These are my favorite holiday bars! Make using your favorite brand of gluten-free flour for a treat that everyone can enjoy.

CRUST
2 c flour
1/2 c granulated sugar
1 c butter
FILLING
10 oz jar maraschino cherries
1 c pecans
3 eggs
1 c granulated sugar
1/4 c flour
1/2 tsp baking powder
1/2 tsp salt
3/4 can(s) coconut
GLAZE
1/4 c butter
1/4 c cherry juice
1 3/4 c powdered sugar

Steps:

  • 1. Preheat oven to 350º. In a food processor, process the sugar, flour, and butter until crumbly, like course sand. Press evenly into a 9"X13" pan. Bake for 12 minutes.
  • 2. While crust is baking, prepare filling. Drain the juice from the cherries (reserving 1/4 cup for glaze) and coursely chop. Chop the pecans. Mix the eggs, sugar, flour, baking powder, and salt. Stir in the cherries, pecans, and coconut until well mixed and pour over baked crust. Bake an additional 20-25 minutes at 350º until the edges are turning golden brown.
  • 3. While the bars are baking, prepare the glaze. Melt the butter and mix in a medium sized bowl with the cherry juice and the powdered sugar. Drizzle glaze evenly over bars while still warm.
  • 4. Cut into bars approximately 1" X 2" . Makes about 48 bars.

1 C sugar
1 C butter, softened
1 egg
1 tsp almond extract
2 C flour
1/4 tsp salt
2/3 C candied cherries (found on the baking aisle)
1 C red and green m and ms
GLAZE:
1 C powdered sugar
1/4 tsp almond extract
5-6 Tb warm water
dash salt

Steps:

  • 1. Preheat your oven to 350 degrees.
  • 2. Place the butter and sugar into your stand mixer or large mixing bowl. Cream together for 1-2 minutes or until light and fluffy.
  • 3. Add the egg and mix for an additional 2 minutes.
  • 4. Add the almond extract and mix just until combined.
  • 5. In a separate bowl toss together the flour and salt. Add it to the creamed mixture and mix just until combined.
  • 6. Chop the candied cherries into small pieces. Add them and the m and m candies to the mixing bowl and mix just until combined. Your mixer will chop up the chocolate just a bit for you (which is a good thing!) but be sure not to let the mixer run too long. You still want the m and ms to be fairly whole.
  • 7. Spray a 9x13 pan with cooking spray and press the dough out evenly into it.
  • 8. Bake for 17 minutes or until a toothpick inserted into the center comes out clean.
  • 9. Allow the bars to cool completely (should take about an hour).
  • 10. Make the glaze by whisking the powdered sugar, almond extract and about 3 Tb warm water together. Add more water as needed. Drizzle over the cooled bars. Allow the glaze to set up and then cut into bars.

1 3/4 cups sugar
1 cup margarine
1 tsp vanilla
4 eggs
3 cups all purpose flour
1 1/2 tsp baking powder
1 can cherry pie filling
Glaze:
1 cup powdered sugar
1-2 Tbsp milk
1/2 tsp vanilla

Steps:

  • Cream the sugar, margarine and vanilla until light and fluffy. Add the eggs, one at a time, beating well after each egg. Sift together the flour and baking powder and add to wet mixture. Mix well.
  • Spread 2/3 batter on greased cookie sheet. Spoon on can of cherry pie filling. Top with remaining batter, swirling the batter some.
  • Bake at 350 degrees F for 25-35 minutes. After cooled, drizzle glaze over entire dessert.

These are an old childhood favorite of mine. I had these each holiday, I think my aunt made them. They look festive too.

1 cup sugar
1 cup softened butter
1/2 teaspoon almond extract
1 egg
2 cups flour
3/4 cup coarsely chopped candied red cherries
1/4 teaspoon salt
1/3 cup coarsely chopped green candy covered plain chocolate candies
1 cup powdered sugar
5 -6 teaspoons warm water

Steps:

  • Heat oven to 300.
  • Mix sugar, butter, almond extreact and egg in a large bowl until well blended.
  • Stir in flour, 1/2 cup cherries, and salt.
  • Spread in ungreased 15 1/2 x 10 jelly roll pan.
  • Sprinkle on top the remaining cherries and the candies; press lightly.
  • Bake until edges are very light brown, 30 to 35 minutes.
  • Cool completely.
  • Make glaze by mixing powdered sugar and water until smooth and of desired consistency.
  • Drizzle squares with glaze.

  • Preheat the oven to 350 degrees F. Lightly grease an 8x8-inch pan with cooking spray, line with parchment paper so that you have some over hanging two sides, then lightly grease again. Set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment or a large mixing bowl, beat the butter and sugar at medium speed until light and creamy, about 2 minutes. Add the eggs one at a time, beating between each addition, then beat in the vanilla extract. Sprinkle the baking powder and salt over the top than mix to combine. Reduce the mixer speed to low and, with the mixer running, slowly add in the flour, mixing just until it disappears. Stop to scrape down the bowl as needed to make sure the ingredients are evenly blended. The dough will be very moist and sticky.
  • Reserve 1/2 cup of the dough for the topping, then scrape the remaining dough into the bottom of the prepared dish. With a knife, the back of a spoon, or an offset spatula, spread the dough into an even layer, smoothing it all the way into the corners. The layer will seem thin, but it will rise and thicken as it bakes. Spoon the cooled pie filling over the top, spreading it into an even layer. Mix the sliced almonds into the reserved dough, then drop it by small spoonfuls over the top. Some of the cherry pie filling will be showing through.
  • Bake for 50 to 55 minutes, until lightly golden on top and set. Place the pan on a wire rack and let cool completely. To remove the bars from the pan, use a dull knife to loosen the sides, then gently lift them out using the overhanging parchment paper like handles.
