Quick and Simple Meatballs image

Keep a batch of these meatballs in your freezer for an easy weeknight meal. This simple meatball recipe can be used for pizzas, sub sandwiches, in soups and more. -Taste of Home Test Kitchen, Milwaukee, Wisconsin

Number Of Ingredients 10

2 large eggs
1/4 cup water
1 small onion, finely chopped
1-1/3 cups soft bread crumbs
2/3 cup grated Parmesan cheese
2 garlic cloves, minced
2 teaspoons Italian seasoning
1-1/2 teaspoons salt
1/4 teaspoon pepper
2 pounds ground beef

Steps:

  • Preheat oven to 375°. In a large bowl, combine eggs, water, onion, bread crumbs, Parmesan cheese, garlic and seasonings; mix well. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. Place meatballs on greased racks in shallow baking pans. Bake, uncovered, until no longer pink, 15-18 minutes. , Freeze option: Freeze cooled meatballs in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in the microwave.

2 tablespoons beaten egg
2 tablespoons seasoned bread crumbs
1/4 teaspoon salt
1/8 teaspoon ground ginger
Dash pepper
1/2 pound lean ground beef
1 can (8 ounces) pineapple chunks, undrained
2 tablespoons brown sugar
2 tablespoons cider vinegar
1 tablespoon reduced-sodium soy sauce
1/2 cup sliced fresh carrot
1/2 medium green pepper, julienned
1-1/2 teaspoons cornstarch
1 tablespoon cold water
Hot cooked rice

Steps:

  • In a small bowl, combine the first five ingredients. Crumble beef over mixture and mix well. Shape into 1-in. balls. In a large skillet, cook meatballs over medium heat until browned on all sides and a thermometer reads 160°; drain., Drain pineapple, reserving juice; set pineapple aside. Add water to juice to measure 1/2 cup. Stir in the brown sugar, vinegar and soy sauce; pour over meatballs. Add carrots. Bring to a boil. Reduce heat; cover and simmer for 5-8 minutes or until carrot is crisp-tender. Stir in green pepper and pineapple; cover and simmer 5 minutes longer or until pepper is crisp-tender., Combine cornstarch and water until smooth; stir into meatball mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with rice.

1 large egg
3 tablespoons finely chopped onions
1/2 teaspoon salt
1/8 teaspoon pepper
1/3 cup dry breadcrumbs
6 ounces lean ground beef
1/4 cup barbecue sauce (regular)
1/3 cup apricot jam

Steps:

  • Stir egg, onion, salt and pepper together in bowl. Add bread crumbs. Stir.
  • Add ground beef. Mix. If too soft, add a touch more crumbs. Shape into 1 inch balls. Arrange on broiler pan. Broil for about 10 minutes each side or bake in a 350°F oven for 15 minutes. Turn into ungreased 8 x 8 inch pan.
  • SAUCE: Measure barbecue sauce and jam into small bowl. Stir. Spoon over meatballs in pan being sure to get some on every one. Bake, uncovered, for about 30 minutes. Makes 13 meatballs.

1 egg
3 Tbsp italian-seasoned bread crumbs
2 Tbsp chopped onion
1 Tbsp grated parmesan cheese
1/8 tsp pepper
1/4 lb ground beef
1/4 lb bulk italian sausage
1 jar(s) (14-oz) spaghetti sauce or 1-1/2 cups homemade spaghetti sauce
hot cooked spaghetti
additional parmesan cheese

Steps:

  • 1. In a bowl, combine the first five (5) ingredients. Crumble meat over mixture and mix well. Shape into 2" balls; brown in a skillet over medium heat.
  • 2. Drain. Stir in spaghetti sauce. Simmer, uncovered, for 20-30 minutes or until meatballs are no longer pink. Serve over spaghetti; sprinkle with Parmesan cheese if desired.
