This tangy, creamy dip tastes just like Buffalo chicken wings. It's best served hot with crackers and celery sticks. Everyone loves the results!

2 (10 ounce) cans chunk chicken, drained
2 (8 ounce) packages cream cheese, softened
1 cup Ranch dressing
¾ cup pepper sauce (such as Frank's Red Hot®)
1 ½ cups shredded Cheddar cheese
1 bunch celery, cleaned and cut into 4 inch pieces
1 (8 ounce) box chicken-flavored crackers

Steps:

  • Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.

8 drumsticks
2 tablespoons vegetable oil
1 teaspoon chili powder
1 teaspoon garlic powder
Salt and freshly ground black pepper
1/4 cup (1/2 stick) unsalted butter, melted
1/4 cup hot sauce
1 tablespoon BBQ sauce

Steps:

  • For the chicken: Preheat the oven to 375 degrees F. Rinse and pat dry the drumsticks. Mix the oil, chili powder, garlic powder, and some salt and pepper in a medium bowl or resealable plastic bag. Toss the drumsticks in the seasoned oil to coat well. Bake the drumsticks on a wire rack placed on a baking sheet (so air circulates around chicken) until very tender and the skin is crisp, 50 minutes.
  • For the spicy sauce: Mix together the butter, hot sauce and BBQ sauce in a large bowl.
  • Toss the drumsticks in the spicy sauce until well coated. Place the drumsticks back on the rack and continue baking an additional 10 to 15 minutes.
  • Cook's Note: For an alternate milder sauce, whisk together 1 tablespoon maple syrup, 1 teaspoon hot sauce, juice and zest of 1 lime, 1 clove of garlic, minced and some salt and pepper.

MELISSA'S CHICKEN DIP

As you can see they don't come any easier than this and most cooks have all the ingredients in their pantry or refrigerator at all times. I call it Melissa's Chicken Dip because I got it from my friend, Melissa. I don't really know the proper name. The best thing about this recipe is that it can be changed around and made into a chicken cheese ball by cutting the sour cream or mayo in half, refrigerating until set and formed into a ball and rolled in finely ground pecans, paprika, crushed red peppers, etc. Anytime I take this to an occasion, I end up having to repeat the recipe several times. The cook time listed is the time for refrigeration.

2 pkg cream cheese, softened (8 oz each)
1 c bleu cheese dressing
1 c Frank's Original Red Hot Sauce
2 c Mexican blend cheeses
1 bunch celery, washed and cut into 4-inch sticks
1/2 lb baby carrots
1 box Chicken in a Biskit crackers (8 oz)

Steps:

  • 1. Place chicken and hot sauce in a saucepan or skillet and heat over medium heat until hot.
  • 2. Stir in cream cheese and bleu cheese dressing. Cook, stirring until well-blended and warm.
  • 3. Mix in half of the shredded cheeses and transfer the mixture to a Crock Pot/slow cooker.
  • 4. Sprinkle remaining cheeses over top.
  • 5. Cover and cook on low setting until hot and bubbly.
  • 6. Serve with celery sticks, baby carrots, and crackers.
