AUTHENTIC MEXICAN MEATBALLS (ALBONDIGAS MEXICANAS)



Authentic Mexican Meatballs (Albondigas Mexicanas) image

1/2 lb ground beef
1/2 lb ground pork
1/4 onion (finely chopped)
2 cloves garlic (finely minced)
1/4 bunch fresh parsley (finely chopped)
1/4 cup white rice (partially cooked (per instructions below))
1 tsp ground cumin
1 tsp ground oregano
1 tsp ground paprika
salt and pepper (to taste)
5 roma tomatoes (roasted)
2 cloves garlic (roasted)
1/4 onion (roasted)
5 cups chicken broth
3 large potatoes (cut into cubes)
2 sticks celery (cut into small pieces)
1 tbsp oregano
1 tbsp paprika
1 tbsp ground cumin
salt and pepper (to taste)
1-2 chipotle peppers in adobo sauce (optional)

Steps:

  • Start by adding the 1/2 cup of white rice to a pan with 1/2 cup of water and let boil for 10 minutes to partially cook the rice. Let cool and set aside.
  • Add all of the meatball ingredients, including the rice, in a large bowl and mix well.
  • Once combined, form balls that are approximately 1 inch in diameter, and place on a baking sheet.
  • Bake at 400 degrees Fahrenheit for about 15 minutes or until sufficiently browned on the outside.
  • Separately, blend the ingredients for the salsa in a blender, and then saute the salsa with 1 tsp of olive oil over medium-high heat. Add the potatoes and let boil for approximately 5 minutes.
  • Add the celery and the cooked meatballs.
  • Add additional salt and pepper to taste and let simmer for approximately 20 minutes longer until the meatballs and potatoes are completely cooked through.
  • Accompany with rice, beans, and tortillas.

1 can of whole jalapeno
1 (12 ounce) package cheese, any
1 sausage
1 package Shake-n-Bake
1 cup Bisquick

Steps:

  • Drain and split jalepenos on one side.
  • Stuff with cheese of your choice; even cream cheese will work.
  • Mix 1 lb. of sausage with bisquick and remaining cheese.
  • Form into patties and roll them around the stuffed jalepenos, sealing up the ends.
  • Bake in oven at 400* for 20 minutes until crispy.
  • Let cool, and serve with sour cream or any other dip or dressing of your choice.

1 serving nonstick cooking spray
1 pound ground beef
1 cup chopped onion
¼ cup shredded Cheddar cheese
¼ cup crushed plain tortilla chips
¼ cup salsa
1 egg
1 (1.25 ounce) package taco seasoning mix

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a 9x13-inch glass baking dish with cooking spray.
  • Mix ground beef, onion, Cheddar cheese, tortilla chips, salsa, egg, and taco seasoning together in a bowl.
  • Form 1-inch balls from the mixture and place into the prepared dish so they aren't touching.
  • Bake in the preheated oven until browned and no longer pink in the centers, about 30 minutes. Let stand for 5 minutes and serve.

This recipe is from Maggie Hennessey's book A taste of West Virgina: A book of favorite recipes. So many people were requesting recipes for canning cherry tomatoes that when I found this I wanted to share it. Let me know how it comes out-I think it looks very tasty.

14 lbs small green cherry tomatoes
4 cloves garlic
4 stalks celery
4 hot red peppers
4 heads dill
1 quart water
1/2 cup pickling salt
2 quarts white vinegar

Steps:

  • Pack 3 1/2 pounds of cherry tomatoes in each of the clean, hot jars.
  • To each quart jar add a clove of garlic, a celery stalk, a hot red pepper, and a head of dill.
  • Combine water, pickling salt and vinegar.
  • Boil.
  • Fill jars to 1/2 inch head space from top.
  • Process 10 minutes in boiling water bath.
  • Makes 4 quarts.

  • Note: this batch made 18 meatballs but I only cooked off half of them, storing the other half in the fridge. So the ingredients amounts listed for the tomato sauce are enough for 9-10 meatballs. If you're cooking off the entire batch of meatballs simply double the ingredient amounts for the tomato sauce.
  • Start by roasting 3 tomatoes in the oven at 400F. (Normally they need about 20-30 minutes to fully roast, but I usually take them out when I need them because there is an extended simmer coming up.)
  • Saute a roughly chopped onion and 3 whole, peeled garlic cloves in a dollop of oil over medium heat. Cook until the onion is starting to brown.
  • Add the onion, garlic, and roasted tomatoes to a blender. Combine well. If you want a spicy version you can optionally add 3 chipotles in adobo. (I usually scrape out the seeds of the chipotles.)
