With a brown sugar-ketchup glaze and whole strips of bacon, this mighty meatloaf is a flavorful meal that's far from the dry brick that haunts many childhood memories. So the next time you want a throwback dinner but with a delicious updated twist, try this bacon-wrapped meatloaf.

2 lbs lean ground beef
1 cup onion, diced
1/2 cup green bell pepper, diced
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
2 large eggs
1/2 cup rolled oats
1 teaspoon kosher salt
1 teaspoon black pepper
10-12 strips bacon
1/3 cup ketchup
2 tablespoons brown sugar
1 teaspoon paprika

Steps:

  • Preheat oven to 350° F. Line a 9 x 5-inch loaf pan with slightly overlapping pieces of bacon.
  • In a medium-sized bowl, mash together beef, onions, bell pepper, garlic, Worcestershire sauce, eggs, oats, salt and pepper.
  • Spread 2 tablespoons of glaze over the bacon in the loaf pan.
  • Then press the meatloaf mixture into the pan.
  • Fold any overhanging bacon over the top of the loaf pan. Flip the loaf pan onto a baking sheet lined with foil or parchment paper. Carefully wrap the ends of the meatloaf with bacon as well, tucking the strips into the other pieces of bacon so it's tight.
  • Bake meatloaf at 350° F for 50 minutes. Remove meatloaf, brush with ketchup glaze and return to oven for another 15-20 minutes. Finished meatloaf should have crispy bacon edges and reach an internal temperature of 165° F in the center of the meatloaf.
  • Let meatloaf rest for 10 minutes before slicing and serving.

1/2 cup ketchup or chili sauce
4 tablespoons brown sugar
4 teaspoons cider or white vinegar
Meat Loaf
2 teaspoons vegetable oil
1 medium onion, chopped
2 cloves garlic, minced
2 large eggs
1/2 teaspoon dried thyme leaves
1 teaspoon salt
1/2 teaspoon ground black pepper
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
1/4 teaspoon hot red pepper sauce
1/2 cup whole milk or plain yogurt
2 pounds meat loaf mix (50 percent ground chuck, 25 percent ground pork, 25 percent ground veal)
2/3 cup crushed saltine crackers or quick oatmeal
OR
1 1/3 cup fresh bread crumbs
1/3 cup minced fresh parsley leaves
8 slices thin-sliced bacon (more as needed, depending on loaf shape)

Steps:

  • For the glaze: Mix all ingredients in small saucepan; set aside. For the meat loaf: Heat oven to 350 degrees F. Heat oil in medium skillet. Add onion and garlic; saute until softened, about 5 minutes. Set aside to cool while preparing remaining ingredients. Mix eggs with thyme, salt, pepper, mustard, Worcestershire sauce, pepper sauce, and milk or yogurt. Add egg mixture to meat in large bowl along with crackers, parsley, and cooked onion and garlic; mix with fork until evenly blended and meat mixture does not stick to bowl. (If mixture sticks, add additional milk or yogurt, a couple tablespoons at a time, until mix no longer sticks.) Turn meat mixture onto work surface. With wet hands, pat mixture into approximately 9 x 5-inch loaf shape. Place on foil-lined (for easy cleanup) shallow baking pan. Brush with half the glaze, then arrange bacon slices, crosswise, over loaf, overlapping slightly and tucking only bacon tip ends under loaf. Bake loaf until bacon is crisp and internal temperature of loaf registers 160 degrees F, about 1 hour. Cool at least 20 minutes. Simmer remaining glaze over medium heat until thickened slightly. Slice meat loaf and serve with extra glaze passed separately.

