Number Of Ingredients 10

1 cup whole milk
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1/8 teaspoon grated nutmeg
Kosher salt
1/4 cup grated Gruyere cheese (about 1 ounce)
4 3/4-inch-thick slices country white bread
12 thin slices Black Forest ham or other lean ham (about 8 ounces)
2 cups coarsely grated Gruyere cheese (about 8 ounces)
Freshly ground pepper

Steps:

  • Make the bechamel. In a small saucepot, heat the milk over medium heat until warm to the touch; set aside. In a separate small saucepot, melt the butter over medium heat. Add the flour, reduce the heat to low and cook, whisking continuously, until the raw flour taste has been cooked out, about 2 minutes. Whisk in the warm milk until smooth. Grate the nutmeg into the bechamel.
  • Season the bechamel with salt and bring to a simmer, whisking continuously, until thickened, about 2 minutes. Remove from the heat and add the Gruyere. Whisk the mixture until smooth and set aside.
  • Assemble the sandwiches. Heat the broiler on high. Set the bread on a sheet pan and place 3 slices of the ham on each slice of bread. Spoon a thin layer of the bechamel on top of the ham. Divide the Gruyere evenly among the sandwiches and season with pepper. Broil until the cheese melts and turns golden brown, about 3 minutes.

CLASSIC CROQUE MONSIEUR

Think of this classic French bistro sandwich as a ham and cheese sandwich, sent over the top with a Bechamel sauce. Rich, cheesy, and warm, you might just need a knife and fork! I like to make the Bechamel first, and have all the cheese grated, so the assembly goes quickly. Garnish with cornichons, if you like, and serve with a vegetable salad or simple soup.

1 ½ cups milk
½ cup heavy cream
3 tablespoons butter
3 tablespoons all-purpose flour
⅛ teaspoon salt, or to taste
⅛ teaspoon ground black pepper, or to taste
1 pinch ground nutmeg
1 tablespoon unsalted butter
8 slices rustic bread
8 slices deli ham
2 ½ cups grated Gruyere cheese, divided
½ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Combine milk and cream in a microwave-safe container and microwave on high power, about 90 seconds. The liquid should be warm to the touch.
  • Melt butter in a small saucepan over medium heat. Stir in flour and keep stirring until all the flour is coated in butter, and the flour and butter begin to bubble, about 2 minutes. Gradually stir in warmed milk and cream and cook until sauce begins to thicken, stirring constantly. Continue stirring, until the sauce is thick and bubbly, 3 to 5 minutes. Remove from heat and season with salt, pepper, and nutmeg. Set aside.
  • Melt 1 tablespoon butter in a large skillet over medium heat and brown 4 pieces of bread on 1 side, about 4 minutes. Place browned bread on the prepared baking sheet, browned side down.
  • Spread each piece of bread with Bechamel sauce, from edge to edge. Place two slices of deli ham on the Bechamel and top with 1/2 cup of grated Gruyere cheese. Place remaining bread slices on top of each sandwich and spread the top with Bechamel, from edge to edge. Sprinkle the top of each sandwich with 2 tablespoons grated Gruyere cheese and 2 tablespoons grated Parmesan cheese.
  • Bake in the preheated oven until the cheese is melted, 5 to 7 minutes.
  • Turn on the oven's broiler.
  • Move baking sheet about 6 inches from the heat source and broil sandwiches until the top is bubbly and brown, 2 to 3 minutes. Watch carefully, to avoid scorching the parchment paper and burning the cheese. Allow the sandwiches to cool slightly, cut in half, and serve warm.

2 tablespoons Dijon mustard
2 tablespoons sambal or sweet chile sauce
Soft butter to spread
8 slices whole wheat bread
8 thin slices cold meatloaf
2 tomatoes, thinly sliced
8 thin slices gruyere

Steps:

  • Mix together the mustard and sambal. Preheat an oven to high broil. Butter 1 side of each slice of bread. Build each half of the sandwich by placing the buttered side down, topped with meatloaf, mustard spread, tomato slices then the cheese. Repeat for all slices of bread. Heat an oven proof non-stick skillet on medium heat. Lay the buttered side down until lightly brown, about 2 minutes. Place pan in the oven under the broiler to melt and brown the cheese, about 2 to 3 minutes. Remove from oven and place slices together to make 4 sandwiches. Slice on the diagonal and eat as soon as possible.

