MELTING SWEET POTATOES

Melting Sweet Potatoes image

Meet your new favorite one-pan side dish for Thanksgiving and beyond, thanks to the perfect, melt-in-your-mouth texture and overall ease of this sweet potato creation. Simply brown thick slices in a skillet with butter, then finish in the oven to create a syrupy glaze flavored with maple and thyme. Top with toasty marshmallows for a nod to the holiday classic.

Time 40m

Yield 4 servings

Number Of Ingredients 9

4 tablespoons unsalted butter
2 tablespoons olive oil
4 medium sweet potatoes (about 1 1/2 pounds), peeled, ends trimmed and sliced into 3/4-inch-thick rounds
Kosher salt and freshly ground black pepper
1/2 cup low-sodium chicken or vegetable broth
2 tablespoons maple syrup
1/4 teaspoon crushed red pepper flakes
6 sprigs fresh thyme
10 large marshmallows, cut in half crosswise

Steps:

  • Put the racks in the top and center positions and preheat the oven to 400 degrees F.
  • Heat the butter and olive oil in a large cast-iron or ovenproof skillet over medium-high heat. Add the potatoes in a single layer, then sprinkle with a good pinch of salt and several grinds of black pepper. Cook until the first side is golden brown, about 4 minutes.
  • Meanwhile, whisk the broth, maple syrup, pepper flakes and 1/4 teaspoon salt in a small liquid measuring cup until combined. Flip the potatoes carefully with tongs, then pour the broth mixture over and top with the fresh thyme.
  • Transfer the skillet to the oven and bake on the center rack until the potatoes are very tender and the broth mixture has reduced slightly, 20 to 25 minutes.
  • Remove the skillet from the oven and preheat the broiler to high. Top each piece of potato with a marshmallow half, cut-side down. Broil on the top rack until the marshmallows are puffed and lightly toasted, about 1 minute. Watch closely to prevent burning.

Time 1h

Yield 4 servings

Number Of Ingredients 7

4 tablespoons unsalted butter, cut into pieces
2 teaspoons chopped fresh rosemary
1/4 teaspoon crushed red pepper flakes
2 pounds Yukon gold potatoes, sliced 1 inch thick
Kosher salt and freshly ground black pepper
1 1/2 cups low-sodium chicken broth
4 cloves garlic, smashed

Steps:

  • Preheat the oven to 475 degrees F.
  • Put the butter, rosemary and red pepper flakes in a large microwave-safe bowl. Microwave in 30-second intervals until the butter is melted, about 1 minute. Add the potatoes, 1 1/2 teaspoons salt and a generous amount of pepper and toss together.
  • Put the potatoes in a 9-by-13-inch metal baking dish in a single layer (a glass baking dish should not be used at this temperature). Bake until the potatoes are a deep golden brown on the bottom, about 15 minutes. Flip and continue to bake until a deep golden brown on the second side, another 15 minutes. Add the chicken broth and garlic and continue to bake until the potatoes are soft and the liquid is almost completely reduced, about 15 minutes more. Transfer the potatoes to a serving platter.
