5 tablespoons butter, softened
1/3 cup brown sugar, packed
1 cup flour
1/2 cup sugar
1 (8 ounce) packet cream cheese, softened
1 egg
2 tablespoons milk
1 tablespoon lemon juice
1/2 teaspoon vanilla

Steps:

  • Heat oven to 350.
  • In a medium bowl blend thoroughly butter, brown sugar and flour with a fork until mixture resembles coarse crumbs.
  • Put 1 cup of the mixture aside for topping.
  • Press remaining mixture into an 8x8x2 inch baking dish sprayed lightly with cooking spray; bake for 15 minutes.
  • In another bowl combine sugar and cream cheese, mixing until smooth.
  • Thoroughly beat in egg, milk, lemon juice and vanilla.
  • Spread over the baked crust and sprinkle with remaining brown sugar mixture.
  • Bake for 25 minutes.
  • Let cool, then chill for at least 1 hour.
  • Cut into 16 squares; serve.

So easy, so delicious... so say hello to the holiday season with these fabulous cookie bars. Top them off with some colored sugar and enjoy. You won't believe how easy they are to make. I don't care for nuts, so I omit them when I make them, but have included walnuts and pecans when giving them as a treat and gotten rave reviews!

1 cup all-purpose flour
1/3 cup unsalted butter, softened
1/2 cup light brown sugar, firmly packed
1/2 cup nuts, any kind chopped and toasted
1 (8 ounce) package cream cheese, at room temperature
1/4 cup sugar
1 egg, at room temperature
2 tablespoons milk
2 tablespoons fresh lemon juice
1/2 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees F.
  • Line an 8 by 8-inch square baking pan with parchment paper. Let parchment come up over the sides of the pan to use as "handles" when unmolding after baking.
  • In a mixer bowl, combine flour, butter, and brown sugar. Blend at low speed until incorporated and mixture is like sand, about 2 to 3 minutes. Stir in nuts. Reserve 1 cup of mixture for topping.
  • With your fingers, press remaining mixture into pan. Bake on the middle rack of the oven until crust is set and golden brown, about 8 to 10 minutes. Let cool on a rack while assembling the filling.
  • In a clean mixer bowl, combine cream cheese and sugar. Blend until smooth, then add the remaining filling ingredients, beating until smooth.
  • Spread evenly over baked crust. Sprinkle the reserve crust mixture over filling.
  • Bake until top is golden brown and filling is set, about 25 to 30 minutes. Let cool completely on a rack, then use parchment "handles" to remove from pan in 1 piece. Cut into bars or squares and top with colored sugar sprinkles.

1 ¼ cups white sugar
1 (8 ounce) package cream cheese, at room temperature
½ cup unsalted butter, melted
2 large eggs
2 teaspoons baking powder
1 teaspoon vanilla extract
½ teaspoon salt
¼ cup sifted powdered sugar, or to taste

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Combine flour, sugar, cream cheese, butter, eggs, baking powder, vanilla, and salt in a bowl until a dough forms.
  • Drop rounded tablespoons of dough 2 inches apart onto cookie sheets.
  • Bake in the preheated oven until bottoms are very lightly golden brown and tops are just about to turn color, 10 to 14 minutes. Let cool for at least 10 minutes. Sprinkle with powdered sugar.

1 1/2 cups oats
3/4 cup firmly packed brown sugar, plus
1 tablespoon firmly packed brown sugar
1 cup butter or 1 cup margarine, softened
1 (8 ounce) package cream cheese
1 (14 ounce) can sweetened condensed milk
1/4 cup lemon juice
2 tablespoons cornstarch
1 (16 ounce) can whole berry cranberry sauce

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, combine flour, oats, 3/4 cup sugar and butter; mix until crumbly.
  • Reserve 1 1/2 cups crumb mixture.
  • Press remaining crumbs firmly into the bottom of a greased 13 x 9 pan.

8 ounces cream cheese, room temperature
1/2 cup butter, room temperature
1 1/4 cups granulated sugar
2 eggs
1 teaspoon vanilla extract
2 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
5 drops red and green food coloring (or as much as need for desired color)
1/2 teaspoon peppermint extract
2 tablespoons powdered sugar (optional)

Steps:

  • Preheat oven to 350°F.
  • Line 2 baking sheets with parchment paper or silicone mats.
  • Beat cream cheese and butter together at high speed until fluffy and smooth; 1-2 minutes.
  • Add sugar to the butter mixture and beat until fully incorporated and fluffy; 1-2 minutes. Beat in the eggs and vanilla; 1 minute.
  • In a separate, medium-sized bowl, whisk together the flour, baking powder and salt. Gradually add the dry ingredients to the butter mixture and stir just until incorporated. Do not over-mix.
  • Separate the dough into three small bowls. Refrigerate for 15 minutes.
  • Once chilled, add in food coloring and incorporate into the dough until your desired color is reached.
  • Add the peppermint extract to the dough you'll be adding the green food coloring to. Dough will still be sticky, but easier to work with! If you find it's hard to work with, put back in the refrigerator for a few minutes.
  • To create a cookie, take 1/2 tbsp of each color dough into your hands and roll together between the palms of your hands to create the marbling effect of your choice. Be careful to not over incorporate to avoid mixing the colors too much. Repeat for the rest of the dough and place on prepared baking sheets.
  • Bake for 10-11 minutes. Cookies should be light in color, not browned, and just starting to brown on the bottom. *Length of baking time may vary from oven to oven.
  • Cool cookies on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  • Optional: Dust with powdered sugar!
  • NOTES:.
  • Store in a tightly sealed container for up to a week, or in the freezer for up to 3 months.
  • The vanilla smooths out the flavor, but for a more tart, cheesey flavor, add a teaspoon of lemon juice or no extracts at all. The peppermint can also be left out or replaced.
  • Do not overbake. This can cause the cookies to come out more dry and biscuit like.
