1 can (20 ounces) crushed pineapple in heavy syrup, undrained
3 medium tart apples, peeled and chopped
1/4 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
TOPPING:
1/2 cup quick-cooking oats
1/3 cup packed brown sugar
1/4 cup all-purpose flour
2 tablespoons plus 2 teaspoons butter, melted

Steps:

  • Line a 9-in. pie plate with pastry; trim and flute edges. In a large bowl, combine the apples and pineapple. Combine the flour, cinnamon and nutmeg; add to apple mixture and toss to coat. Transfer to pastry., In a small bowl, combine the oats, brown sugar, flour and butter; sprinkle over filling., Bake at 375° for 40-45 minutes or until topping is browned. Cover edges with foil during the last 15 minutes to prevent overbrowning if necessary. Cool on a wire rack.

1 can (20 ounces) crushed pineapple
Pastry for double-crust pie (9 inches)
3/4 cup sweetened shredded coconut
1 cup sugar
1/4 cup all-purpose flour
1/4 teaspoon salt
1 tablespoon lemon juice
1 tablespoon butter, melted
GLAZE:
1/2 cup confectioners' sugar
1/4 teaspoon rum or vanilla extract

Steps:

  • Drain pineapple, reserving 2 tablespoons juice (discard remaining juice or refrigerate for another use); set pineapple aside. Line a 9-in. pie plate with bottom pastry; trim pastry even with edge of plate. Sprinkle with coconut., In a small bowl, combine the sugar, flour, salt, lemon juice, butter and pineapple. Spread over coconut. Roll out remaining pastry to fit top of pie; place over filling. Trim, seal and flute edges. Cut sits in pastry. Add decorative cutouts if desired., Cover edges loosely with foil. Bake at 400° for 30 minutes. Remove foil; bake 5-10 minutes longer or until crust is golden brown and filling is bubbly., In a small bowl, combine the confectioners' sugar, extract and enough of the reserved pineapple juice to achieve glaze consistency. unsweetened pineapple juice
granulated sugar
granny smith (medium apples, peeled, cored, and cut into wedges)
cornstarch
butter or margarine
vanilla extract
salt
baked single crust pie shell, cooled

Steps:

  • In a large saucepan, combine 312.5g (1 1/4 cups) of the pineapple juice and the sugar. Bring the mixture to a boil.
  • Add apple wedges and simmer, covered for 3 - 4 minutes, or until apples are tender. Using a slotted spoon remove the apples from the pineapple liquid and set aside to drain.
  • Blend the remaining pineapple juice slowly into the cornstarch and add it to the hot pineapple liquid in the saucepan. Cook and stir until the mixture thickens and bubbles. Cook for 1 more minute.
  • Remove from heat and stir in the butter, vanilla, and salt. Cover and cool for 30 minutes without stirring.
  • Bake the pie shell until golden brown at 425 degrees and allow to cool, (be sure to prick the bottom and sides to the pie crust with a fork to prevent bubbling). Pour 1/2 of the pineapple mixture into the baked pie shell. Spread the pineapple mixture to cover the bottom of the pie shell.
  • Layer the cooked apples on top of the pineapple mixture. Spoon remaining pineapple mixture over the cooked apples. Cover and refrigerate pie until chilled and set.

  • Mix 4 tablespoons melted butter, 1/4 cup light brown sugar, 1/4 teaspoon each curry powder, cinnamon and vanilla extract, a pinch of salt and a splash of dark rum in a bowl. Slice a pineapple in half lengthwise (keeping the top attached), then cut each half into 3 long wedges; cut out the core. Place 2 wedges on a sheet of foil; brush with the spiced butter and fold up. Repeat to make 2 more packets; grill over medium heat until the pineapple is soft and golden on the bottom, 15 to 20 minutes.

7 granny smith apples, peeled, cored, wedges or 7 cups tart apples
3/4 cup white sugar
1 1/2 cups unsweetened pineapple juice
3 tablespoons cornstarch

Steps:

  • In large pot add 1 1/4 cup pineapple juice and sugar. Bring to a low boil, add apples.
  • Simmer about 4 minutes, apples should be tender but not soft.
  • With slotted spoon take out apples and drain in colandar, have a dish underneath to catch liquid.
  • In small bowl, add 1/4 cup pineapple juice and cornstarch. Stir to dissolve.
  • Add to hot pineapple mixture, stirring until thickened. Turn the heat down when thickening. Should be clear and not milky.
  • Take off the heat. Stir in margarine vanilla and salt. Cool about 30 minutes, do not stir. Take any juice drippings from apples and stir into mixture.
  • Pour half of the mixture in the pie shell covering bottom.
  • Arrange apples in the circle around the shell. Spoon other half over the applies, smooth with the back of a spoon. Chill.Before serving top with whipped cream or cool whip in the center.
  • Optional Serving: Place 8 slices of Kiwi fruit on top of pie for 8 servings.