Steps:

  • MIX glaze ingredients in a small bowl; set aside.
  • COOK bacon and drain on paper towels; set aside.
  • PREHEAT oven to 350 F degrees. Saute onion and garlic in oil until softened, about 5 minutes; set aside to cool.
  • MIX eggs with thyme, salt, pepper, mustard, Worcestershire, steak sauce, hot pepper sauce, and milk. Add egg mixture to meat in a large bowl, along with crackers or bread crumbs, parsley and cooked onions and garlic; mix with a fork until evenly blended and meat mixture does not stick to bowl. *If mixture does stick, add additional mil a couple tablespoons at a time and continue mixing until mixture stops sticking.
  • COVER a wire rack with foil, prick foil in several places with a fork. Place rack on a shallow roasting pan lined with foil for easy cleanup.
  • TURN meat mixture onto prepared rack and with wet hands form mixture into a loaf approximately 9 X 5 inches.
  • BAKE loaf for 35 minutes; remove from oven. Top loaf evenly with glaze mixture. Add bacon crosswise, over loaf, overlapping them slightly. Return to oven for 5-10 minutes or until bacon is crispy and glaze is bubbly.
  • REMOVE from oven and top with grated cheese. Return to oven for final time until cheese is melted and beginning to brown. Approximately 5 minutes.
  • Let cool 20 minutes. Slice and serve.

5 slices bacon
1 stalk celery, diced
1 cup fine bread crumbs
1 cup milk
3 eggs
1 teaspoon Worcestershire sauce
1 teaspoon ground black pepper
½ teaspoon onion powder
1 pound ground beef
1 pound ground pork
⅓ cup ketchup
3 tablespoons brown sugar
1 tablespoon dry mustard

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
  • Heat remaining bacon grease over medium-high heat. Saute celery in hot grease until soft but not browned, about 5 minutes. Set aside.

  • Return loaf to the preheated oven and continue to bake until no longer pink in the center, about 20 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let sit for at least 10 minutes before cutting and serving.

2 slices day old white bread, torn into small pieces or 1/2 cup plain breadcrumbs, preferably homemade
2 yellow onions, finely chopped (11/2 cups)
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
3 tablespoons Worcestershire sauce
1/4 cup low-sodium chicken broth
3/4 cup ketchup
1 tablespoon brown sugar
2 pounds coarsely ground chuck, preferably 85 percent lean
1 large egg, lightly beaten
1 1/2 cups grated cheddar
8 slices (6 ounces) bacon

Steps:

  • Preheat oven to 350 degrees. Tear bread into pieces; pulse in a food processor to make fine crumbs (or use plain breadcrumbs) set aside.P
  • Cook the Onions: Pulse onion in food processor until finely chopped (or do so by hand). Heat 2 tablespoons olive oil in a large skillet over medium-high. My family loves meat loaf-and this one in particular. I created this bacon meatloaf after trying and adjusting many other recipes over the years. Cheddar cheese tucked inside and a flavorful bacon topping dress it up just right for Sunday dinner! -Sue Call, Beech Grove, Indiana

1/2 cup chili sauce
2 large eggs, lightly beaten
1 tablespoon Worcestershire sauce
1 medium onion, chopped
1 cup shredded cheddar cheese
2/3 cup dry bread crumbs
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds lean ground beef (90% lean)
2 bacon strips, halved

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into a loaf in an ungreased 13x9-in. baking dish. Top with bacon., Bake, uncovered, at 350° for 70-80 minutes or until meat is no longer pink and a thermometer reads 160°. Drain; let stand for 10 minutes before cutting.

This meatloaf is glazed with brown sugar and ketchup for a moist and flavorful weeknight dinner.

½ cup ketchup
½ cup packed brown sugar
1 ½ teaspoons salt
½ teaspoon chili powder
1 ½ pounds lean ground beef
1 ½ cups croutons, crushed
1 small onion, chopped
2 eggs
¼ cup milk
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
  • Stir ketchup, brown sugar, salt, and chili powder together in a bowl until smooth. Spread a small amount of the ketchup mixture into the bottom of the prepared loaf pan.
  • Mix ground beef, croutons, onion, eggs, milk, and black pepper together in a large bowl; shape into a loaf and put into prepared pan. Spread remaining ketchup mixture over the loaf.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
