CLASSIC MEATLOAF

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

My neighbours recipe. The lemon and curry powder just add something different, and the sauce something else again.

500 g sausage meat
500 g ground beef
1 cup breadcrumbs (I used fresh)
1 large onion, diced
2 teaspoons curry powder
salt and pepper, to taste
1 tablespoon chopped fresh parsley
1 egg
1/2 cup milk
1/2 cup lemon juice
1/2 cup water
1/2 cup tomato ketchup
1/4 cup Worcestershire sauce
2 tablespoons vinegar
1/4 cup brown sugar
1 teaspoon intstant instant coffee powder
2 tablespoons lemon juice

Steps:

  • Meat loaf: Combine all ingredients, place in a loaf tin and bake in a 200c oven for about 45 minutes, or until cooked through.
  • Remove from the oven, allow to stand about 15 minutes before serving.
  • *Ilike to pour off any fat that accumulates around the loaf about 1/2 way through cooking.
  • Sauce: Combine all ingredients in a saucepan and bring to the boil.
  • Simmer about 5 minutes, then serve*My neighbour recommends doubling the sauce quantitiy.

  • In a large bowl, stir together breadcrumbs and milk (or sour cream); let stand to absorb. Line a baking sheet with parchment paper or aluminum foil. Preheat oven to 350ºF.
  • Heat oil in a large saucepan over medium heat, then cook onion with 1 tsp salt until softened, about 7 minutes. Add garlic and cook until fragrant, about a minute more. Cool for a few minutes, then scrape into breadcrumb mixture.
  • Stir 1/4 cup ketchup into the breadcrumb mixture, along with Worcestershire sauce, parsley, remaining salt, and the pepper. When mixture is cool to the touch, stir in the eggs then the ground meat. Use your hands to gently but thoroughly work the mixture together.
  • Scrape the meat mixture onto the prepared pan and use your hands to shape it into roughly 9x5" loaf shape. Dollop on the remaining 1/3 cup ketchup, using a spoon to spread it out evenly.