6 cups thinly sliced peeled apples, divided
1/2 cup sugar
1/4 cup packed brown sugar

½ cup white sugar
½ cup milk
½ cup heavy cream
¼ cup butter
2 tablespoons cornstarch
2 tablespoons milk
1 teaspoon vanilla extract
2 tart apples - peeled, cored and sliced
1 tablespoon all-purpose flour
¼ teaspoon ground cinnamon
1 (15 ounce) package pastry for double-crust pie
½ cup confectioners' sugar
1 tablespoon milk
¼ teaspoon vanilla extract
1 tablespoon butter, softened

Steps:

  • In a medium saucepan over medium heat, combine 1/2 cup sugar, 1/2 cup milk, 1/2 cup cream, and 1/4 cup butter. Heat until butter is melted, stirring occasionally. In a small bowl, whisk together the cornstarch, 2 tablespoons milk, and vanilla; stir into saucepan. Cook until thickened, stirring constantly. Remove from heat, and set aside to cool slightly.
  • Preheat oven to 400 degrees F (200 degrees C). In a medium bowl, combine the apples, flour, and cinnamon. Mix well.
  • Line a 9 inch pie pan with pie dough. Pour thickened filling mixture into pastry-lined pie pan. Arrange apple mixture evenly over filling. Top with second crust, seal and flute the edges. Cut slits in top crust.
  • Bake for 30 to 40 minutes, or until crust is golden brown and apples are tender. Cool for at least 30 minutes.
  • In small bowl, combine confectioners' sugar, 1 tablespoon milk, 1/4 teaspoon vanilla, and 1 tablespoon softened butter. Blend until smooth; pour evenly over warm pie. Refrigerate for AT LEAST 1 1/2 hours before serving (longer is better).

Apple lemon ginger juice is one of my addictions. I have been looking for an apple pie recipe that just clicks for me and I am getting a little tired of the same ole-same ole thing so I decided to give myself a little creative leeway and combine a few ideas together and see what happens. I didn't expect the result I got and find it hard to believe this beautiful yummy came out of my kitchen. It was amazing and gone in a flash. Wish I could have taken a picture of this beauty! Unfortunately, you will have to rely on your imagination! A couple of things to note. Slice and peel the apples according to your taste. I like small pieces and no peels. Also the lemon powder I used is True Lemon Crystallized Lemon. Using this allows you to get a tangy lemon flavor without adding excess moisture. The glaze caramelizes beautifully over the lattice and adds a touch of tang. Since I have only made this once, I look forward to your feedback. Hope you enjoy!

  • Preheat oven 400 degrees.
  • Line a pie plate with one pie crust.
  • Cut second pie crust into 1 inch strips to be used for lattice topping.
  • Peel apples if desired and cut into small slices or pieces.
  • Place lemon juice, 2 tablespoons brown sugar, 1/2 teaspoon cinnamon and 1 teaspoon vanilla into ziploc bag and add apples tossing until thoroughly coated.
  • Spread apples onto cookie sheet into one layer and place in oven for 12-15 minutes stirring every three minutes to allow the lemon juice to cook off and apples to soften and caramelize.
  • In a ziploc bag, combine and thoroughly mix sugar, brown sugar, lemon crystals, vanilla powder, cinnamon, nutmeg and ginger.
  • Set aside.
  • Pull caramelized apples out of oven and gently spoon into mixing bowl.
  • Add butter pieces and spiced sugar mix to the apples and gently toss to coat the warm apples until the butter melts .
  • Spoon coated caramelized apples into waiting pie crust.
  • Use the 1" pie crust strips to weave a lattice across the top of the apples.
  • Crimp crust around the outside rim.
  • Place the pie on a cookie sheet and set aside.
  • In a small sauce pan over medium heat, combine the glaze ingredients together and cook until just boiling then remove from heat - about two minutes.
  • Using a silicone brush, paint the glaze across the top of the pie, coating the lattice evenly.
  • Set the pie into oven for 20 - 30 minutes or until the crust is golden brown.
  • Remove from oven and allow the pie to cool for at least two hours before slicing.

Steps:

  • Preheat oven to 400 degrees. Prepare pie crust according to package directions. Combine all the topping ingredients except the butter in a medium bowl. Using a pastry blender, cut in the butter until the mixture resembles coarse crumbs. Set aside. In a large bowl, combine all the filling ingredients. Pour filling into the pie shell. Sprinkle topping over the filling. Cover the top loosely with some aluminum foil. Bake for 10 minutes. Remove the aluminum foil and reduce the oven temperature to 375 degrees.
