk together the milk, flour, salt, chili powder and cumin. Increase the heat to high and whisk the milk mixture into the soup. Stir until slightly thickened and bubbly, about five minutes. Reduce the heat to low. Add the turkey, cheese, corn and cilantro; stir until the cheese is melted and the soup is hot, 5 to 10 minutes.

- Brown the ground turkey and onions in a large skillet; drain the excess fat.
- **Quick tip: Take a potato masher and grind the meat while cooking to reduce size of chunks and to make more like minced taco meat.**
- Transfer the browned turkey and onions to a large slow cooker or a stockpot.
- Add all the beans, corn, all tomatoes, green chiles, taco seasoning, and ranch dressing mix.
- I like to drain my beans and corn to reduce sodium. If you want a little more flavor do not drain can vegtables.
- Add a can of water so the soup is not dry, it will reduce some.
- Cook in a slow cooker on low for 6 to 8 hours or simmer over low heat for 45 minutes to 1 hour in a stock pot on the stove.
- To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, green onions, black olives and jalapenos.

- In a large saucepan, cook and crumble beef with seasonings over medium-high heat until no longer pink, 5-7 minutes. - Heat oil in a 4 quart soup pot on medium high.
- Sautee onions and garlic until soft and transparent.
- Push it to the side and add ground turkey.
- Cook until nicely browned and mix with onion mixture.
- Add serrano peppers, cilantro, stewed tomatoes and corn, cook for 5 minutes, stirring frequently.
- Add mushrooms, chipotle chile powder, lime juice and chicken broth.

- In a large heavy bottomed pot or dutch oven, bring the chicken stock to a boil. Add the chicken breasts, cover and simmer over low heat until they’re tender and cooked through, about 25 minutes. Transfer the chicken breasts to a plate and shred the meat, skim the stock, and return chicken back to the stock.
- In a blender, combine the halved tomatillos, quartered onion, poblanos and jalapenos, garlic, chopped cilantro adding 1 cup water to get the motor going. Blend until smooth, scraping down sides if necessary.
- In a skillet, heat the oil and add 2/3 of the tomatillo puree ( reserving one third – leave in the blender) and cook over moderate heat, stirring occasionally, until the sauce turns a deep green, about 8-10 minutes.
- Pour the cooked tomatillo sauce into the chicken stock pot. Add the 3 cups of the hominy (reserving 1 cup) and bring to a gentle simmer over moderate heat. Season with salt, pepper, coriander and cumin, and cook just until heated through. If you cook this too long, it will begin to loose its vibrant color.
