Steps:
- Preheat oven to 350F degrees.
- In a large bowl, combine beans, tomato sauce, onion, beer, molasses, mustard, jalapeno pepper, Worcestershire sauce and red pepper flakes; mix well.
- Transfer to a 1-quart casserole dish and bake 45-50 minutes, until most of the liquid is absorbed.
- Remove from oven; stir in cilantro and serve.
NEW MEXICAN BAKED BEANS
These beans use New Mexican chile powder, a dark red, smoky powder. It is available in Mexican markets. You can substitute a dark, rich chile powder, like the ancho chile powder that is available in some supermarkets. Adapted from www.fiery-foods.com

Steps:
- Saute bacon in skillet until just brown and slightly crisp.
- Remove and set aside on paper towel to drain.
- Remove all but about 1 tablespoon drippings.
- Add onion and cook over medium heat until softened, about 5 minutes.
- Add garlic and cook 1 minute longer.
- Place beans in a 2 1/2 to 3 quart baking dish with a lid.
- Add the onions and garlic.
- Stir in the chile powder, barbecue sauce, beer, brown sugar and mustard.
- Sprinkle with bacon.
- Cover and bake in a 325F degree oven for 45 minutes.
- Uncover and cook about 15 minutes longer.

PINTO BEANS WITH MEXICAN-STYLE SEASONINGS
Pinto beans are simmered with onion, tomatoes, chili powder, cumin and garlic. I love making these beans just because they make the whole house smell so good, and the longer they simmer the better they taste. You could add 1/2 can of beer to make 'borracho' beans. I personally taste-test throughout the entire cooking process and add extra seasoning as I feel it needs it. These beans could simmer all day long; just make sure they have plenty of water to keep the beans covered.

- Place pinto beans into a large pot and pour in enough water to cover by 2 to 3 inches. Let beans soak overnight.
- Drain beans, return to pot, and pour in fresh water to cover; add diced tomatoes, bacon, onion, chili powder, cumin, and garlic powder. Bring to a boil, reduce heat to low, and simmer for 3 hours.
- Stir cilantro and salt into bean mixture; simmer until beans are soft, about 1 more hour.

- Heat oven to 180C/160C fan/gas 4. Heat a non-stick frying pan, add the black beans and fajita spice mix, stir together and cook for 1-2 mins. Add the tomatoes and simmer over a low heat for 10 mins.
- Cut the tortillas in half. Lightly grease a 2-litre baking dish. Spread a third of the bean mixture over the base of the dish, followed by 3 tbsp of the cheese and a layer of tortillas. Repeat the process, finishing with a tortilla layer on top. Sprinkle over the remaining cheese. Bake for 15 mins until golden.

SLOW-COOKER BAKED BEANS WITH CHORIZO AND LIME
Beans stewed with pork, tomato and something sweet is a traditional side dish at potlucks. This easy slow-cooker version is uncommonly kicky and bright, flavored with spiced Mexican-style chorizo, cilantro and lots of lime juice. Use cooked, smoked or cured chorizo, but don't use dry-cured Spanish-style chorizo, which is a different kind of sausage altogether. There's flexibility built into this recipe: If you like slightly sweet baked beans, use the larger amount of sugar. If you prefer a result that's barely sweet, use the smaller amount. Likewise, the lime juice can be assertive or gentle, so use the larger or smaller amount to your taste. You may be tempted to add more liquid to the slow cooker, but resist the urge. The onion and sausage release liquid when cooking, so if you add more you will end up with bean soup instead of baked beans.

- In a 6- to 8-quart slow cooker, combine the soaked beans, chorizo, onion, garlic, chicken broth, tomato purée, sugar, butter, tomato paste, onion and garlic powders, red-pepper flakes, cumin and paprika. Season with 1 1/2 teaspoons salt (or 2 1/2 teaspoons if using unsalted stock) and a generous amount of black pepper. Using a spatula, stir well to combine, then smooth the top of the mixture to submerge as many beans as possible. (It's OK if some poke out of the liquid.) Cover and cook on high until the beans are very tender, about 6 hours.
- Stir in the lime juice and cilantro. Taste, and add more salt or pepper if desired. Serve with hot sauce.

- Heat a glug of oil in a saucepan over a medium heat on the hob or, if you’re cooking these over a fire, add the oil to a billycan and put over the fire or on your barbecue – either hung from a hook or directly onto a rack over the coals.
- Add the onion, garlic, cinnamon, cumin, coriander and chipotle paste, then fry for 10 minutes until soft and fragrant.
- Stir everything together, then add the chopped tomatoes and molasses or treacle. Season well and simmer, covered, for 20 minutes before adding the beans and simmering for a further 10 minutes or so, stirring occasionally.

- 2. Having soaked overnight, drain the beans and place in a large pan. Cover with water and bring to the boil before reducing the heat to a low simmer. Allow the beans to simmer for about an hour or until tender. Drain the beans and set aside.
- 3. Place a large, deep pan over a medium heat with a lug of oil and add in the onion, fry the onion for 3 minutes until starting to colour and then add in the minced garlic and Cascabel chilli and cook for a further 2 minutes, stirring frequently to prevent the onions from burning.

Add the ground spices to the onions and cook off for about a minute before stirring in the tomato concentrate, tinned tomatoes, vinegar and 500ml water, giving the mixture a good stir, breaking up the tomatoes as you do. Reduce the heat to a low simmer and add in the beans. Allow to gently blip away for an hour until the sauce has thickened, the beans are soft and the tomatoes have completely broken down. Squeeze in the juice of 1 lime, and stir in the chopped Coriander. Season to taste.
