4 egg whites
8 cups confectioners' sugar, or as needed
¼ cup lemon juice, or as needed
24 sugar cookies
24 large marshmallows
1 (.75 ounce) tube black decorating gel
1 (.75 ounce) tube orange decorating gel
75 silver nonpareils, or as desired
1 (.75 ounce) tube red decorating gel
1 (.75 ounce) tube green decorating gel

Steps:

  • Beat egg whites lightly in a large bowl using an electric mixer until frothy. Slowly beat enough confectioners' sugar into egg whites to make icing that will hold shape; blend in lemon juice until desired consistency is reached.
  • Arrange cookies about 1-inch apart on a large sheet of waxed paper. Spread icing onto each cookie, allowing icing to drip over edges to look like melting snow.
  • Grease a microwave-safe plate. Place 1 marshmallow onto plate.
  • Microwave marshmallow until it starts to puff up, 20 to 30 seconds. Immediately place marshmallow on the edge of 1 cookie while the icing is still wet to look like a melted snowman. Repeat with remaining marshmallows and iced cookies.
  • Decorate 'melted snowmen' by piping 'twig-like arms' using black decorating gel on the icing. Make 'coal eyes' and a 'mouth' on the marshmallow using black decorating gel. Make a 'carrot nose' under the 'coal eyes' using orange decorating gel. Make 'coat buttons' by arranging silver nonpareils down the middle of the icing. Make 'scarves' or 'bow-ties' using red decorating gel or green decorating gel.
  • Allow cookies to fully dry before removing from waxed paper, at least 1 hour.

1 pouch Betty Crocker™ Sugar Cookie Mix
1 pouch each Betty Crocker™ Cookie Icing in white, red, blue, and green
1 tube Betty Crocker™ black Decorating Gel
1 pouch Betty Crocker™ Candy Shop decors rainbow chips
1 bottle Betty Crocker™ Chocolate Sprinkles
12 marshmallows

Steps:

  • Follow baking directions on sugar cookie pouch, dividing dough evenly into 12 round cookies.
  • On cooled cookies, draw a "snow puddle" with Betty Crocker™ White Cookie Icing. TIP: Draw the outline of the puddle, then go back and fill in the shape.
  • While the icing is still wet, immediately place a marshmallow to one side of the cookie.
  • MAKE THE ARMS: Once the icing and marshmallow have set, pipe two "branches" onto each cookie using black gel. Add fingers with chocolate sprinkles.
  • MAKE THE FACE: Using a small dot of white cookie icing, stick two "coal" eyes and a nose onto the marshmallow with Rainbow Chips. Pipe a small dot for the mouth with black gel.
  • MAKE THE SCARF AND BUTTONS: Using blue, red, or green cookie icing; carefully draw scarves around the base of the marshmallow. Using a small dot of white cookie icing, stick three "coal" buttons beneath the scarf with Rainbow Chips.
  • Allow cookies to set for at least one hour before serving.

200g fondant icing sugar
6 white marshmallows
6 large cookies
24 mini chocolate beans
6 pretzel sticks
tube black writing icing

Steps:

  • Put the icing sugar into a bowl and add cold water a teaspoon at a time until the mixture is runny but thick enough to coat a spoon.
  • Ask an adult to snip the marshmallows in half using wetted scissors.
  • Spoon a little icing onto each cookie and attach half a marshmallow. Using a little icing, stick the other half on top at an angle. Drizzle a little more icing onto the cookie to make melting snow.
  • Break the pretzel sticks in half and place on the cookie for arms. Stick orange chocolate beans on for the noses. Stick three chocolate beans on each cookie to represent buttons.
  • Using the writing icing, pipe small blobs for the eyes and mouth. Leave to set.

1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
1/2 cup butter, softened
1 egg
1 package (1 lb) vanilla-flavored candy coating (almond bark)
Black confetti candy sprinkles
Orange candy sprinkles
Betty Crocker™ Decorating Cookie Icing chocolate icing
Betty Crocker™ Decorating Decors snowflakes

Steps:

  • Heat oven to 375°F. In medium bowl, stir together cookie mix, butter and egg until soft dough forms.
  • Roll half the dough into walnut-size balls, and then flatten slightly on a parchment-lined or ungreased cookie sheet. Roll remaining dough into marble-size balls, and place on cookie sheet; do not flatten these.
  • Bake 7 to 9 minutes or until edges are lightly golden brown. Cool about 5 minutes or until cookies are firm enough to be transferred to cooling rack. Cool completely before frosting.
  • In large microwavable bowl, microwave candy coating at 30-second intervals until it can be stirred smooth. Cover work surface with waxed or parchment paper.
  • Place a dot of melted coating on bottom of a small cookie and place it toward one edge of a larger cookie. Spoon coating over entire cookie, allowing some to spill over edge of bottom cookie.
  • Place two black confetti pieces on small cookie for eyes, and an orange candy sprinkle in center for a carrot nose. Place three black confetti sprinkle "buttons" on the bottom cookie. Alternatively, you can decorate one large cookie in the same manner, to represent a completely melted snowman.
  • Use the cookie icing to draw on arms. Sprinkle with snowflakes; allow to dry completely.
  • Store cookies in airtight container.

Get little ones to help decorate these festive snowman biscuits. You can bake and freeze the biscuits ahead, then bring them out for a winter's day activity

125g butter, softened
125g golden caster sugar
1 egg, beaten
1 tsp vanilla extract
250g plain flour, plus extra for dusting
400g white fondant icing
icing sugar, for dusting
100g pack mixed red, yellow, black and blue ready-to-roll icing
tube white icing, for sticking
tube black icing

Steps:

  • Heat the oven to 190C/170C fan/gas 5. Cream the butter and sugar until pale and fluffy, then beat in the egg and vanilla. Stir in the flour and mix to a fairly soft dough. Tip onto a lightly floured surface and knead gently. Put the dough on a plate, cover and chill for at least 2 hrs.
  • On a lightly floured surface, roll out the dough to a thickness of around 0.5cm. Use a cookie cutter or water glass to stamp out 7cm rounds. Re-roll the trimmings and repeat.
  • Transfer the biscuits to two lined baking trays and bake for 8-14 mins until the edges turn lightly golden in colour. Leave to cool.
  • To decorate, roll out the white fondant icing on a surface lightly dusted with icing sugar. Stamp out 7cm circles using the same cookie cutter or glass as before, then use a dab of the white tube of icing to stick a fondant round on each biscuit.
  • Knead together some of the yellow and blue icing to make green icing, then do the same with the red and yellow icing to make orange (alternatively, buy separate packs of each colour). Roll out one icing colour at a time. Stamp out a 7cm circle of icing, cut in half and stick on for a hat. Cut a strip of another colour and make some markings to make it look like the elasticated band of a hat, then trim to fit and stick on. Repeat with all the biscuits, mixing and matching colours.
  • Decorate the hats with icing spots and stripes, if you like. Roll out balls of coloured icing, poke holes all over with a cocktail stick and stick on as pom poms. Mould lumpy balls of the orange icing for noses and roll out balls of the black icing for eyes. Press down to flatten, then stick on with white icing. Use the tube of black icing to pipe rows of dots for the smiles. Leave to set. Will keep for up to five days in an airtight container.
