Coconut oil spray, for greasing
1 1/2 cups mashed ripe bananas
2 teaspoons lemon juice
3 cups all-purpose flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
2 cups plus 2 tablespoons sugar
3/4 cup unsalted butter, at room temperature
3 large eggs
2 teaspoons vanilla extract
1 1/2 cups buttermilk
300 grams good-quality white chocolate, melted
150 grams organic extra-virgin coconut oil
Pastry rocks, for dipping

Steps:

  • For the cake-sicles: Preheat the oven to 275 degrees F. Spray the silicone ice pop molds with a light spray of coconut oil.
  • In a small bowl, mix mashed bananas with the lemon juice. In a medium bowl, mix the flour, baking soda and salt. In the bowl of a stand mixer fitted with the paddle attachment, cream the sugar and butter until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla. Add in the flour mixture a little at a time, alternating with the buttermilk. Stir in the banana mixture. Pour the batter into the prepared molds, and place the wooden sticks in the center. Bake until a toothpick inserted in the center comes out clean, 30 minutes.
  • Place the pops on a cooling rack until completely cooled. Cover tightly, and then place in a refrigerator to chill until ready to use.
  • For the coating: Mix the melted white chocolate and the coconut oil together until completely incorporated. Place in a warmed steel cup. Dip each cake-sicle into the chocolate mixture, allowing the excess to drain off, then dip a portion of each cake-sicle into the pastry rocks and place on parchment paper to set. Chill until firm, then serve.

1 tablespoon instant coffee
3/8 cup water
4 cups all-purpose flour
1 1/2 cups cocoa powder
1/8 cup baking soda
1/8 cup baking powder
1 1/2 cups butter, room temperature
1 1/8 cups shortening, room temperature
5 1/4 cups sugar
3 cups sour cream
1/8 cup vanilla extract
1/8 cup salt
1 1/2 cups whole eggs, room temperature
3 5/8 cups banana puree

Steps:

  • Preheat oven to 350 degrees F.
  • Mix instant coffee with water set aside for later. Sift flour, cocoa powder, baking soda and baking powder together taking care that all the components are well combined and evenly distributed. In the bowl of a stand mixer, mix the butter and shortening with paddle attachment on 2nd speed until combined. Add sugar, sour cream, vanilla extract, coffee mixture, and salt starting on 1st seed and gradually moving to 2nd speed until light and fluffy (approximately 8 minutes). At 1 1/2 speed add the whole eggs, in small amounts, until smooth and fully incorporated. Add dry ingredients and banana puree in staggering steps to the mixer and blend until well combined.
  • Pour into greased sheet pans or 4 (4 by 13-inch round cake pans and bake for 30 to 45 minutes or until a toothpick inserted into the center of the cake comes out clean.

1 1/2 cups all-purpose flour
2/3 cup granulated sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 cups mashed bananas (about 2 big bananas)
1 large egg
8 tablespoons (1 stick) unsalted butter, melted
1/4 cup whole milk
1 (3.5-ounce) disc Mexican chocolate, chopped
Special equipment: 1 (12-cup) nonstick muffin tin with 12 paper cupcake liners

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, mix the flour, sugar, baking powder and salt.
  • In a separate mixing bowl, combine the mashed bananas, egg, melted butter and milk until incorporated.
  • Stir the banana mixture into the dry ingredients just until blended (but do not over-mix as it could result in a tough muffin). Stir in the chopped Mexican chocolate.
  • Divide the batter among the prepared muffin cups, filling each about 3/4 full.
  • Bake the muffins until the tops are pale golden and a tester inserted into the center comes out with some melted chocolate attached but no crumbs, about 30 minutes.
  • Transfer the muffins to rack to cool for 15 minutes. Then remove from the muffin tins.

1 package (14 ounces) banana quick bread and muffin mix
1/2 cup chopped walnuts
1/4 cup butter, cubed
3/4 cup packed brown sugar
2 tablespoons lemon juice
4 medium bananas, cut into 1/4-inch slices
2 cups sweetened shredded coconut

Steps:

  • Preheat oven to 375°. Prepare banana bread batter according to package directions; stir in walnuts., In a 10-in. ovenproof skillet, melt butter over medium heat; stir in brown sugar until dissolved. Add lemon juice; cook and stir until slightly thickened, 2-3 minutes longer. Remove from heat. Arrange bananas in a single layer over brown sugar mixture; sprinkle with coconut., Spoon prepared batter over coconut. Bake until dark golden and a toothpick inserted in center comes out clean, 35-40 minutes. Cool 5 minutes before inverting onto a serving plate. Serve warm.
