MEDITERRANEAN STRATA WITH GOAT CHEESE

A staple for breakfast or brunch, stratas are comforting, warming, and satisfying. The egg-soaked bread and vegetables are topped with rich, creamy goat cheese, and then baked, creating a delicious mix of crispy edges and a tender interior. Here we've used red onion, cremini mushrooms, roasted red peppers, and sun-dried tomatoes to adds some additional oomph to this strata. The mushrooms and onion get sautéed in butter first to add an extra layer of flavor and remove some of the liquid so the strata doesn't get soggy. If you like, you can prepare the strata through Step 3 the night before, cover, and refrigerate. When you're ready to cook it, uncover the casserole dish, bring it to room temperature, and bake as directed.

1 Tbsp Unsalted butter
1 large Uncooked red onion(s) chopped
8 oz Cremini mushroom(s) thinly sliced
1 tsp Kosher salt
0.125 tsp Black pepper
1 tsp Italian seasoning salt-free
0.5 cup(s) Roasted red peppers (packed in water) rinsed, drained, coarsely chopped
0.5 cup(s) Drained sun-dried tomatoes in oil coarsely chopped
10 slice(s) Reduced-calorie wheat bread crusts removed, cubed (about 3 1/2 cups)
2 oz Semisoft goat cheese crumbled
3 cup(s) Regular liquid egg substitute
2 spray(s) Cooking spray

Steps:

  • Preheat oven to 350°F.
  • Melt butter in large nonstick skillet over medium heat. Add onion, mushrooms, salt, and black pepper; cook, stirring frequently, until water from mushrooms is released and evaporates and mushrooms begin to brown, 15−20 minutes. Remove skillet from heat; stir in Italian seasoning, roasted peppers, and tomatoes. Add bread cubes and toss gently to combine
  • Spray 1½-quart casserole dish with nonstick spray. Spoon in bread mixture and sprinkle with goat cheese. Pour egg substitute over top.
  • Bake, uncovered, until center is set, about 1 hour. Let stand 10 minutes; cut into 6 pieces and serve.
  • Serving size: ⅙ of strata

Sun-dried tomatoes are a favorite of ours, so this dip was a must. You can buy herb-flavored goat cheese and experiment with different flavors. 4 sun-dried tomatoes, packed without oil
1/4 cup water
1/4 cup goat cheese (2 ounce package)
3 tablespoons nonfat sour cream
1/8 teaspoon kosher sea salt
6 pitted kalamata olives, finely chopped

Steps:

  • Combine tomatoes and water in a microwave-safe bowl. Microwave on HIGH one (1) minute or until water boils. Remove from microwave;' cover with plastic wrap and let stand 10 minutes to soften.
  • Meanwhile, place cheese in a microwave-safe bowl; microwave on HIGH 15 seconds or until soft. Add sour cream and salt; stir until well blended. Fold in olives.
  • Drain tomatoes; finely chop, and fold gently into goat cheese mixture.
  • Serve immediately, or cover and chill until ready to serve.

Southern Mediterranean Goat Cheese Spread or Dip image

This is my own creation inspired by, if not entirely true to, the cuisines of the Southern Mediterranean which I love. Use it as a dip, spread it on any type of toasted bread. I've used it on grilled steak to good advantage. You'll get 16 servings of 1 Tbsp each.

Number Of Ingredients 8

6 ounces goat cheese (chevre)
3 tablespoons whipping cream
1/4 cup mixed fresh herbs (parsley, thyme, mint , cilantro leaves,snipped, 1/4 cup in total NOT each. * Please see below)
1 small shallot, minced
2 teaspoons finely shredded fresh lemon peel
1 garlic clove, minced
sea salt
fresh ground black pepper

Steps:

  • In a medium bowl crumble goat cheese. Meanwhile in a small chilled bowl, whip cream until thickened only and stir into goat cheese.
  • Stir in herbs, shallot, lemon peel, and garlic. Season to taste with sea salt and pepper. Thin with additional cream, if desired. Serve on toasted pita wedges, Syrian bread or anything you wish.
  • * 1/4 cup in total. Mix the herb amounts to your preference but you might want to make the parsley the main herb with smaller amounts of the remaining 3.

On my first date with my husband we went wine tasting in the Temecula Valley. The Thornton Winery has a champagne tasting bar where they serve you a goat cheese spread with slices of fresh bread. When I asked about the recipe they quickly came back with a copy of it for me from behind the bar. It seems they keep a stack there due to the many requests they get. Enjoy!

Thanks to my co-worker Melanie for the AWESOME recipe! Note that 1/2 cup of pesto can be substituted for the fresh herbs - it saves time and waste if you don't have a use for the rest of the herbs!

8 ounces soft fresh goat cheese, sliced
1/2 cup kalamata olive, sliced
2 tablespoons sun-dried tomatoes packed in oil, sliced
1/4 cup fresh basil, chopped
3 tablespoons balsamic vinegar
2 garlic cloves, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 teaspoon fresh coarse ground black pepper
3 tablespoons extra virgin olive oil, more to taste

Steps:

  • Arrange cheese in a shallow dish in a single layer. Scatter olives, sundried tomatoes and basil over and around it.
  • In a small bowl, combine vinegar, oil, garlic, rosemary, thyme, and pepper. Pour over cheese.
  • Marinate a few hours in the fridge or overnight. Serve at room temperature with grilled or fresh bread.