Steps:

1 ½ pounds ground beef
¼ cup chopped onion
¼ cup quick-cooking oats
⅛ cup cornmeal
1 cup dried bread crumbs
1 ½ teaspoons salt
1 tablespoon white sugar
1 egg, beaten
½ cup tomato juice
½ cup water
1 tablespoon barbecue sauce
1 dash liquid smoke flavoring
1 tablespoon distilled white vinegar
¼ cup ketchup
1 tablespoon brown sugar
2 teaspoons prepared mustard
2 dashes liquid smoke flavoring

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, onion, oatmeal, cornmeal, bread crumbs, salt, sugar, egg, tomato juice, water, barbecue sauce, 1/8 teaspoon liquid smoke and vinegar. Mix together thoroughly and place mixture into a lightly greased 9x5 inch loaf pan.
  • In a separate small bowl, combine the ketchup, brown sugar, mustard and 2 drops liquid smoke and mix thoroughly. Spread over the top of the meatloaf.
  • Bake at 350 degrees F (175 degrees C) for approximately one hour.

12 ounces smoked ham, very thinly sliced

Steps:

  • Butter 1 side of each bread slice.
  • Set half of the slices of bread buttered side down in a skillet, and cover each with a slice of cheese.
  • Place 3 or 4 slices of the ham over the cheese, and place the top slice of bread over the ham, buttered side up.
  • Cook sandwiches until bottom is golden brown and cheese is melted, about 3 minutes per side.

1 1/4 cups whole milk
2 tablespoons unsalted butter
3 tablespoons all-purpose flour
3 tablespoons fresh thyme leaves, divided
Coarse salt and freshly ground pepper
1 long loaf rustic bread, such as ciabatta (about 1 1/2 pounds)
3 tablespoons Dijon mustard
3/4 pound sliced ham
4 cups grated Gruyere cheese (about 8 ounces)
1 cup finely grated Parmesan cheese (1 ounce)

Steps:

  • Preheat oven to 400 degrees with rack in bottom third. Heat milk in a saucepan over medium heat until hot, about 5 minutes. Melt butter in another saucepan over medium heat; add flour, whisk to combine, and cook 2 minutes, stirring occasionally. Add 1 1/2 tablespoons thyme, then gradually whisk in milk. Simmer bechamel 2 minutes, whisking. Remove from heat, and add 1 teaspoon salt and 1/2 teaspoon pepper.
  • Cut top crust off bread; slice loaf in half horizontally. Fill sandwich with mustard, ham, and half the Gruyere. Toast on a baking sheet until cheese is melted and top is golden brown.
  • Remove from oven. Preheat broiler. Spread bechamel on top, and sprinkle with remaining cheese. Broil until golden brown and bubbling, 6 to 7 minutes. Remove from oven; garnish with pepper and remaining thyme. Let sit 10 minutes before cutting.

1 teaspoon butter
8 slices white bread, crusts removed
1/4 cup mascarpone cheese
1 tablespoon chopped chives
4 ounces Fontina cheese, grated
4 ounces (6 or more slices) thinly sliced smoked Black Forest ham
1 cup cream or milk
3 eggs
Salt and freshly ground black pepper
1 tablespoon olive oil
Bamboo skewers

Steps:

  • Butter an 8-by-4-inch loaf pan and line with oiled parchment paper. Begin layering the croque monsieur by lining the bottom of the loaf pan with bread (use 2 slices for each layer). Dot the first layer with 1 generous tablespoon mascarpone cheese and spread as evenly as possible. Sprinkle 1 teaspoon of the chives over the cheese. Cover with 1/4 cup Fontina cheese and layer the ham over cheese. This is one complete layer. Build two more layers, ending with a row of bread. Whisk together the cream or milk and eggs in a bowl to make a custard. Strain the custard through a sieve and season to taste with salt and pepper. Pour the custard over the croque monsieur, cover with parchment paper, and allow to rest in the refrigerator for at least 2 hours before baking. The croque can be placed overnight in the refrigerator at this point if desired. Preheat the oven to 325 degrees. Place the loaf pan in a deep casserole and add enough hot water to come halfway up the sides of the loaf pan to create a bain-marie. Cover with a piece of buttered parchment paper. Bake for about 45 minutes to 1 hour or until the custard has set. Test with a toothpick -- if it comes out clean, remove from the oven and the bain-marie and allow the croque monsieur to cool in the loaf pan. When cool, place in the refrigerator to chill. Turn the croque out of the pan and cut into generous 1/2-inch-thick slices. Cut each slice in half across the layers and skewer the two halves together. To Serve: Heat an 8-inch sauté pan with 1 tablespoon olive oil and gently place the croque monsieur skewers into the pan; sauté until golden brown on both sides. Serve with a green salad.
