This muffin is very moist and fluffy with a good banana flavor.

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
2 eggs
1 cup white sugar
3 medium ripe bananas, mashed
⅓ cup oil
1 teaspoon vanilla extract
½ cup chocolate chips
½ cup yogurt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with paper liners.
  • Combine flour, baking powder, baking soda, and salt in a medium bowl.
  • Beat the eggs with an electric mixer until foamy. Add sugar; beat until fluffy. Continue beating while adding mashed bananas, oil, and vanilla extract. Add flour mixture in 2 batches, alternating with yogurt, beating batter briefly after each addition, and until creamy following last flour addition. Stir in chocolate chips. Fill the prepared muffin cups to the top with batter.
  • Bake in the preheated oven until tops spring back when lightly pressed, 22 to 25 minutes. Cool in the tin for 5 minutes. Transfer to a wire rack to cool completely.

1/2 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
2 large eggs
1-1/2 cups mashed ripe bananas (about 3 large)
3 teaspoons vanilla extract
2 cups all-purpose flour
3 teaspoons baking soda
1 cup chopped walnuts
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350°. Cream butter and sugars. Beat in eggs, bananas and vanilla. In another bowl, combine flour and baking soda; add to creamed mixture just until combined. Stir in walnuts and chocolate chips. Fill greased or paper-lined muffin cups two-thirds full. , Bake until a toothpick comes out clean, 20-25 minutes. Cool 5 minutes before removing from pans to wire racks.

⅓ cup oil
⅓ cup milk, or as needed
1 medium egg, beaten
1 ½ teaspoons vanilla extract

1 tablespoon baking powder
½ teaspoon salt
1 cup chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a muffin tin with 12 paper liners.
  • Combine mashed banana, oil, milk, egg, and vanilla extract in a medium bowl. Sift flour and cocoa powder into a large bowl. Add sugar, baking powder, and salt into the flour mixture; mix to combine. Add wet ingredients to dry ingredients, mixing until just combined. There is absolutely no need for a lot of sugar to make these muffins delicious. Because they have bananas and chocolate chips, I just added 1/2 cup of sugar, which turned out perfect!

3/4 cup cooked lentils (see note)
1/2 cup brown sugar
1/2 cup sugar
1/2 teaspoon salt (omit if using canned lentils)
1 teaspoon cinnamon
2 tablespoons unsweetened cocoa
1/2 teaspoon baking soda
1/8 teaspoon baking powder
3/4 cup flour
1 teaspoon vanilla extract
2 eggs
1/2 cup cooking oil
1/2 cup chocolate chips
1/2 chopped walnuts
1/4 cup confectioners' sugar

Steps:

  • Note on using lentils: If using canned lentils, drain first and omit salt; if using dry (my preference is dry red lentils) measure 1/3 cup rinsed lentils into saucepan, add 2/3 cup water and bring to boil; reduce heat and simmer 20 minutes (may need to add a small amount of water) cool and measure.
  • Mash lentils with a fork in mixing bowl.
  • Add eggs, oil, sugars, and vanilla extract to lentils.
  • Mix just to combine.
  • Mix flour, baking soda, baking powder, salt, cocoa and cinnamon in separate bowl.
  • Add dry mixture and blend until combined.
  • Fold in chocolate chips and walnuts.
  • Pour into greased muffin tins.
  • Bake at 350 degrees F for 20-25 minutes.
  • Let cool 10-15 minutes for easy turn out.
  • Dust tops with confectioners sugar.
